For a supper to please a crowd, Pam Beerens of Evart, Michigan Layers Lasagna noodles with meat sauce and a tasty cottage cheese mixture to make this speedy version of a traditional favorite.

Steps:
- In a large bowl, combine the cottage cheese, egg, Parmesan cheese, parsley, oregano and basil. In a greased 13x9-in. baking dish, layer a third of the noodles, sauce, cottage cheese mixture and mozzarella. Repeat layers twice. , Cover and bake at 350° for 30 minutes; uncover and bake 15-20 minutes longer or until bubbly. Let stand for 15 minutes before cutting.

Steps:
- In a large skillet over medium heat brown the ground beef. Drain the grease. Add spaghetti sauce and simmer for 5 minutes.
- In a large bowl, mix together the cottage cheese, 2 cups of the mozzarella cheese, eggs, half of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
- To assemble, in the bottom of a 9x13 inch baking dish evenly spread 3/4 cup of the sauce mixture. Cover with 3 uncooked lasagna noodles, 1 3/4 cup of the cheese mixture, and 1/4 cup sauce. Repeat layers once more: top with 3 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Add 1/2 cup water to the edges of the pan. Cover with aluminum foil.
- Bake in a preheated 350 degree F(175 degrees C) oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.

- In a small bowl, combine the ricotta cheese, Parmesan cheese and egg; set aside. Spread 1/3 cup sauce in an 8x4-in. loaf pan coated with cooking spray. Top with one noodle. Spread 1/3 cup sauce to edges of noodle. Top with a third of reserved cheese mixture and 1/3 cup mozzarella cheese. Repeat layers twice. Top with remaining noodle and sauce., Cover and bake at 400° for 25 minutes. Uncover; sprinkle with remaining mozzarella cheese; bake 5-10 minutes longer or until cheese is melted. - Preheat oven to 350°. In a large skillet, cook and crumble beef with onion and garlic over medium-high heat until browned, 5-7 minutes; drain. Stir in herbs and tomato sauce. In a bowl, mix eggs, cottage cheese, Parmesan cheese, cheddar cheese and 1/2 cup mozzarella cheese., Spread 1 cup meat sauce into a greased 13x9-in. baking dish; layer with 4 noodles, cottage cheese mixture, an additional 4 noodles and half the remaining meat sauce. Repeat last 2 layers. Sprinkle with Italian seasoning and remaining mozzarella cheese., Cover with greased foil; bake until cheese is melted, 50-55 minutes. Let stand 10 minutes before serving. Freeze option: Cover and freeze unbaked lasagna. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake lasagna as directed until heated through and a thermometer inserted in center reads 165°, increasing time to 1 to 1-1/2 hours.

OUR PERFECTLY EASY LASAGNA
After trying several different recipes for lasagna, and combining the best of the best, I think I found the best combination yet. I will admit that this is not for the faint of heart; this is a very hearty dish. *At the suggestion of a fellow Zaarian, use regular lasagna noodles (not the no boil type).

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- In a large skillet brown the sausage and ground round; drain well.
- Add 1-1/2 jars spaghetti sauce, diced tomatoes, water, garlic, oregano, basil, parsley & 1/2 teaspoons black pepper.
- Stir to mix well; cover and simmer for 15 minutes.
- In large bowl combine ricotta cheese, 4 cups mozzarella cheese, parmesan cheese, eggs, remaining black pepper, and spinach. Mix well.
- In 10x11x3 lasagna pan, cover bottom with approximately 1 cup meat sauce.
- Place 4 uncooked lasagna noodles over sauce;cover with an additional 1 cup sauce.
- Spread 1/2 of the cheese mixture over the sauce.
- Place the 6 slices of Provolone over cheese mixture.
- Repeat layers of noodles, sauce, cheese, noodles and remaining sauce (including remaining jar).
- Cover with foil and bake for 1 hour.
- Remove foil; top with remaining 2 cups cheese.
- Bake for additional 15 minutes.
- Remove from oven and let stand 20 to 30 minutes before cutting.

Steps:
- Preheat oven to 350 degrees. Cook sausage in a heavy skillet over medium heat, stirring to break up meat, until no longer pink, about 8 minutes.
- Drain.
- Mix cooked sausage, 1-1/2 cups mozzarella cheese and ricotta cheese in medium bowl.
- Place about 1/2 cup spaghetti sauce in a 9 inch sqaure baking pan.
- Top with 3 noodles, then 1/3 of the sausage mixture.
- Repeat layers, ending with the spaghetti sauce. Cover with foil and bake for 35-40 minutes, until hot and bubbly.
- Sprinkle with remaining mozzarella cheese and return to oven.
- Bake, uncovered for 5-10 minutes until cheese is melted and slightly browned.

Meanwhile, in a Dutch oven, cook sausage, beef and onion over medium heat 8-10 minutes or until meat is no longer pink, breaking up meat into crumbles. Add garlic; cook 1 minute.
