SEAFOOD ARTICHOKE DIP
A creamy three-cheese blend with artichokes, and seafood. Served with tortilla chips and pico de gallo.

Steps:
- Preheat oven to 350*.
- Melt butter. Stir in onion, garlic and parsley.
- Cook till onion is tender.
- Add cream cheese, and colby jack cheese, and keep on low heat until creamy.
- Add other ingredients, except crab and shrimp, and mix well.
- Pour into large oven proof serving dish and fold in crab meat and baby shrimp.
- Top with colby jack cheese and sprinkle parmesan.
- Bake until bubbly and hot.
- Sprinkle with fresh parsley before serving.

Steps:
- In large saucepan, mix artichoke hearts, cheese, mayonnaise, bread crumbs, garlic and lemon juice. Cook over medium heat 4 to 5 minutes, stirring frequently, until thoroughly heated. Stir in chopped shrimp.
- Spoon dip into serving bowl. Garnish with lemon peel and whole shrimp. Serve warm with pita crackers or breadsticks.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium baking dish, mix together Cheddar cheese, Parmesan cheese, artichoke hearts, green onions, garlic salt, mayonnaise and shrimp. Sprinkle with paprika.
- Bake in the preheated oven 20 minutes, or until bubbly and lightly browned.

PIMENTO CHEESE SPREAD WITH SHRIMP
Pimento cheese is a southern thing. It is available in the dairy case almost everywhere here. Problem is, there are as many versions as there are cooks. Wait! I guess that isn't really a problem, but I just couldn't find one that suited our tastes perfectly until I started tweaking one my daughter liked a lot. The addition of shrimp makes it a bit more substantial and attractive to northerners, too! I recommend using Duke's mayo if you are lucky enough to be able get it. Cooking time is chilling time.

- Beat the cream cheese at medium speed with an electric mixer until creamy; add the cheddar cheese and continue beating until light and fluffy.

i came up with this variation after a weekend spent catching fresh scallops and wanting to use as many as possible before vacuum sealing them. If they are not available fresh in your area i would say you could probably sub shrimp and crab meat.

Steps:
- Chop artichokes or tear into pieces and add all the other ingredients.
- Put in a 1 quart casserole and bake in a 350-375 degree oven for about 20 minutes or until it is bubbly.
- Broil for a minute or so to lightly brown the top of the dish.
