DOPIAZEH
I found this recipe on a blog called Turmeric and Saffron. It is wonderful served with Persian rice and warm pita bread.

Steps:
- In non-stick skillet, heat 3 tablespoons oil on medium heat, add half of the chopped onions, saute until golden brown.
- Add turmeric and stir well before adding in the garlic.
- Add the pound of ground meat and saute until brown.
- Add salt and pepper to taste.
- Mix in the chopped potatoes, the second batch of chopped onions, a cup of water and the tomato paste. Stir well.
- Adjust the seasoning and cook on low heat for an hour. Add more water, if needed.
- Serve with rice or warm pita.
CHICKEN DOPIAZA
In Hindi "do" means "two" and "piaza" refers to onions - hence the origin of the name of this dish, which has prominent flavors of onion.

Steps:
- Heat 2 tablespoons oil and fry the halved onions until tender and translucent. Remove and keep aside.
- Add the remaining oil and saute the bay leaves, cardamom, cloves, chilies and peppercorns.
- When they crackle, add the chopped onions this time, together with the garlic and ginger, and saute for 3 minutes.
- Add the ground spices and salt and cook for 3 minutes.
- Add the water and tomatoes and simmer 5 minutes until sauce starts to thicken.
- Add the chicken pieces and continue to cook for 12-15 minutes.
- Add the reserved small halved onions and then cover and cook for a further 8-10 minutes until chicken has cooked through.

- Pre-cook the coarsely chopped onion. Heat your skillet over medium heat. Add 1 Tbsp vegetable oil and fry the onions until the edges just start to turn brown. Remove onions but leave the oil in the pan.
- Heat your frying pan (don't use non-stick) briefly over medium heat. Add the rest of the oil. Use all the oil specified. It's important.

- If using medium tofu, drain and pat gently with absorbent kitchen towel. If using firm tofu, drain and press firmly with absorbent kitchen towel to remove excess moisture. Some extra-firm tofu may need to be pressed between paper towels for 30 minutes or so. Just use a couple of tins of beans for weight. I use medium tofu so skip this step.
- Heat oil in a smoking hot wok or kadai. I like to use a carbon steel wok for the smokiness it imparts on the curry. Add the bay leaves, dried chillies, cinnamon, black stone flowers and cloves. Sauté for 10-15 seconds and then add the sliced leeks.
