Doesn't look like much, but tastes good! Super easy even for those of us who don't usually cook! My husband loves these, and the kids didn't mind the visible vegetables.

Steps:
- Grate zucchini and press out excess moisture. Drain.
- Crack eggs into a large nonstick pan over low heat. Gently break yolks and marble into whites. Add zucchini and salsa as eggs cook. Cook until eggs are almost set, about 5 minutes. Grate in Cheddar cheese; cook until melted, about 2 minutes more. Stir and season with salt and pepper.

- Stir the eggs and Parmesan cheese together in a bowl; set aside.

- Heat olive oil in a large pan over medium heat.
- Cut the zucchini into 1/4" thick circles. Add the zucchini to the warm pan and season with salt and lots of pepper. Stir frequently until zucchini is browned and cooked through.
- Move zucchini to one side and crack 2 eggs into the pan. Stir the eggs around to cook.
- Mix the cooked eggs together with the zucchini in the pan and finish with a sprinkle of Parmesan cheese.

A match made in heaven: scrambled eggs and zucchini. Note: this recipe is easily doubled, tripled, etc. Ratio of 1 to 2 zucchini per egg. Great served over rice. Variations: add one clove diced garlic to oil before adding zucchini. Or, add any of your favorite fresh herbs; they combine well with the eggs and zucchini. My favorite additions are oregano or rosemary. You could also add two teaspoons soy sauce to beaten eggs, or sprinkle over egg and zucchini when cooked.

Steps:
- Chop zucchini in half (so that it's semi-circle-shaped)and then slice thinly.
- Put onion in a small pan and cover with water. Bring to a simmer and cover for 10-15 minutes - until cooked.
- While the onions are cooking, steam zucchini. (If you prefer, you can saute them).
- Beat eggs and season with salt,pepper and mint.
- Drain onion and add it and the zucchini to the eggs. Mix well.
- Heat a nonstick pan (or use a tsp olive oil) over high heat. Pour the mixture into the pan and cook through in the same way you would scramble eggs - 'scrape' cooked eggs off the bottom and let uncooked liquid fall udnerneath.

- Heat 2 tbsp of oil in a pan over medium-high heat and add the onion and garlic, reducing the heat to medium and cook until they are soft and translucent.
- While the onion is cooking, add the other 2 tbsp of olive oil to another pan and heat over medium-high heat and add the cubed zucchini and cook for 10 minutes.
- Strain off the liquid and add the cooked zucchini to the onions and cook together for another 2-3 minutes.
- Add a little salt and pepper as well as the parsley, oregano and lemon juice to the vegetables.
- Then add a dash of salt to the beaten eggs and add them to the vegetables, cooking over medium heat while stirring and tossing the eggs and vegetables.
- The eggs will be broken up when then are done.

This recipe will make your taste buds smile, great combination of ingredients. This is my favorite way to eat zucchini. You will be surprised how good it tastes. Personally, I prefer not to use salt, as it's already in the butter. This is a good recipe for salt restricted diets.

- Cut the zucchini the way you prefer. You can keep them in round slices, cut them into matchsticks, or cut them in 4 as I did.
