1 lb spinach
1 1/2 cups milk
1 teaspoon salt
1/8 teaspoon nutmeg, grated
1 cup flour
2 tablespoons unsalted butter, melted and cooled
2 eggs
1/2 teaspoon sugar
1 -2 tablespoon butter, softened
lingonberry, as much as desired (optional)

Steps:

  • Blanch spinach in boiling water, drain and squeeze completely dry.
  • Finely chop spinach.
  • In large mixing bowl, combine the milk, salt, nutmeg and flour and then stir in the melted butter (or combine these ingredients in electric blender at medium speed).
  • In another bowl, combine eggs and sugar and stir into batter.
  • Gradually add chopped spinach.
  • Coat bottom of heaty 10 to 12 inch skillet with 1 tsp soft butter using a pastry brush or paper towel.
  • Set skillet over medium heat until pan is very hot.
  • For each pancake, drop 2 tbsp of the batter onto the skillet and, with a spoon or spatula, spread it out evenly to form a 3-inch disk.
  • Cook pancakes, 3 or 4 at a time, for 2 to 3 minutes on each side, or until they have browned lightly.
  • Keep them hot on a warmed platter, covered loosely with aluminum foil.
  • Add more butter to skillet as it becomes necessary while cooking remaining pancakes.
  • Serve with lingonberries if desired.

SPINACH & RICOTTA PANCAKE BAKE

1 tbsp olive oil , plus a drizzle
3 garlic cloves , crushed
400g can chopped tomatoes
200g bag baby spinach
250g tub ricotta
grating of nutmeg
4 large pancakes or crêpes (see recipe, below)
225g ball mozzarella , drained and torn into small pieces
50g parmesan or vegetarian alternative, grated

Steps:

  • Heat the oil in a pan, add 2 garlic cloves and sizzle for a few seconds, then tip in the tomatoes. Season, and bubble for 10-15 mins until reduced to a thick sauce. Microwave the spinach for 2 mins to wilt, or by tipping into a colander and pouring over a kettle full of hot water. When cool enough to handle, squeeze out as much liquid as you can, then roughly chop.
  • Heat the oven to 220C/200C fan/gas 7. Mix together the ricotta, spinach, a generous grating of nutmeg, the remaining crushed garlic and some salt and pepper. Spread the tomato sauce over the base of a shallow baking dish about 20cm x 30cm. Divide the spinach mixture between the pancakes, spreading it over half the surface. Fold each pancake in half, then in half again to make a triangle. Lay the pancakes on top of the sauce, scatter with the mozzarella and parmesan. Drizzle with a little more oil and bake for 15-20 mins until bubbling.

Like a Dutch baby or german pancake baked in the oven in an iron skillet. Topped with fruit and powdered sugar or brown sugar. I found this recipe in the newspaper 25 years ago and make it often, my family loves it. I put it under the broiler to brown on top, this is the best part.

Steps:

  • Melt butter in oven proof skillet on top of stove.
  • Mix eggs, milk sugar, flour and salt with a whisk.
  • Pour into buttered skillet.
  • Bake in 425 degree oven for 20 minutes.

1 1/2 cups self rising flour, 200 g
1 1/2 cups milk

8 ounces cheese, cut 1-inch rectangles
3 tablespoons oil

Steps:

  • stir fry spinach 3 minutes ,(im using frozen so can skip this step ).
  • have to squeeze out as much moisture as you can with towel
  • mix in flour and eggs
  • heat oil.
  • make a heap press down.
  • fry 3 minutes.
  • flip
  • put slice of cheese on top
  • fry 5 minutes.

10 ounces fresh spinach, well washed, large stems removed or 1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon grated nutmeg
1 tablespoon sugar
1 1/2-2 cups buttermilk or 1 1/2-2 cups thin yogurt
2 eggs
2 tablespoons melted and cooled butter, plus unmelted butter for cooking
1 cup sour cream (optional)
1 tablespoon minced lemon peel (optional)

Steps:

  • Put spinach in a covered saucepan over medium heat, with just the water that clings to its leaves after washing; or plunge it into a pot of salted boiling water. Either way, cook it until it wilts, just a couple of minutes. Drain, cool, squeeze dry and chop.
  • Heat large skillet over medium-low heat while you make batter. Heat oven to 200 degrees. In a bowl, mix together dry ingredients. Place 1 1/2 cups buttermilk in another bowl. Beat eggs into it, then stir in the melted butter. Stir this into dry ingredients, adding a little more buttermilk if batter seems thick; stir in spinach.
  • Place a teaspoon or two of butter in pan. When butter foam subsides, ladle batter onto skillet, making any size pancakes you like. Adjust heat as necessary; first batch will require higher heat than subsequent batches. Add more butter to pan as necessary. Brown bottoms in 2 to 4 minutes. Flip only when pancakes are fully cooked on bottom; they won't hold together well until they are ready.
  • Cook until second side is lightly browned; as pancakes are done, put them on an ovenproof plate in oven for up to 15 minutes. Mix sour cream and lemon peel together and place a small dollop on each pancake.

125g self-raising flour
1 tsp baking powder
½ tbsp sugar (any kind)
2 eggs
1 tbsp melted butter, plus extra for frying
100ml milk
50g baby spinach leaves, washed and chopped
berries and maple syrup, to serve

Steps:

  • Put the flour, baking powder, sugar, eggs, butter, milk and spinach in a blender and whizz until you get a smooth, bright green batter.
  • Heat a little more butter in a non-stick frying pan over a medium heat and add small dollops to the pan, 2-3 at a time. Cook for 2 mins until the edges are set, and bubbles are rising to the surface, then flip and cook for 1-2 mins more. Keep warm while you cook the remaining batches.
  • Serve with berries and a drizzle of syrup to serve.
