Shortbread Thumbprints With Bittersweet Ganache Recipes

Steps:
- Roll dough into 1-inch balls, then roll in crushed candies, if using. Arrange on parchment-lined baking sheets, spacing each 1 inch apart.
- Press a well into the center of each using your finger. Refrigerate until firm, about 30 minutes. Bake at 350 degrees for 7 minutes. Remove from oven, and press well again with handle end of a wooden spoon. Bake until firm, 7 to 9 minutes more.
- Let cool completely. Spoon ganache into thumbprints.

- Preheat oven to 350°F. Line a baking sheet with a silicone baking mat or parchment paper, set aside.
- In the bowl of a stand mixer, or in a mixing bowl using a hand mixer, cream together the butter and sugar until light and fluffy, about 2 minutes. Add in the vanilla and egg, and mix until combined.
- Add in the flour and salt to the creamed butter mixture in two additions, mixing well until combined.
- Fill a small saucer with granulated sugar. Form the dough into 1 tablespoon balls using a cookie scoop or your hands. Roll in the sugar, and then place on the prepared baking sheet. Repeat with remaining dough, placing cookies about an inch apart.
