THE BEST LAYERED LASAGNA RECIPE BY TASTY

The Best Layered Lasagna Recipe by Tasty image

Here's what you need: olive oil, butter, onion, large carrot, celery stalk, ground beef, ground pork, salt, pepper, can of tomato paste, red wine, diced tomato, ricotta cheese, fresh basil, shredded parmesan cheese, fresh parsley, egg, salt, pepper, lasagna noodle, shredded mozzarella cheese

Provided by Matthew Johnson

Categories     Lunch

Yield 12 servings

Number Of Ingredients 21

2 tablespoons olive oil
2 tablespoons butter
1 onion, minced
½ cup large carrot, peeled and minced
½ cup celery stalk, minced
1 lb ground beef
1 lb ground pork
salt, to taste
pepper, to taste
½ cup can of tomato paste
2 cups red wine
4 cups diced tomato
15 oz ricotta cheese
½ cup fresh basil, chopped
1 cup shredded parmesan cheese, plus more to taste
½ cup fresh parsley, chopped
1 egg
salt, to taste
pepper, to taste
1 lb lasagna noodle, cooked
shredded mozzarella cheese

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the olive oil and butter to a large skillet over medium-high heat. Once warmed, add the onion, carrot, celery, and garlic. Cook, stirring occasionally, until golden brown, 10-12 minutes. Once the vegetables have caramelized, add the beef, pork, salt, pepper, and tomato paste. Stir to combine, breaking up the pieces of meat, until the meat has browned, 15-20 minutes.
  • Once the sauce is dark brown and starting to stick slightly to the bottom of the pan, add the red wine. Scrape the bottom of the pan with a wooden spoon to release all the cooked brown bits. Once the wine comes to a simmer, add the diced canned tomatoes, and stir to combine. Bring the sauce to a simmer and cook for at least 30 minutes (the longer the better!) stirring occasionally.
  • In a large bowl, mix together the ricotta, basil, Parmesan, parsley, egg, salt, and pepper.
  • In a 9x13-inch (23x33 cm) glass baking dish, add a layer of bolognese to the bottom. Top with noodles, then spread a layer of the ricotta mixture on top. Repeat with another layer of bolognese, noodles, ricotta, noodles, bolognese, then top with mozzarella and additional Parmesan. Cover the pan with foil and bake for 25 minutes.
  • Remove the foil and bake for another 15 minutes, until the cheese on top has browned and the bolognese is bubbling. Slice and serve.
  • Enjoy!

Yield 12

Number Of Ingredients 20

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves

1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. 8-LAYER LASAGNA

8-Layer Lasagna image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Yield Makes 12

Number Of Ingredients 20

3/4 cup dried porcini mushrooms (about 3/4 ounce)
1 bay leaf, preferably fresh
1 sprig fresh rosemary
1 sprig fresh thyme
2 whole cloves
3/4 cup (1 1/2 sticks) plus 2 tablespoons unsalted butter, divided
4 1/2 ounces prosciutto, cut into 1/4-inch pieces
2 1/4 cups very finely chopped onions
3/4 cup very finely chopped celery
3/4 cup very finely chopped carrots
2 tablespoons extra-virgin olive oil, divided
2 pounds boneless pork shoulder, trimmed and coarsely ground
2 teaspoons tomato paste
3 cups dry Marsala wine
3 cups Homemade Brown Chicken Stock
Coarse salt and freshly ground black pepper
10 ounces cremini mushrooms, finely chopped (about 3 1/4 cups)
2 pounds Lasagna Noodles for 8-Layer Lasagna
2 cups freshly grated Parmigiano-Reggiano cheese, plus more for topping
4 cups Martha's Bechamel Sauce for Lasagna

Steps:

  • Place porcini mushrooms in a small bowl with enough warm water to cover; let stand 30 minutes.
  • Drain mushrooms. If a more pronounced mushroom flavor is desired, strain liquid through a fine mesh sieve and set aside. Chop mushrooms and set aside.
  • Using a piece of kitchen twine, tie together bay leaf, rosemary, thyme, and 2 whole cloves; set aside.
  • Melt 6 tablespoons butter in a large saucepan over medium-high heat. Add prosciutto and saute until golden brown, about 5 minutes. Add onions, celery, and carrots, reduce heat to medium, and cook until very soft but not brown, about 30 minutes.
  • In a large skillet over medium-high heat, melt 6 tablespoons butter with 1 tablespoon olive oil. Add pork and cook until golden brown, about 8 minutes. Transfer pork to vegetable mixture, reserving skillet. Add tomato paste to pork and vegetable mixture and cook 2 minutes. Meanwhile, add Marsala to reserved skillet and bring to a boil, stirring with wooden spoon or spatula, scraping up all the browned bits from bottom of pan. Pour Marsala over pork and vegetable mixture, place saucepan over medium-high heat, and bring to a boil. Immediately reduce to a simmer and cook until liquid has reduced by one-third, 30 to 45 minutes. Add chicken stock, herb bundle, and mushroom soaking liquid (if using); stir to combine. Bring to a boil, reduce heat, and let simmer, partially covered, for 2 hours. Remove from heat, season with salt and pepper; set aside to cool. Remove herb bundle.
  • Heat remaining tablespoon olive oil in large skillet over high heat. Add cremini mushrooms and reserved porcinis; season with salt and pepper. Cook, stirring occasionally, about 8 minutes. Fold mushrooms into pork mixture; set aside.
  • Preheat oven to 350 degrees, with rack in center. Melt remaining 2 tablespoons butter. Brush 12 4 1/2-by-2-inch ramekins with melted butter. Place one pasta round in bottom of each ramekin. Top round with 1 teaspoon Parmigiano-Reggiano. Using a 1 1/2 tablespoons scoop, top cheese with 1 scoop of meat mixture, then 2 teaspoons bechamel sauce. Repeat process until you have 8 layers, finishing with pasta; keep in mind you may not need to use all the pork mixture. Top final layer of pasta with bechamel sauce and sprinkle with cheese.
  • Transfer ramekins to baking sheet lined with parchment paper and fitted with wire rack. Cover ramekins with parchment-lined foil and bake until sauce is bubbly, about 15 minutes. Remove parchment-lined foil, increase heat to 425 degrees, and continue baking until crisp on top, about 10 minutes. Remove from oven and let stand 20 minutes. Serve immediately with extra cheese and meat sauce.

7 CHEESE LASAGNA

7 Cheese Lasagna image

This is one of my kids favorite meals. I have made this for family gatherings as well as work related functions. If you have a smaller family you could reduce the recipe to half. This is however great for left overs you can send it to work with a loved one. School is not a place to send it however the other kids tend to want what yours are having.

Categories     One Dish Meal

Time 2h50m

Yield 10-12 serving(s)

Number Of Ingredients 17

4 cups ricotta cheese (2-16 oz containers)
2 cups monterey jack cheese (finely shredded)
2 cups romano cheese (finely shredded)
2 cups mozzarella cheese (finely shredded)
2 cups asiago cheese (finely shredded)
2 cups provolone cheese (finely shredded)
2 cups parmesan cheese (finely shredded)
1/4 cup parsley (finely chopped, preferably fresh but dried is fine)
48 ounces tomato sauce
2 (16 ounce) cans diced tomatoes
1 (8 ounce) can tomato paste
2 teaspoons oregano
2 bay leaves (you can substitute both oregano and bay leaf with 1.5 tsp of italian seasoning)
2 fresh garlic cloves (minced)
1 large white onions (optional, minced finely, your choice) or 1 large yellow onion (optional, minced finely, your choice)
1 1/2 lbs Italian sausage (or a mixture of the two if you want is fine) (optional) or 1 1/2 lbs ground beef (or a mixture of the two if you want is fine) (optional)
3 (16 ounce) packages no-boil lasagna noodles

Steps:

  • Put all of sauce ingredients in a large sauce pan simmer over low heat. Remove bay leaves if you use them.
  • Combine meat and onions if you decide to use them in a skillet. Brown, drain and rinse to remove any extra unwanted fats. Completely cool sauce before you begin layering. (it may be easier to prepare sauce the day before, it can be made ahead and put in freezer if you want just remember to have ample time to let it thaw before use).
  • While sauce is cooling mix dry cheeses together in large bowl, mix well and then reserve approximately 1 cup for topping. Then add in Ricotta and Parsley, blend together till well blended.
  • Preheat oven to 400°F.
  • Spray a large roasting pan with non stick cooking spray.
  • Begin layering ingredients. First layer is cheese, then sauce, and then noodles, continue to repeat all the way through I have found through the years of making this dish it is easier to layer the cheese by hand. The last layer is sauce. Sprinkle reserved cheese over top.
  • Reduce heat to 350°F and cook for 1.5 hours or until noodles are done.

CATELLI'S 10 LAYER LASAGNA WITH DOMENICA'S SAUCE

Catelli's 10 Layer Lasagna with Domenica's Sauce image

Provided by Food Network

Time 2h30m

Yield 10 main course servings or 20 side dish servings

Number Of Ingredients 19

4 to 5 cloves garlic, minced
1/2 teaspoon crushed red pepper
2 tablespoons extra-virgin olive oil, plus additional for the pan
One 28-ounce can crushed tomatoes
1/2 teaspoon salt
2 cups sheep-milk ricotta, such as Bellwether Farm
1/2 cup mild goat cheese, such as Laura Chenel
1/2 cup freshly grated Parmesan, plus additional for lasagna
1 tablespoon chopped fresh basil, plus additional for lasagna
1 tablespoon chopped fresh mint
1 teaspoon freshly grated nutmeg
Salt and pepper, to taste
6 egg yolks, preferably organic
5 to 6 cups "00" flour, preferably organic
1 tablespoon butter
1/2 tablespoon all-purpose flour
2 cups milk, preferably organic
1 tablespoon chopped fresh thyme
Salt and freshly ground pepper

Steps:

  • For Domenica's sauce: Lightly saute the garlic and chili flakes in the olive oil in a saucepan. Add the tomatoes and salt and simmer for 20 to 30 minutes.
  • For the three-cheese filling: Mix together ricotta, goat cheese, Parmesan, basil, mint, nutmeg and some salt and pepper in a bowl.
  • For the pasta: Place the yolks in the base of a stand mixer fitted with the paddle attachment and turn on low speed. Start slowly adding flour. As the dough starts to come together, scrape down the sides of the bowl. Remove the dough and knead until smooth and not sticky. Let rest for 20 to 30 minutes.
  • Cut dough into four quarters. Roll the quarters through a pasta machine, starting with the widest opening, taking it through each opening once or twice and finishing with the smallest opening. (You should be able to see through the finished pasta sheets.)
  • Cut sheets into pieces that will fit in a 9-by-13-inch baking pan.
  • Boil a pot of water and cook pasta sheets for about 1 minute, then remove them and put them in ice water to stop the cooking. Remove the sheets and lay out on clean kitchen towels or napkins.
  • For the thyme bechamel: Heat the butter and flour in a saucepan over medium heat and stir together for a minute. Add the milk, thyme and some salt and pepper and cook until mixture starts to thicken. Turn off heat and set aside.
  • To assemble: Preheat oven to 375 degrees F.
  • Coat a large baking dish with olive oil. Lay a sheet of pasta in the bottom and spread with a thin layer of bechamel and cheese filling. Spread with a rubber spatula or large metal spoon. Add a layer of pasta, then spread a layer of tomato sauce on that.
  • Repeat this assembly until the pasta is all layered. Finish the top layer with tomato sauce and bechamel and sprinkle with Parmesan and basil. Cover with foil and bake for 24 to 30 minutes. Remove foil and cook for an additional 10 minutes.
