Shrimp Burgers with Slaw image

A close cousin to your usualside of broccoli, cabbage brings many of the same cancer-fighting nutrients to your diet. It's also full of folate and vitamins A and C.

1/4 cup nonfat plain Greek yogurt
1/4 cup reduced-fat sour cream
1 teaspoon finely chopped canned chipotle chiles en adobo
Juice and finely grated zest from 1 lime
1 mango, peeled, pitted, and julienned
1 cup shredded green cabbage
1/4 avocado, julienned
1/4 teaspoon coarse salt
1 pound shrimp, peeled, deveined, and roughly chopped
1 large egg white, lightly beaten
1/3 cup breadcrumbs
4 small (6 inches) pitas

Steps:

  • Make the yogurt sauce: Mix yogurt, sour cream, chipotles, and lime juice and zest in a small bowl. (Add more chipotle for a spicier sauce.)
  • Make the slaw: Mix mango, cabbage, avocado, and salt in a medium bowl. Toss with 1/4 cup yogurt sauce.
  • Make the shrimp burgers: Preheat oven to 425 degrees. Pulse a third of the shrimp in a food processor until a thick paste forms. Transfer to a bowl. Gently fold in egg white and remaining shrimp and yogurt sauce. Fold in breadcrumbs (mixture will be loose).
  • Scoop 1/2 cup shrimp mixture onto a baking sheet lined with a nonstick baking mat. Flatten into a 4-inch patty. Repeat. Bake until pink and firm, 8 to 10 minutes. Place 1 patty in each pita, top with slaw, and serve immediately.

1 (6 ounce) can shrimp, drained
1/2 cup diced celery
2 tablespoons grated onions
3/4 cup grated cheddar cheese
1/2 cup mayonnaise
bun
butter or margarine

Steps:

  • mix all ingrediants together.
  • mix well.
  • Lightly butter each side of a bun and broil lightly.
  • spread shrimp mix on buns and broil until lightly brown and cheese melts.

  • For the Shrimp Burgers: Place the shrimp on a cutting board and chop it up into 1/2 inch pieces or smaller. You can also just pulse it in the food processor a few times but be sure you don't turn the shrimp into a paste. In a medium bowl combine all the burger ingredients before adding shrimp. Mix until *just* combined. Divide mixture into 4 equal patties about 1/2 inch in thickness.
  • Make the Slaw: Place all the ingredients for the slaw (except cabbage) with 1/2 teaspoon of salt and start with 3 tablespoons of lime juice into a blender and blend until smooth. Taste and adjust salt and lime juice to preference. Toss 1/2 the dressing with the cabbage and adjust with more to taste.
  • Cook the Shrimp Burgers: Heat a swish of olive oil in a large non-stick skillet. Add the patties but do not overcrowd the pan. Do this in two batches if you need to. Pan fry shrimp burgers for 5-7 minutes total or until cooked. Serve over a bed of prepared slaw or on brioche buns with slaw on top. Enjoy!
