1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

1 pound baby Yukon Gold potatoes, quartered
4 ears corn, husked
4 tablespoons olive oil, divided
3 tablespoons Creole seasoning
1 lemon, juiced
1 tablespoon minced garlic
2 teaspoons Italian seasoning
1 teaspoon paprika, divided
½ teaspoon red pepper flakes
1 pinch salt and ground black pepper
1 red bell pepper, cut into 2-inch pieces
1 yellow bell pepper, cut into 2-inch pieces
1 orange bell pepper, cut into 2-inch pieces
1 ½ cups cherry tomatoes, halved
1 onion, cut into 2-inch pieces
4 andouille sausages, sliced
1 lemon, cut into wedges
1 pound uncooked medium shrimp, peeled and deveined
½ teaspoon Creole seasoning
2 tablespoons chopped fresh parsley, or to taste
finely chopped green onion, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a large sheet pan with cooking spray.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 12 minutes. Add corn and boil for an additional 5 minutes. Drain. Cut corn into thirds.
  • Meanwhile, combine 3 tablespoons olive oil, 3 tablespoons Creole seasoning, juice from 1 lemon, garlic, Italian seasoning, 1/2 teaspoon paprika, red pepper flakes, salt, and pepper in a small bowl. Mix well to combine and set seasoning mixture aside.
  • Combine boiled potatoes and corn, all the bell peppers, cherry tomatoes, onion, and sausage slices in a large bowl. Add seasoning mixture and mix evenly.
  • Spread potato mixture onto a sheet pan in a single layer. Place lemon wedges evenly on all sides of the sheet pan.
  • Bake in the preheated oven for 8 minutes.
  • Meanwhile, combine shrimp, 1 tablespoon olive oil, 1/2 teaspoon paprika, and 1/2 teaspoon Creole seasoning in a bowl. Marinate for a few minutes. Add shrimp to the sheet pan with the potato mixture after 8 minutes of baking and mix to combine.
  • Return sheet pan to the oven and cook until shrimp are opaque, 6 to 8 minutes. Remove lemon wedges and garnish with parsley and green onions.

You can use clams, shrimp and scallops or substitute your own favorites: mussels, oysters or even some firm-fleshed fish. Just be sure to serve the pan roast with a spoon and plenty of good bread to sop up all the tasty sauce."

2 dozen littleneck clams
1/4 cup olive oil
6 large garlic cloves, minced
1 cup clam juice
1 cup white wine
6 tablespoons barbecue sauce (use Mutha Sauce, recipe posted separately on this site)
1 teaspoon crushed red pepper flakes
1 tablespoon Worcestershire sauce
1/2-3/4 lb shrimp, in the shell
1/2 lb sea scallops (preferably dry-packed)
1 tablespoon heavy cream
10 fresh basil leaves, chopped
2 tablespoons fresh Italian parsley, chopped

Steps:

  • Give the clams a good scrubbing, discarding any with cracked or open shells. Set aside.
  • Heat the oil over medium-high heat in a pan that you can cover later.
  • Throw in the garlic and cook for a few minutes.
  • Pour in the clam juice, wine and Mutha Sauce.
  • When the mixture is bubbling, add the clams.
  • Cover and cook til the clams open, 3 to 5 minutes. Pull out the clams as they open and keep them warm. (Throw out any clams that don't open.).
  • Boil and reduce the pan juices over high heat for about 8 minutes.
  • Sprinkle in the red pepper and season up the sauce with Worcerstershire.
  • Toss in the shrimp and scallops. Simmer until they're cooked and have just turned opaque, about 4 minutes.
  • Swirl in the cream and basil.
  • Return the clams to the pan and gently stir together all the shellfish.
  • Sprinkle with parsley and serve steaming hot.

He says, "This New England-inspired soup is as warming after a fall football afternoon as it is welcome after a 4th of July fireworks display. The bacon adds a subtle smokiness to the shrimp and chicken. Serve this in large bowls, with plenty of bread for soaking up the last drops of soup." I have to agree!

1/4 lb bacon, cut into 1/4-inch dice
1 cup dry white wine
1 1/2 lbs chicken breasts, boneless skinless, cut into 1-inch-wide strips
12 jumbo shrimp, peeled and deveined
5 cups fish stock (or canned low-sodium chicken broth) or 5 cups chicken stock (or canned low-sodium chicken broth)
1 tablespoon garlic, finely minced
2 teaspoons onions or 2 teaspoons shallots, finely minced
1 teaspoon celery seed
1 teaspoon anise seed or 1 teaspoon fennel seed
3 sprigs fresh tarragon, leaves removed and chopped or 1 tablespoon dried tarragon
2 cups broccoli florets
12 oysters, shucked (optional)
3/4 cup milk
salt
fresh ground black pepper
2 cups cooked rice (optional)
2 tablespoons unsalted butter

Steps:

  • Add the bacon to a large heavy pot or Dutch oven set over low heat and cook, stirring, for 2 minutes, without browning. Pour in the white wine, increase the heat to high, bring to a boil, and cook for 1 minute to burn off the alcohol.
  • Add the chicken, shrimp, stock, garlic, onion or shallots, celery seed, and aniseed; if using dried tarragon, add it now. Bring to a boil, then reduce uncovered, for 2 minutes. If using oysters, add them with the milk. Taste the soup for salt and pepper and add as desired.
  • To serve, using a slotted spoon, transfer the bacon, chicken, shrimp, and broccoli to individual soup bowls. If serving rice, add it to the bowls. Return the broth to a boil and stir in the butter until melted. Remove from the heat and, if using fresh tarragon, add it to the soup. Serve the soup in a tureen, and ladle it into the garnished bowls at the table.
