Categories     appetizer

Time 41m

Yield 2 entree servings or 6 appetiz

Number Of Ingredients 8

3 tablespoons butter
1 large yellow cooking onion, diced
1/4 cup cornmeal, or flour
1 (4-inch) ball prepared dough, let rise to room temperature
2 tablespoons olive oil
3 medium tomatoes, thinly sliced
4 ounces Stilton, crumbled
Salt and freshly ground pepper

Steps:

  • Caramelize onion by melting 3 tablespoons butter in a saute pan over medium heat. Add onion. Cook for 15to 20 minutes, or until onion is a deep brown, stirring occasionally. Remove from heat and reserve.
  • Sprinkle your rolling surface with a handful of cornmeal or flour. Place dough in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • If you are grilling on a charcoal grill, set coals on one side of the grill.
  • Place dough directly on the cooking grate over medium heat for 1 to 3 minutes, until the crust is well marked and browned. Flip dough and spread tomato slices evenly over crust. Sprinkle onion over top, then sprinkle cheese over the top. Move to indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.
  • Remove from grill, season with salt and pepper and slice. Serve immediately

GRILLED PULLED PORK PIZZA

Grilled Pulled Pork Pizza image

Here's a recipe from About.com that is a real winner. Shred your leftover pork roast and use it to top this wonderful pizza. You can use your own recipe for pizza dough if you prefer. I have made this with a prepared Boboli crust as I am not a griller (using less of the topping ingredients) and we enjoyed it that way. I did not bake the meat on the crust so as not to dry it out, but added it afterwards with toppings and returned it to oven to melt the cheese. We really liked this.

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 30

1/4 cup olive oil
3 lbs sweet onions, sliced thin
8 garlic cloves, pressed
2 tablespoons fresh thyme or 2 teaspoons dried thyme, crushed
1 tablespoon fresh oregano or 1 teaspoon dried oregano, crushed
2 bay leaves
salt
pepper
8 ounces eggplants, peeled, diced into 1/2 inch cubes
2 medium roma tomatoes, peeled and diced
1 tablespoon fresh basil or 1 teaspoon dried basil, crushed
1 tablespoon olive oil
1 tablespoon capers, drained and rinsed
pepper
1 cup warm water
1 tablespoon yeast
1/8 teaspoon sugar
2 tablespoons olive oil
1/2 teaspoon salt
1 1/2 cups whole wheat pastry flour
1 1/2 cups all-purpose flour
4 tablespoons olive oil, divided
1 teaspoon fresh marjoram or 1/4 teaspoon dried marjoram
1 teaspoon fresh basil or 1/4 teaspoon dried basil
1 teaspoon fresh oregano or 1/4 teaspoon dried oregano
1 cup feta cheese, crumbled
2 red bell peppers, roasted, peeled and cut into thin strips
1/3 cup kalamata olive, pitted, sliced in half lengthwise
1/2 cup parmigiano-reggiano cheese, grated
red pepper flakes

Steps:

  • To caramelize the onions, heat the olive oil in a heavy skillet, add onions, garlic and herbs. Cook over low heat for 45 minutes or until onions are soft and most of the moisture has evaporated. Discard the bay leaf; add salt and pepper to taste.
  • To roast the bell peppers, core, cut in half and place on broiler pan skin side up; preheat broiler to high and place peppers under broiler for 10 to 15 minutes or until skin blackens. With a pair of tongs, place the cooked peppers in a paper bag, fold top closed, and cool for 10 minutes. When cool enough to handle remove skin and slice into thin strips.
  • To roast the eggplant and tomatoes, preheat oven to 400 degrees. Spray an ovenproof pan with non-stick cooking spray; add the eggplant, tomatoes, basil, capers and drizzle with olive oil, place in oven and cook for 30 minutes, stirring once or twice. When eggplant is cooked, add pepper to taste.
  • For the toppings, finely mince the fresh herbs or crush the dried herbs; add the herbs to 3 tablespoons olive oil and warm until herbs are fragrant. Set aside while preparing crust.
  • In a small bowl, sprinkle the yeast and sugar over 1 cup warm water; stir to mix. Allow to stand for 5 minutes or until bubbly. In a medium size bowl, combine the flours and measure 1 1/2 cups; set aside. Add the salt to the remaining 1 1/2 cups flour; stir in yeast and oil. Gradually add the reserved flour until dough is soft but not sticky. Knead until smooth; place in a bowl that has been lightly oiled with olive oil. Allow to rise for 20 minutes or until double in size.
  • While assembling the pizza, preheat oven to 475 degrees; oil a large pizza pan (15 inch) with olive oil. Turn dough onto a lightly floured surface and knead for 8 to 10 times; roll into desired size, stretch dough to sides of pan forming crust around the edges.
  • Brush dough within 1/4 inch of crust with olive oil and herb mixture, top with crumbled feta cheese, onions, eggplant mixture, bell peppers and olives. Sprinkle parmesan cheese over all and lightly drizzle with 1 tablespoon olive oil. Bake in preheated oven for 15 to 20 minutes or until crust is lightly brown.
  • Serve immediately with additional parmesan cheese and red pepper flakes.
  • Pleasse Note: Do not put hot toppings on pizza crust. Toppings should be at least room temperature.

  • If using dough stored in the refrigerator, place on a lightly floured surface, gently press into a 5-inch flat circle and cover with plastic wrap about two to three hours before you plan to bake the pizza. However, if you made your dough right away and it's already risen and come to room temperature, you're ready to skip straight to step 2.
  • About 45 minutes to an hour before baking, place a pizza stone in the cold oven and turn the heat to 500 degrees. If you don’t have a pizza stone, you can use a large baking sheet and preheat for 30 minutes, though a pizza stone is recommended for best results.
  • While the pizza stone heats, melt butter in a large skillet. Add onion slices with a pinch of salt, pepper and sugar and stir to coat the onion slices in butter. Cook until the onion slices caramelize and turn brown. Stir only occasionally during the process. Set aside once browned.
  • Hand stretch the dough using the bed of your fingers rather than your finger tips to pat the dough outward toward the edge. Don’t pat in the center of the dough, or you’ll get limp pizza. Really focus on staying outside of the center and work toward the edge. After you work the dough, grab the edge of the pizza and lift it in the air. Allow it to quickly hang down and keep rotating the pizza crust through your fingers to allow the rest of the pizza to have a chance to hang like you’re turning the steering wheel of a car. Do not use a rolling pin to shape and flatten. The dough is stretched when it’s 10 inches in diameter. If any holes form, pinch the dough back together.
