SESAME PORK WITH GARLIC CREAM SAUCE

1 1/2 pounds pork tenderloins
2 tablespoons vegetable oil
1/4 cup sesame seed
1 tablespoon butter or margarine
2 cloves garlic, finely chopped
1 package (3 ounces) cream cheese, cut into cubes
1/3 cup milk
1 tablespoon chopped fresh chives or 1 teaspoon freeze-dried chives

Steps:

  • Cut pork into 12 slices. Flatten pork slices to 1/2-inch thickness between sheets of plastic wrap or waxed paper.
  • Set oven control to broil. Brush pork with oil. Place pork on rack in broiler pan. Sprinkle with half of the sesame seed. Broil pork with tops 4 to 6 inches from heat 6 minutes; turn. Sprinkle with remaining sesame seed. Broil about 5 minutes longer or until pork is slightly pink in center.
  • Melt butter in 10-inch skillet over medium heat. Cook garlic in butter about 2 minutes, stirring occasionally; reduce heat. Add cream cheese and milk. Cook, stirring constantly, until smooth and hot. Stir in chives. Serve sauce with pork.

1 pork tenderloin (1 pound)
2 teaspoons vegetable oil
2 teaspoons sesame seeds, toasted, divided
1 to 2 garlic cloves, minced
1 tablespoon butter
1/3 cup 1% milk
3 ounces reduced-fat cream cheese
1 tablespoon minced chives

Steps:

  • Cut pork into 1-in. slices; flatten to 1/2-in. thickness. Place in a 15x10x1-in. baking pan coated with cooking spray. Brush oil over all sides of pork; sprinkle with half of the sesame seeds. , Broil 4-6 in. from the heat for 3-5 minutes; turn and sprinkle with remaining sesame seeds. Broil 3-5 minutes longer or until meat juices runs clear., Meanwhile, in a saucepan, saute garlic in butter for 1 minute. Stir in milk and cream cheese. Reduce heat; cook and stir until blended and smooth. Stir in chives. Serve with pork.

This is a recipe I received from a caterer in town. She served this unique dish at an event and everyone really enjoyed it. It is pork tenderloin sliced thin and broiled for 3-5 minutes on each side. The pork slices are topped with a cream cheese based sauce that is really a delicious twist. I have made this at home several times. The sesame seeds in the recipe are optional. I have had the dish with and without them and it is great either way.

1 lb pork tenderloin
2 teaspoons canola oil
2 teaspoons sesame seeds, toasted, divided
1 -2 garlic clove, minced
1 tablespoon butter
1/3 cup milk
3 ounces cream cheese, cubed
1 tablespoon minced chives

Steps:

  • Cut pork into 1 inch slices and flatten to 1/2 thickness.
  • Place sliced pork on a greased/oiled baking sheet. Brush oil over top of sliced pork. Sprinkle sliced pork with 1 teaspoon sesame seeds (optional).
  • Broil 4-6 inches from the heat for 3-5 minutes; turn and sprinkle remaining sesame seeds (optional). Broil 3-5 minutes longer or until meat juices run clear.
  • Meanwhile, in a saucepan, saute garlic in butter for 1 minute. Stir in milk and cream cheese. Reduce heat; cook and stir until blended and smooth. Stir in chives. Serve over pork.
  • Great accompanied with buttered noodles or roasted potatoes.

1/2 cup reduced-sodium soy sauce
3 tablespoons olive oil
2 teaspoons minced fresh gingerroot
1 to 3 garlic cloves, minced
2 pork tenderloins (1 pound each)
1/2 cup honey
1/4 cup packed brown sugar
1/3 cup sesame seeds, toasted

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, ginger and garlic. Add pork; seal and turn to coat. Refrigerate for 4 hours or overnight, turning occasionally., Drain and discard marinade. Place pork on a greased rack in a foil-lined shallow roasting pan. Combine the honey and brown sugar; spoon over pork. Sprinkle with sesame seeds. , Bake, uncovered, at 425° for 20-25 minutes or until a thermometer reads 145°. Let meat stand for 5 minutes before slicing.

Grilled Gochujang Pork With Fresh Sesame Kimchi image

Pork shoulder is often prepared as a large roast, requiring hours of cooking until it's tender. But if you slice it thinly and pound it, the meat quickly absorbs this savory gochujang marinade and cooks up in no time. The spicy pork is balanced by a cool and crisp sesame kimchi, eaten fresh like a salad rather than fermented like traditional preparations. Baby bok choy stands in for the usual napa cabbage, and it's coated in a vibrant sauce of garlic, ginger, gochugaru, fish sauce and nutty sesame oil. Tuck any leftover pork and kimchi into sandwiches the next day, garnished with tomatoes and mayonnaise.

2 tablespoons gochugaru (Korean red chile flakes)
2 tablespoons distilled white vinegar
2 tablespoons toasted sesame oil
3 teaspoons grated garlic
2 teaspoons grated peeled ginger
1 teaspoon kosher salt (such as Diamond Crystal), plus more for seasoning
1/2 teaspoon fish sauce
1 tablespoon plus 1/2 teaspoon granulated sugar
1 1/2 pounds baby bok choy, quartered lengthwise
3 scallions, halved lengthwise and thinly sliced on the diagonal
2 tablespoons gochujang (Korean chile paste)
2 tablespoons neutral oil, such as safflower or canola
1 tablespoon low-sodium soy sauce
1 teaspoon ground black pepper, plus more for seasoning
2 pounds pork shoulder, thinly sliced crosswise and pounded 1/8-inch-thick (see Tip)
1 large white onion, peeled and sliced into 1/4-inch-thick rings
Steamed rice, for serving

Steps:

  • In a large bowl, combine the gochugaru, vinegar, sesame oil, 1 teaspoon of the garlic, 1 teaspoon of the ginger, 1 teaspoon salt, the fish sauce and 1/2 teaspoon of the sugar; mix well. Add bok choy and scallions, and toss with your hands, working the sauce in between and all over the leaves.
  • Heat a grill to medium-high or heat a stovetop griddle pan over medium-high. In a large bowl, combine the gochujang, neutral oil, soy sauce, 1 teaspoon black pepper and the remaining 2 teaspoons garlic, 1 teaspoon ginger and 1 tablespoon sugar; mix well. Very lightly season the pork with salt and pepper. Add pork and onion to the marinade and toss, gently massaging the marinade all over the meat (The meat does not need to rest in the marinade before it is grilled, but it can be marinated for up to 3 hours.)
  • Grill the pork and onion, in batches if necessary, until nicely charred and caramelized around the edges, and the pork is cooked through, about 3 minutes per side. Transfer to a serving platter.
  • Serve the grilled pork and onions with the fresh sesame kimchi and rice on the side.

1 boneless pork shoulder butt roast (4 pounds)
2 cups water
1/2 cup soy sauce
1/4 cup sesame seeds, toasted
1/4 cup molasses
1/4 cup cider or white wine vinegar
4 green onions, sliced
2 teaspoons garlic powder
1/4 teaspoon cayenne pepper
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut roast in half and place in a bowl. In a separate bowl or shallow dish, combine the water, soy sauce, sesame seeds, molasses, vinegar, onions, garlic powder and cayenne. Pour half over the roast. Turn to coat. Cover and refrigerate roast overnight. Cover and refrigerate remaining marinade. , Drain roast, discarding marinade. Place roast in a 5-qt. slow cooker; add the reserved marinade. Cover and cook on high for 1 hour. Reduce temperature to low; cook until meat is tender, 8-9 hours longer. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and cold water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with meat. If desired, sprinkle with additional sesame seeds.
