MINI CHEESECAKES (GRAIN-FREE, GLUTEN-FREE)

Number Of Ingredients 11

1 1/4 cups (125 grams) blanched almond flour1
1/4 cup (50 grams) granulated sugar or raw sugar
pinch of salt
1 tablespoon lemon zest
3 tablespoons (42 grams) unsalted butter, melted and cooled slightly
1 pound (450 grams) cream cheese2
1/2 cup (100 grams) granulated sugar or raw sugar
1 teaspoon vanilla extract
pinch of salt
2 large (50 grams each, out of shell) eggs, room temperature
berries and powdered sugar, optional

Steps:

  • Preheat the oven to 350 °F (175 °C). Line a muffin pan with 12 muffin liners.
  • Prepare the crust. In a medium mixing bowl, stir together all the dry ingredients, then stir in the butter and mix until thoroughly combined.
  • Divide the mixture between the liners (18 grams or 3 1/2 teaspoons of mixture per liner) and lightly press down with the bottom of a shot glass.
  • Bake for 10 minutes or until very lightly browned.
  • Remove from the oven and cool for at least 10 minutes while preparing the filling.
  • Using an electric hand mixer or a stand mixer fitted with the beater attachment, beat the cream cheese and sugar at medium speed until light and creamy. Add the vanilla and salt and beat until combined. Beat in the eggs on low, one at a time, and just until well incorporated. Do not over mix!
  • Fill each liner about 2/3 full with the batter and bake for 10 minutes or until the centers of the cheesecakes don't jiggle when the pan is tapped. Open the oven door (at least 1 foot wide) and let the cheesecakes cool to room temperature - about 1 1/2 hours. For easiest removal, remove the paper liners now. They can also be removed after chilling, though a little more cheesecake may stick to the liners then.
  • Chill for at least 2 hours before serving. Decorate with berries and dust with powdered sugar, if desired. Refrigerate for up to 4 days.

½ cup dry Italian-seasoned bread crumbs (such as Progresso®)
⅓ cup finely grated Pecorino Romano cheese
¼ cup melted butter
3 (8 ounce) packages reduced-fat cream cheese (Neufchatel)
4 large eggs
1 ¼ cups shredded Gruyere cheese
½ cup fat-free half-and-half
⅓ cup diced ham
4 slices crisp cooked bacon, crumbled
2 tablespoons minced red bell pepper
3 green onions, chopped
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray 24 muffin tin cups with cooking spray or use paper liners.
  • Mix bread crumbs, Pecorino Romano cheese, and melted butter together in a small bowl. Spoon about 1 teaspoon mixture into each of the prepared muffin cups, pressing down.
  • Beat cream cheese with an electric mixer in a large bowl until fluffy. Beat in eggs one at a time until combined. Stir in Gruyere cheese, half-and-half, ham, bacon, bell pepper, green onions, salt, and pepper. Pour about 1/4 cup of the mixture into each muffin cup, filling each about 3/4 full.
  • Bake in the preheated oven until cheesecakes are firm to the touch and lightly browned, about 30 minutes. Remove from the oven and let cool in muffin tins for 10 minutes.

2 tablespoons sugar
2 tablespoons butter or margarine, melted
1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1/3 cup sugar
1 egg
2 containers (6 oz each) Yoplait® Original yogurt strawberry
2 teaspoons cornstarch
2 cups fresh berries (such as sliced strawberries, raspberries and/or blueberries)
1/4 cup semisweet chocolate chips

Steps:

  • Heat oven to 300°F. Line 12 regular-size muffin cups with paper baking cups.
  • In medium bowl, mix crust ingredients. Press about 1 tablespoon crust mixture into bottom of each lined muffin cup.
  • In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Add 1/3 cup sugar and the egg. Beat on medium speed about 2 minutes or until smooth. Add yogurt and cornstarch. Beat on low speed until smooth. Spoon about 3 tablespoons batter into each muffin cup.
  • Bake 20 to 25 minutes or until edges are firm and center is jiggly. Turn off oven; cool in oven 30 minutes with door closed. Remove from oven to cooling rack; cool at room temperature 30 minutes. Cover; refrigerate at least 3 hours. Remove from muffin pans.
  • Top cheesecakes with fresh fruit. In small microwavable bowl, microwave chocolate chips uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth. Drizzle over fruit.

These tarts should be frozen if you are packaging them as they are fragile. They should also be refrigerated if not eaten right away. A great partner for a well-balanced dry white wine. 3 ounces pretzels
1/4 cup butter, melted
8 ounces cream cheese, softened
2 eggs
2 tablespoons all-purpose flour
1 pinch fresh ground black pepper
1 cup sour cream
1/2 cup chopped smoked salmon
1 tablespoon chopped fresh dill
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
fresh dill sprig (to garnish)
5 tablespoons finely chopped sun-dried tomatoes
3 tablespoons chopped black olives
1 1/2 tablespoons chopped fresh basil
fresh basil leaf (to garnish)

Steps:

  • Preheat oven to 300ºF.
  • Spray 3 miniature muffin trays with nonstick cooking spray.
  • Process pretzels in food processor until very fine (consistency of dry bread crumbs). You should have ¾ cup crumbs. Mix with melted butter.
  • Press 1 into bottom of each muffin cup. Bake in centre of preheated oven for 6 to 8 minutes or until set.
  • Beat cream cheese to blend.
  • Add eggs, 1 at a time, beating until smooth. Beat in flour, pepper and sour cream.
  • Divide mixture into 2 bowls.
  • Stir ingredients for salmon filling into 1 bowl and Sun-dried Tomato and Olive filling into the other. Mix well. Spoon about 1 tbsp filling over each tart base. Bake 15 to 20 minutes or just until filling is set. Cool to room temperature on wire rack, then cover and refrigerate at least 2 hours or up to 24 hours. Run knife around edge of each cheesecake to loosen. Garnish with fresh dill or basil leaf before serving.

This recipe is my sister's adaptation of a sweet crustless cheesecake by famous German chef Tim Mälzer. We cant have sugar at the moment, so she decided to make a savoury version. We both loved it, so hopefully you will, too! :)

250 g low-fat Quark cheese (may sub ricotta cheese)
70 g cream cheese with chives
55 g goat cheese (cream cheese)
2 eggs
2 tablespoons ground flax seeds
1/8 teaspoon garlic powder
1/2 green bell pepper, diced finely
4 sun-dried tomatoes, chopped

Steps:

  • In a big bowl cream together the quark, cream cheese, goats cheese and eggs until well combined and creamy.
  • Stir in the ground flax seeds and garlic powder.
  • Fold in chopped bell pepper and sun-dried tomatoes.
  • Fill into greased muffin tins (or use silicone ones).
  • Bake in the preheated oven at 175°C/350°F on the second lowest rack for 25-35 minutes or until cheesecakes have set.
