MUSHROOMS IN CREAM AND SHERRY HERB CRUST



Mushrooms in Cream And Sherry Herb Crust image

Number Of Ingredients 17

3 tablespoons fresh bread crumbs
2 tablespoons freshly grated Parmesan cheese
3 tablespoons Gruyere or Swiss cheese grated as finely as possible
1 tablespoon finely chopped parsley
2 teaspoons finely chopped fresh basil
1/2 teaspoon finely chopped fresh thyme or half the amount dried
1/4 pound fresh cultivated mushrooms (see note)
1/4 pound assorted wild mushrooms such as shiitake, morels and pleurotes, available in specialty shops where fine fresh vegetables are sold
2 tablespoons unsalted butter
2 tablespoons finely minced shallots
1/2 teaspoon finely minced garlic
1 1/2 tablespoons dry Madeira wine
2 1/2 tablespoons medium-dry Sherry
3/4 cup heavy cream
Salt to taste if desired
Freshly ground pepper to taste
Sprigs of fresh parsley or coriander leaves for garnish, if desired

Steps:

  • To make the herb crust, combine the bread crumbs, Parmesan cheese, Gruy ere cheese, parsley, basil and thyme. Blend and set aside.
  • Cut away and discard the stems of all the mushrooms. Cut all the mushroom caps into fairly large bite-size pieces. They will shrink as they cook.
  • Heat the butter in a skillet and add the shallots and garlic. Cook, stirring, until wilted.
  • Add the mushrooms and cook, stirring, until the mushrooms give up their liquid. Cook until the liquid evaporates. The cooking time should be five to eight minutes. Scrape the mushrooms into a bowl and set aside.
  • To the skillet add the Madeira, Sherry, cream, salt and pepper. Cook over moderate heat about 10 minutes or until the sauce is reduced to about one-half cup.
  • Meanwhile, preheat the broiler to high.
  • Add the mushrooms to the cream sauce and blend. Spoon and scrape the mixture into a heat-proof serving dish. Cover with the herb and crumb mixture.
  • Run the dish under the broiler and broil until the crust is nicely browned. Garnish, if desired, with sprigs of fresh parsley or fresh coriander leaves.

2 tablespoons butter
1 lb mushroom, sliced
2 tablespoons butter
2 tablespoons flour
1 cup light cream
salt and pepper, to taste
2 tablespoons sherry wine
paprika
1/2 cup seasoned dry bread crumb
2 teaspoons butter, melted

Steps:

  • Preheat oven to 375F/190°C.
  • Melt 2 tablespoons butter in large skillet and saute mushrooms until just cooked. Remove mushrooms with slotted spoon and set aside.
  • In same pan, melt 2 tablespoons of butter and add flour to make a roux. Stir for 1-2 minutes. Add cream and stir to combine. Add salt and pepper, sherry and just enough paprika to give a bit of pinkness to the sauce. Stir until heated through.
  • Return mushrooms and any juice that has collected to the cream sauce. Pour into greased baking dish.
  • Mix breadcrumbs with the melted butter and spread over the mushrooms.
  • Bake until brown and hot, about 15-20 minutes.

CREAMY MUSHROOM AND SHERRY SAUCE

15ml (1 tbsp) butter
1 garlic clove
300g (10 oz) mushrooms
120ml (4fl oz) sherry
120ml (4fl oz) double cream
5ml (1 tsp) corn flour

Steps:

  • Melt the butter in hot pan and gently fry the garlic for one minute.
  • Add the mushrooms to the garlic and fry them for a few minutes until lightly browned.
  • Pour the sherry in and cook until reduced to a glaze which will take about 3 minutes.
  • Stir in the cream and let the sauce cook for 1 minute.
  • Meanwhile, mix the corn flour with 5ml (1 tsp) of cold water in a cup.
  • Reduce the heat and slowly add the slurry to the sauce and stir vigorously to avoid any clotting.
  • After the sauce has thickened, serve immediately.

1/2 cup butter
3 large scallions, cut into 1-inch pieces
1 garlic clove, crushed
2 tablespoons dry sherry
1 tablespoon all-purpose flour
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon ground pepper

Steps:

  • Remove stems from mushrooms; cut stems into quarters; leave caps whole.
  • In 12-inch skilllet over medium-high heat, melt butter; add mushroom caps and stems, scallions, and garlic; cook 10-12 minutes, stirring frequently until mushrooms are tender.
  • Meanwhile, in a small bowl, stir sherry into flour to blend; stir in cream until smooth.
  • Pour mixture into skillet; bring to a boil.
  • Reduce heat to low; stir in salt and pepper.

Chestnut crêpes (makes fifteen 8-inch crêpes)
2 eggs, at room temperature
1 cup (100 g) chestnut flour
1 cup (250 ml) whole milk, at room temperature
1 tablespoon finely chopped fresh parsley
1/4 teaspoon salt
Pinch of freshly grated nutmeg
1/4 stick (2 tablespoons or 30 g) unsalted butter, melted, plus more melted butter for the pan
Creamy mushrooms
3 tablespoons olive oil
2 cloves garlic, peeled
8 ounces (225 g) exotic mushrooms, such as cremini, oyster, and shiitake
4 sprigs thyme
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons crème fraîche or whole-milk sour cream
1 tablespoon finely chopped fresh parsley

Steps:

  • Make the crêpes
  • 1. Combine all the ingredients in a blender and mix until a thin batter forms. Chill the batter for at least 1 hour before using. It can be stored in the refrigerator for up to 24 hours.
  • 2. Heat an 8-inch nonstick sauté pan over medium heat. Brush the bottom and sides of the pan with some of the melted butter reserved for this purpose.
  • 3. Stir the chilled batter. Add about 2 tablespoons of batter to the pan while swirling it. This ensures a thin layer of the batter all over the pan. You want thin crêpes. Let the crêpe cook for about 30 seconds or until it gets lightly golden. Tuck in the sides with a rubber spatula. Using a spatula or even your hands (careful!), quickly flip the crêpe over and finish cooking. The first crêpe is usually a test one, so don't worry if it sticks. Transfer it to a plate and repeat with the rest of the batter. Stack all the crêpes. They should not stick together.
  • 4. At this point, you can fill them with anything or freeze them, stacked and tightly wrapped, for up to 1 month.
  • Prepare the mushroom filling
  • 1. In a medium sauté pan, heat the olive oil over medium heat. Add the cloves of garlic and gently let the garlic infuse the oil for 1 to 2 minutes; then remove it. Do not burn the garlic.
  • 2. Add the mushrooms and thyme. Cook for another couple of minutes, until soft and slightly caramelized. Season with the salt and pepper. Remove from the heat and add the crème fraîche.
  • 3. Add about 2 tablespoons of filling and a sprinkle of parsley to each crêpe and roll them up. Serve immediately.

1 lb fresh button mushroom, same-size, divided
2 tablespoons extra virgin olive oil
1 teaspoon fresh thyme, minced, divided
kosher salt
3 garlic cloves, minced
1/4 cup medium- dry sherry
1 tablespoon fresh flat leaf parsley, minced
1 tablespoon butter

Steps:

  • If mushrooms are greater than one inch in diameter, cut into quarters.
  • Heat 12 inch skillet over medium heat.
  • Add 1 T olive oil. When the oil is hot enough to sizzle a piece of mushroom, add half the mushrooms and half the thyme. Raise the heat to medium-high and saute, stirring only occasionally, until the mushrooms are golden brown. If you stir them too often or crowd them in the pan, you'll prevent the mushrooms from carmelizing.
  • Season with salt and pepper.
  • Transfer the mushrooms to a bowl, and repeat with the remaining mushrooms. Add the garlic, and saute 1 minute, stirring. Return the reserved mushroom, with any accumulated juices, to the pan.
  • Add the sherry and parsley, and boil until the liquid is reduced to a glaze, another minute or so.
  • Add the butter, and gently swirl the pan as the butter melts and emulsifies with the sauce. Taste and adjust the seasonings with salt and pepper.
  • Enjoy!
