CHILE VINEGAR DIPPING SAUCE

- Sterilize jar and lid:
- Wash jar, lid, and screw band in hot soapy water, then rinse well. Dry screw band. Put empty jar on a rack in a boiling-water canner or a deep 5- to 6-quart pot and add enough hot water to cover by 2 inches. Bring to a boil, covered, then boil 10 minutes. Remove canner from heat, leaving jar in water. Heat lid in water to cover by 2 inches in a small saucepan until thermometer registers 180°F (do not let boil). Remove from heat. Keep jar and lid submerged in hot water, covered, until ready to use.
- Make chile vinegar:
- Carefully remove jar and lid with tongs, then drain jar upside down on a clean kitchen towel and dry lid.
- Pack chiles into jar. Bring vinegar to a boil in small saucepan, then remove from heat and pour over chiles. Cool to room temperature. Wipe off rim of jar with a dampened clean kitchen towel, then top with lid and firmly screw on screw band. Chill sealed jar 2 weeks.
- Make dipping sauce:
- Bring water and sugar to a boil in a small saucepan, stirring until sugar is dissolved, then stir in red-pepper flakes (if using), 2 tablespoons chile vinegar, and salt to taste. Remove from heat and cool to room temperature.
ONION CHILI SAUCE
This is wonderful on hot dogs and hamburgers, it's even good on sandwiches, and will keep in the fridge for about a week or so. Plan ahead the sauce needs to chill overnight before using. You will really like this! If you love heat, then increase jalapeno peppers and the hot sauce.

Steps:
- In a large skillet cook onion, covered in hot oil for about 20 minutes over medium heat, stirring occasionally (reduce heat to medium-low if onions begin to brown).
- Add in the bell pepper and jalapeno peppers; cover with a lid and cook for 5 minutes, or until peppers are just tender.
- Add in all remaining ingredients; mix to combine and bring to a boil; reduce the heat and simmer uncovered for about 5 minutes.
- Cool to room temperature.
- Refrigerate overnight beofre using.

- Pulse mushrooms in a food processor until finely and evenly chopped. Pieces should be no more than 1/8″ in diameter.
- Heat olive oil in a large saute pan over medium-high heat. When oil is shimmering, add mushrooms and cook, untouched in a single layer, for 4 minutes. Reduce heat to medium, stir and add garlic and 1 spring onion on top. Continue cooking for an additional 2 minutes. Add stock, soy sauce and chili sauce. Season with salt and pepper, stir to combine and let simmer for another minute. Remove from heat.
- Lay a wonton wrapper flat on a clean, dry surface. Place 1 teaspoon of filling in the center. Brush water along all four outside edges. Fold in half to form a triangle, pressing firmly around the edges to seal. Brush water on one corner of the long side of the triangle. Gather into a dumpling shape by bringing the other edge of the long side of the triangle to the water-brushed corner, pressing firmly to seal. Repeat until all of the dumplings have been filled.
- Heat canola oil in a large, non-stick saute pan over medium-high heat. When oil is nearly smoking, add dumplings in a single layer and cook for about 2 minutes, until nicely browned on the bottom. Watch closely so they do not burn. Reduce heat to medium-low. Add 1/4 cup water, cover and steam dumplings for 4 minutes or until all of the liquid has been absorbed and the dumplings begin to crisp on the bottoms once more.
