Steps:
- In a mixing bowl, whisk the eggs, water, salt, and pepper.
- Let the butter melt in a large nonstick skillet over medium heat; Tilt pan around to coat the bottom of the skillet with melted butter.
- When butter foams, pour in egg mixture all at once.
- Let stand for 20 seconds.
- Cook, stirring, until light and fluffy but not too dry.
- Add in cheese and avocado; stir until blended and cheese is melted.
- Garnish with parsley; serve hot.

- In a medium bowl, whisk together the eggs and milk and season with salt and pepper.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onion and cook, stirring, until golden, about 5 minutes. Add the egg mixture and cook, stirring, until loosely set, about 3 minutes. Sprinkle the cheese over the eggs and stir to combine. Continue to cook, stirring, for 2 to 4 minutes depending on desired firmness of the eggs. Serve immediately.
SOFT SCRAMBLED EGGS WITH AVOCADO

- Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

- Crack two eggs in a bowl and whisk until combined.
- Heat a non-stick skillet over medium-low heat. Add the butter and melt slowly. Once melted, add the egg and allow it to sit in the pan for at least 20 seconds.
- Using a spatula, lift under the egg and fold it over twice. Allow to cook for 10 seconds. Add the avocado and cheese (if adding) and fold again. Cook for 10 seconds.
- Remove from heat and rest for a few seconds. Add flake salt and ground pepper. Serve while hot.

SUNNY'S PERFECT SCRAMBLED CHEESY EGGS

- In a large nonstick pan with sloped sides (even a wok shape works), melt the butter over medium-low heat, being careful to not brown the butter. If it begins to bubble, the heat is too high, so lower the heat to cook the eggs properly. (Slow and low like BBQ is the way to go with eggs.)
- Meanwhile, in a large bowl, add the eggs and 1 teaspoon cold water. Vigorously whisk until frothy and smooth. Swirl the pan around to coat the butter on the bottom and up the sides. Pour the eggs into the pan and let sit for a few seconds. When the eggs begin to lightly set on the bottom, use the whisk to gently beat the eggs, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking then resting the eggs for a few seconds until about 50 percent of the eggs are set and the rest are still wet. At this point, sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest alternately. Once the eggs are 75 percent done, add the cheese and from this moment, continue to whisk the eggs until done. This entire process from pouring in the eggs to them being finished should take 8 to 12 minutes; this isn't a race, only a journey to the best scrambled eggs ever. Remove from the heat and continue to scramble in the last seconds. Serve warm.

AVOCADO WITH SCRAMBLED EGGS
The combination of the cool creamy avocado dip with the warm and cheesy scrambled eggs is heaven! It might seem like a strange combo but you'll be so glad you tried it. I first had this at a restaurant 20+ years ago, loved it then and love it now. Great way to use up leftover avocado dip (real stuff, not the stuff sold at the grocery store, unless you like that) and your favorite cheese!

- Prepare avocado first by halving, pitting, and then gently peeling to remove skin (removing the skin is optional, however it's easier to eat and slice into it when removed). Scoop out some of the Avocado flesh, leaving a 1cm thick edge around to create a 'boat.' Season with salt and set aside.
- Fry the bacon pieces in a nonstick pan (add oil only if needed) until golden and crisp; transfer to a warm plate.
- Lightly whisk the eggs. Melt the butter over low-medium heat in the same nonstick pan. As it begins to bubble, add the eggs and stir them around until just starting to cook through (it takes about 3 minutes). Once they've set to an almost custard-like consistency, remove from heat and quickly add the cheese folding it through the eggs until the cheese has melted (the eggs will continue to set off the stove from the heat of the pan). Spoon into the prepared avocado boats.
