BACON CHEDDAR EGG CASSEROLE
Loaded with green onions and cheddar cheese this egg casserole with bacon is a great recipe to have on hand for holiday brunches!

- Preheat oven to 375F. Spray a 9×9-inch square baking pan or casserole dish with cooking spray and even drizzle with 1/4 cup melted butter; set aside.
- To a medium bowl, add the pancake mix, 1/2 cup milk, 1 egg, remaining 1/4 cup melted butter, and whisk until smooth, some tiny lumps are okay. Pour over the melted butter in pan; set aside.
- Evenly sprinkle with 1 cup of cheese.

My parents always served this egg casserole for special occasion breakfasts, and it remains one of my favorites. In the summer, they often served it along with tomatoes from the garden or fresh fruit and in the winter we often served it with hearty bread or grits and juice. Delicious!

- Preheat oven to 350 degrees.
- Sprinkle cheese in 9x9 inch square baking dish.
- Dot with butter.
- Mix cream, mustard, salt, and pepper, and pour half of the mixture over the cheese.
- Pour eggs on top.
- Pour remaining cream mixture over the eggs.
- Bake 25 minutes.
- Serve immediately.

- In a large bowl, mix the eggs, heavy cream, 1/2 cup cheddar, salt and pepper together. Then pour the mixture in a greased 9x13" casserole dish.
- Drop the cubes of cream cheese evenly throughout the egg mixture.
- Bake for 35 minutes, then sprinkle the remaining cheddar cheese and bacon over the top of the casserole and then return to finish baking 10-20 minutes or until the center is just set and springs back when touched.

- Preheat oven to 350 degrees F. Spray bottom of 9x13 baking dish with non-stick cooking spray.
- Brown and crumble sausage in a frying pan until thoroughly cooked. Drain. Place in bottom of 13x9 baking dish, lightly pressing into place.
- Saute red and green peppers and onion until tender. Layer vegetable mixture then cheese on top of the sausage in baking dish.
- In a bowl, combine eggs, milk, garlic powder, and pepper. Pour egg mixture over contents of baking dish.
- Bake for 30-35 minutes. Cool slightly, cut into wedges.
