ROAST TURKEY BREAST

- Take the turkey breast out of the fridge and allow it to come to room temperature for an hour.
- Heat the oven to 190C/170C fan/gas 5. Put a rack inside an oven tray with the onions and carrots underneath, or arrange the veg inside an ovenproof frying pan.
- Weigh the turkey breast and calculate 40 mins per kilo, plus an additional 20 mins.
- Rub the butter over the skin and season well. Put the turkey breast on the rack or rest it on top of the veg in the pan.
- Pour in enough water to cover the veg and cover the whole tin or pan with a tent of foil.
- Roast for the allotted time, taking the foil off 20 mins before the end to brown the skin. Test with the point of a knife and see if the point feels hot as soon as you pull it out (be careful) and the juices run clear. If you have a thermometer then it should read 65-70C. If the joint appears to be underdone, then put back in the oven for another 10 mins.
- Leave the turkey to rest for 20 mins somewhere warm, it will keep cooking so the final internal temperature will rise to 70C, or just above that. Don't skip this step otherwise the juices will run out as you carve.
- Use the strained veg and liquid in the bottom of the tin and the juices from carving to add to this gravy, if you like, and serve with the turkey and veg.

AIR FRYER TURKEY BREAST
If you have a taste for turkey, but don't want the time or the hassle of a full bird, try a split turkey breast, prepared in the air fryer. This recipe gives the flavor of an oven-roasted turkey, but in much less time, and with much less fuss! Use any combination of fresh herbs that you and your family will enjoy!

- Preheat air fryer to 350 degrees F (175 degrees C).
- Place rosemary, chives, garlic, salt, and pepper onto a cutting board. Cut butter into thin slices on top of herbs and seasonings and mash until well blended.
- Pat turkey breast dry and rub with herbed butter on both sides and under the skin.
- Place turkey into the basket of the air fryer, skin-side down, and fry for 20 minutes.
- Turn turkey to skin-side up carefully and continue frying until an instant-read thermometer inserted near the bone reads 165 degrees F (74 degrees C), about 18 minutes more. Transfer to a platter and tent with aluminum foil; allow to rest for 10 minutes. Slice and serve warm.

PERFECT TURKEY BREAST ROAST IN THE AIR FRYER

- Thaw frozen turkey breast in the refrigerator for about 24 hours.
- Bring water to a boil and stir in kosher salt, brown sugar, and pepper. Remove brine from heat and let cool completely, about 30 minutes. Remove turkey breast from wrapper and leave netting in place if possible. Place turkey into a container and cover with cooled brine; add more water if necessary to completely cover, stirring to ensure brine is mixed with water. Let turkey brine for 8 hours, or overnight, in the refrigerator.
- Preheat an air fryer to 390 degrees F (200 degrees C) according to manufacturer's instructions.
- Remove turkey and discard the brine. Pat turkey dry. Rub with butter and coat with seasoned salt and pepper.
- Cook turkey in the preheated air fryer for 15 minutes; turn, remove netting, and season once more. Reduce temperature to 360 degrees F (182 degrees C). Continue to cook for 20 minutes, turning after 15 minutes. Increase temperature to 390 degrees F (200 degrees C), turn, and cook until no longer pink in the center, about 15 minutes more. Remove turkey and let rest for about 5 minutes before cutting and serving.
