This Asian chicken salad has chicken, lots of veggies, and is topped with a seriously addicting homemade sesame chili vinaigrette.

1 rotisserie chicken, meat pulled off and shredded
2 small heads Chinese green cabbage, shredded
2 cups frozen peas
2 large carrots, shredded
2 cucumbers, diced
1/2 cup chopped green onion
1/2 cup sweet chili garlic sauce
6 tablespoons honey
5 tablespoons sesame oil
3 tablespoons vinegar
4 tablespoons lime juice (I used calamansi - yum)
2 teaspoons wasabi paste
crushed peanuts for topping

Steps:

  • Cook the peas according to directions. Drain and let cool slightly.
  • Combine chicken, cabbage, peas, carrots, cucumbers, and green onions. Toss to combine. Cover and chill for an hour.
  • Whisk the chili sauce, honey, oil, vinegar, lime juice, and wasabi paste until well mixed. Chill for an hour.
  • Pour dressing over salad and toss well. Sprinkle each serving with crushed peanuts.

1/3 cup rice vine vinegar
3 tablespoons organic cane sugar, coconut sugar, or honey
1 ½ tablespoons fish sauce (or use vegan fish sauce, or salt to taste then add a tiny drizzle of soy sauce, or liquid aminos)
1 teaspoon chili flakes
½ cup red onion, sliced very thin- or use a shallot (or sub quick pickled onions, added later with herbs)
2 garlic cloves, minced

4-5 ounces uncooked rice vermicelli noodles, bean thread noodles or "sea tangle" ( clear kelp noodles)
2 cups julienned carrot
2 cups julienned cucumber
1 cup chopped fresh mint
1 cup chopped fresh basil
1 cup chopped fresh cilantro
1 cup roasted, unsalted peanuts
2 tablespoons olive oil- optional- see notes
* feel free to sub other veggies for the carrots and cucumber- like zucchini noodles, red bell, turnip, kohlrabi, radishes.

Steps:

  • Place the first 6 ingredients in a small sauce pan, bring to a simmer, simmer five minutes and place in the fridge to cool.
  • Cook the noodles according to directions. If using sea kelp noodles, no need to cook.
  • Place drained rinsed noodles in a large bowl and top with veggies and herbs.
  • Toss well. Add the the chilled dressing and herbs, tossing again.
  • Top with crushed roasted peanuts.
  • For extra protein, add Baked Sesame Ginger Tofu - super delish!

1/4 cup soy sauce
2 tbsp toasted sesame oil
1/4 cup white vinegar ((adjust to taste for sharpness))
1/4 cup olive oil ((Note 1))
1 tbsp sugar ((any type) or 1 1/2 tbsp honey)

2 tsp toasted sesame oil
1 tbsp white vinegar
1 tbsp olive oil ((Note 1))

Steps:

  • Place ingredients in a jar and shake well until sugar is dissolved. Adjust saltiness with salt and sweetness with sugar to taste.
  • Keep for up to 3 weeks, in the fridge (to be safe). Bring to room temp and shake well before use.
  • Single serving batch is enough for 3 - 4 cups of shredded cabbage / leafy greens i.e. a side salad for 4 people.
  • Big batch - my rule of thumb for how much dressing to use is generally 1 tbsp of dressing per 1 packed cup of shredded vegetables and 2 tsp per handful of leafy greens.

  • Combine the first eight ingredients in a small bowl or glass measuring cup, whisking until well blended and the thickener is dissolved.
  • Whisk in the olive oil, mix well and pour into a glass container to serve and store.

1 garlic clove, minced
1 teaspoon minced ginger
1 shallot, finely diced (or 1/2 medium red onion)
3 tablespoons rice wine vinegar

1 -2 teaspoon brown sugar (to taste)
4 1/2 tablespoons dark sesame oil
1/2 teaspoon chili oil (if you don't have add some crushed red pepper flakes instead)
1 tablespoon chopped cilantro (or parsley or finely sliced scallion) (optional)

Steps:

  • Combine the garlic, ginger, and shallot in a small bowl. Cover with the vinegar, and let stand for about 15 minutes.
  • Stir in the soy sauce and sugar, then whisk in the oils.
  • Add the cilantro or parsley if desired.
  • Taste and adjust the amount of soy sauce and sugar needed. Enjoy!

2 medium garlic cloves, smashed with the side of a knife
1 small shallot, roughly chopped
2 tablespoons shoyu or tamari
2 tablespoons balsamic vinegar
2 tablespoons red or white wine vinegar
1 tablespoon light miso paste
1 tablespoon dark brown sugar
1/2 cup grapeseed, vegetable or canola oil
2 tablespoons toasted sesame oil
2 tablespoons toasted white or black sesame seeds

Steps:

  • Combine garlic, shallot, shoyu, vinegars, miso and sugar in a blender and blend on high speed until homogenous. (Alternatively, mash garlic and shallots in the bowl of a large granite or marble mortar and pestle into a fine paste using the pestle, then stir in the shoyu, vinegars, miso and sugar.)
  • With the blender running on medium speed (the liquid should form a vortex but not jump up and splatter on the walls of the blender), slowly drizzle in the grapeseed oil. (If using a mortar and pestle, slowly drizzle in the oil as you stir vigorously with the pestle.)
  • Transfer to a lidded jar. Stir in the sesame oil and sesame seeds with a spoon. Dressing can be stored in the refrigerator for up to 3 weeks. Shake well before using.
