FISH WITH CREAM SAUCE

Dinner in about 20 minutes? It's totally possible! This fish with cream sauce combines perfectly cooked pan fried cod and a lush, garlicky cream sauce with lots of fresh dill and a touch of lemon. Sure to be a favourite for easy weekday dinners or entertaining with friends and family.

1 1/4 pounds boneless and skinless cod fillets (4 fillets (each about 5 ounces))
1/2 teaspoon salt (divided)
1/2 teaspoon freshly ground black pepper (divided)
1 tablespoon olive oil
1 tablespoon unsalted butter
1 large garlic clove (minced)
1/2 cup heavy cream (whipping cream)
1/3 cup low sodium vegetable broth (or chicken broth or seafood broth)
1.5 tablespoons chopped fresh dill (or 1 to 1.5 teaspoons dried dill or dill weed)
1 tablespoon lemon juice
1 teaspoon lemon zest
Lemon wedges (for serving (optional))

Steps:

  • Pat cod fillets dry of excess moisture with paper towels and season with 1/4 teaspoon each of salt and black pepper.
  • Heat olive oil and butter in a 12-inch non-stick frying pan over medium heat.
  • Place cod fillets in the pan. Cook for 3 to 5 minutes on one side.
  • Carefully flip the cod fillets to the other side and continue to cook for another 3 to 5 minutes or until cod is cooked through, is opaque and flakes easily with a fork (insert the tines of a fork into the thickest part of the fish at an angle and twist gently; it should flake easily). Time may vary, depending on the thickness of your fillets.Note: Be gentle flipping, especially if using super fresh fish, as the fillets are quite delicate.
  • Once fillets are done, carefully remove with a spatula, transfer to a plate and set aside.
  • Add garlic to the pan and cook, stirring often, for 1 minute.
  • Pour in heavy cream, broth and remaining 1/4 teaspoon each of salt and black pepper.
  • Bring to a simmer and cook, stirring, for 4 to 5 minutes or until the sauce has reduced/thickened and coats the back of a spoon when you draw your finger through it. Taste for seasoning and add more, if necessary, to taste.
  • Once sauce has thickened to your liking, stir in dill, lemon juice and lemon zest.
  • Pour sauce over fish and serve with lemon wedges (if desired). Enjoy!

2 1/2 cups cream
1/2 cup tasty cheese (cheddar, I assume?)
1/2 small onion, grated
1 garlic clove, finely chopped
1 tablespoon nam pla (fish sauce)
1 tablespoon tomato paste
1 lb fish fillet (Australian mackeral, barramundi, tuna, salmon, or coral trout)

Steps:

  • Make sauce by combining all ingredients (except fish fillets) in saucepan over medium heat until cheese is melted.
  • Place fish fillets into baking dish (one that can go directly onto the table works well). Spoon the sauce onto the fillets.
  • Bake at 425 - 450 degrees for 10-15 minutes (for thick fillets), or under the griller (for thin fillets) until cooked and top is browned. Fish should flake easily with a fork; on the other hand, it shouldn't look dried out either. Alternatively, you can also reduce the sauce in a frypan on a medium to hot heat on top of the stove. Turn heat down to medium and then cook the fillets in the sauce.

4 x 150- 180g / 5 - 6 oz fish fillets (, about 1.5cm / 1/2" thick, skinless and boneless (Note 1))
50g / 4 tbsp unsalted butter
1/4 cup cream, heavy / thickened ((See Note 2 for sub options))
1 - 2 garlic cloves (, minced)
1 tbsp Dijon mustard
1 1/2 tbsp lemon juice
Salt & pepper
1 1/2 tbsp eschallots (French onion) (, finely chopped (Note 3))
Fresh parsley and lemon slices (, to serve)

Steps:

  • Preheat oven to 200°C / 390°F (all oven types).
  • Place fish in a baking dish - ensure the fish isn't crammed in too snugly. See video or photos in post. Sprinkle both sides of fish with salt and pepper.
  • Place butter, cream, garlic, mustard, lemon juice, salt and pepper in a microwave proof jug or bowl. Microwave in 2 x 30 sec bursts, stirring in between, until melted and smooth.
  • Sprinkle fish with shallots, then pour over sauce.
  • Bake for 10 - 12 minutes, or until fish is just cooked. Remove from oven and transfer fish to serving plates. Spoon over sauce, and garnish with parsley and lemon wedges if using.

4 fish steaks (use halibut, salmon or swordfish steaks between 8-10 oz and at least 1 inch thick.)
1/4 cup lime juice
2 tablespoons oil
1 teaspoon Dijon mustard
2 teaspoons fresh ginger, grated
1/4 teaspoon cayenne pepper
black pepper

Steps:

  • 1. In a bowl, combine the lime juice, 1 tablespoon oil, ginger, cayenne pepper and enough freshly ground black pepper to suit your taste.
  • 2. Marinate the fish in the marinade for 45-60 minutes. Turn steaks 2-3 times.
  • 3. Have the grill prepared with white coals and brush the cooking grill with the remaining one tablespoon oil.
  • 4. Grill the fish, brushing several times with the marinade, until cooked through and opaque in the center.
  • 5. Turn fish after about 4-5 minutes. Total grilling time will depend on your grill and the heat of the coals.
  • 6. To broil instead, use a broiler pan brushed with oil and broil until center is opaque. Will take about 10 minutes total in broiler. Turn steaks after 5 minutes, and baste often with marinade.

1 c chicken or vegetable broth or stock
1 Tbsp flour
1 Tbsp butter
1/2 tsp salt
1/4 tsp dried parsley flakes
1/4 tsp pepper
pinch ground thyme
1/4 c heavy cream
1 and 1/2 lb sole, trout, pike or other white fish
1/2 c sliced, sauteed mushrooms (or use canned) (optional)
3 Tbsp grated parmesan, swiss, or gruyere cheese
2 Tbsp dry bread crumbs
1 Tbsp melted butter
1 tsp lemon juice (optional)
fresh chopped parsley

Steps:

  • 1. Pre-heat oven to 375 degrees.
  • 2. Bring broth to a boil in a small sauce pan. Blend flour into 1 tablespoon butter and stir into broth. Cook, stirring, until thickened. Reduce heat, stir in salt, parsley flakes, pepper, thyme and cream.
  • 3. Place fish in a well-buttered baking dish. Pour sauce over fish. Bake at 375 degrees for 15 minutes.
  • 4. If using mushrooms, spread on top of fish. Mix together cheese, bread crumbs, melted butter, and lemon juice (if desired). Sprinkle over fish in pan. Bake about 15 minutes longer, or until fish flakes easily. Top with chopped fresh parsley.
  • 5. *Variation: Top fish with 1/2 cup chopped tomato before covering with sauce.

  • Melt butter in skillet over low heat. Add mushrooms and saute over medium heat until tender.
  • Rub oil over shallow 4 quart baking dish and sprinkle with grated cheese.
  • Place fish on cheese.
  • Sprinkle fish with salt and pepper. Add green pepper and top with mushrooms.
  • Pour wine over fillets.
  • Bake at 450F for 20 minutes or until fish flakes.
  • Sprinkle with lemon juice and parsley.
