- Cut each potato lengthwise in half; cut each piece into 4 wedges. In a large shallow dish, combine the butter, oil and seasoned salt. Add potatoes; turn to coat. , Place potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 450° until tender, turning once, 20-25 minutes. If desired, sprinkle with parsley.

- Heat oven to 400°F. Slice potatoes in half lengthwise; cut each half into 1/4- to 1/2-inch-thick fries; pat dry with a paper towel. In a bowl, combine breadcrumbs with spices. In another bowl, whisk egg whites until foamy, about 1 minute; add fries to coat. Toss fries in spice mixture until evenly coated. Coat a baking sheet with cooking spray; arrange fries on sheet with space in between; spritz fries with cooking spray. Bake, turning once, until fries are golden and crispy, about 20 minutes.

- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
- Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. - Soak cut potatoes in cold water for 10 minutes. Drain and pat dry with paper towel then transfer to large bowl.
- Add remaining ingredients except salt, toss well to combine.
- Meanwhile, line a large baking sheet with foil. Place baking sheet in oven, preheat oven and baking sheet to 375 for 10 minutes.
- Remove preheated baking sheet from oven, pour fries onto baking sheet (being careful not to burn yourself baking sheet will be hot). Arrange fries in a single layer.
- Bake for 45 minutes, raise temperature to 425 and bake for another 10 minutes until golden and crispy.
- Remove from oven and immediately sprinkle with salt (this step is optional but I highly recommend it).
- Note: You can flip the fries half way through the cooking process if you'd like. But I don't feel it's necessary, so no flipping here!

- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. - Clean potatoes well and cut into sticks. You can peel the potatoes if you want but honestly, the crispy skins are the best part! Aim for ¼ to ½ thick sticks or anywhere in between. The more uniform your french fries, the more evenly they'll bake.
- Place cut potatoes in a bowl filled with hot water. Doesn't need to be boiled or anything, just really hot tap water will work. Let sit for 15 to 30 minutes to remove some of the starch.
- Remove potatoes from water and drain well. Dry potatoes thoroughly. My favorite method is with a salad spinner and really absorbent towels. The more moisture you remove, the crispier your oven baked french fries will be. (The salad spinner also works great for quickly drying freshly rinsed herbs!)
