Try radishes in a new way--sautéed in butter their flavor is mellowed.

1 tablespoon Land O Lakes® Butter
1 bunch radishes, stems removed, thinly sliced
1/2 teaspoon kosher coarse grain salt or sea salt
1/2 teaspoon lemon juice
1/8 teaspoon white pepper
1 tablespoon chopped fresh parsley leaves

Steps:

  • Melt butter in 10-inch skillet over medium heat until sizzling; add radishes, salt, lemon juice and white pepper. Continue cooking, stirring occasionally, 4-6 minutes or until radishes are crisply tender.
  • Add parsley; toss lightly.

  • Cook 2 bunches trimmed and halved radishes and 1 sliced red onion in a skillet with olive oil over medium-high heat, stirring, until tender, about 8 minutes; season with salt and pepper. Stir in 5 ounces baby spinach, the juice of 1/2 lemon and a pinch each of salt and pepper; cook until wilted, about 1 minute.

1 pound red, unblemished radishes closely trimmed of stems and leaves (about 3 1/2 cups)
2 tablespoons of butter
Salt to taste, if desired
Freshly ground pepper to taste
1/2 cup finely chopped scallions or green onions

Steps:

  • Weigh the radishes after trimming off their stems and leaves as well as the thin sprout from the top.
  • Cut the radishes into thin slices.
  • Heat the butter in a skillet, preferably of the nonstick variety and add the sliced radishes. Sprinkle with salt and pepper. Cook, tossing and stirring so that the radish slices cook evenly, about 3 minutes.
  • Add the scallions or green onions. Continue cooking, stirring and tossing, about 2 minutes longer.

2 bunches small radishes, scrubbed
2 tablespoons unsalted butter
Coarse sea salt and freshly ground pepper

Steps:

  • Trim the largest leaves and most of the stems from the radishes, leaving the smallest leaves and approximately 1/2-inch stems. Cut the radishes in half lengthwise.
  • Melt butter in a large saute pan over medium-high heat. Add radishes, and cook, shaking pan occasionally, until just tender and golden brown, about 7 minutes. Transfer to a serving dish and season with salt and pepper. Serve warm.

Steps:

  • In a 6-qt. stockpot, heat butter over medium heat. Add radishes; cook and stir 2 minutes. Stir in wine; increase heat to medium-high. Cook, uncovered, until radishes are crisp-tender, 8-10 minutes. Stir in tarragon, salt and pepper.

It seems like such a waste to throw away or compost beautiful greens. Radish greens have a slightly peppery taste similar to arugula. They are best fresh from the farmers' market.

1 tablespoon extra-virgin olive oil
1 ½ teaspoons butter
1 clove garlic, minced
4 medium purple radishes, sliced
1 bunch radish greens, washed and chopped
¼ cup crumbled feta cheese

Steps:

  • Heat olive oil and butter in a saucepan over medium-low heat until butter melts. Add garlic and sauté until softened and fragrant, about 1 minute. Add radish slices and sauté to bring out their sweetness, 1 to 2 minutes. Add greens and sauté until wilted, 1 to 2 minutes.
  • Remove from the heat and stir in feta cheese.

4 bunches radishes with greens attached (2 lb)
2 1/2 tablespoons unsalted butter
1 teaspoon salt (preferably sea salt)
1 garlic clove, minced
3 tablespoons chopped fresh chives

Steps:

  • Cut greens from radishes and coarsely chop. Trim radishes and cut lengthwise into 1/2-inch wedges.
  • Heat 1 1/2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté radish wedges with salt, stirring, until crisp-tender, about 12 minutes. Transfer to a platter and keep warm, loosely covered.
  • Sauté garlic in remaining tablespoon butter in skillet over moderately high heat, stirring, until fragrant, about 30 seconds. Add greens and sauté, stirring, until wilted, about 1 minute.
  • Return radish wedges to skillet and stir in chives.

  • Twist the leaves off the radishes and wash the radishes well. Thinly slice 3 radishes into rounds and set them aside. Then cut the remaining radishes in half lengthwise. Wash the leaves well, place them in a large bowl and set them aside.
  • Heat half the olive oil in a cast iron or non-stick frying pan over medium high heat. Add half the radishes, cut side down, to the pan. Sauté them for 3-4 minutes, or until the bottoms are brown. Remove them from the pan and place them in the bowl with the radish greens. Add the remaining olive oil to the pan and sauté the rest of the radishes.
  • Add the butter, honey, white balsamic and sea salt to the same pan you cooked the radishes in and bring it to a boil over high heat. Cook for 1 minute, or until the glaze thickens. Pour the glaze over the sautéed radishes and radish greens and toss well to coat.
  • Transfer the sautéed radishes and greens to a serving plate, scatter the thinly sliced radishes around the plate and sprinkle the top with a little extra sea salt. *Flaky sea salt works great to finish this dish.
