Citrus Pork with Egg Noodles image

Citrus Pork with Egg Noodles is quick and easy, perfect for a midweek dinner! With strips of pork loin sautéed with cumin and garlic, served in a citrusy sauce with carrots and egg noodles.

1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 pound boneless pork loin, cut into 2x1/2-inch strips
2 cloves garlic, minced
1 tablespoon extra virgin olive oil
1 cup chicken broth
1/2 cup orange juice
2 tablespoons cider vinegar
1 teaspoon soy sauce
1 1/2 teaspoons brown sugar
2 medium carrots, sliced into thin rounds (about one heaping cup)
1 tablespoon cornstarch
1/2 cup green onions, sliced
1/2 teaspoon fresh ginger, grated
1/2 pound egg noodles, cooked, drained

Steps:

  • Add pasta to the boiling water, cook until al dente
  • Cook the carrots in the broth mixture: While the pasta is cooking, add the carrots to the skillet you used to cook the pork. Pour all but the reserved broth mixture over the carrots. Bring to a boil and reduce the heat to medium. Cook 7-8 minutes.
  • Add the green onions and ginger: Bring everything to a boil and simmer for 1 more minute.

I based the recipe for these noodles on a similar dish I found in a magazine. I changed a few things around and my husband and I loved it. It's just as good when the pork is replaced with seafood.-Jennifer Enzer of Manchester, Michigan

6 ounces uncooked angel hair pasta
3 tablespoons hoisin sauce
2 tablespoons reduced-sodium soy sauce
2 teaspoons sesame oil
1 pork tenderloin (1 pound), halved and thinly sliced
3 teaspoons canola oil, divided
3/4 cup julienned sweet red pepper
3/4 cup halved fresh snow peas
1/2 cup sliced onion
1 cup sliced cabbage
1/4 cup minced fresh cilantro

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small bowl, combine the hoisin sauce, soy sauce and sesame oil; set aside. , In a large nonstick skillet or wok, stir-fry pork in 2 teaspoons canola oil for 3 minutes or until no longer pink. Remove and keep warm. In the same skillet, stir-fry the red pepper, peas and onion in remaining oil for 3 minutes. Add cabbage; stir-fry 2 minutes longer or until vegetables are crisp-tender. , Stir reserved hoisin sauce mixture and stir into skillet. Return pork to the pan; heat through. Drain pasta and add to skillet; toss to coat. Sprinkle each serving with 1 tablespoon cilantro.

3/4 pound pork loin, trimmed of gristle and cut into 1-inch strips
1 1/2 teaspoon minced garlic
2 tablespoons soy sauce
1 tablespoon dry sherry
1 teaspoon cornstarch
2 tablespoons sesame oil
2 tablespoons peanut oil
2 scallions, minced
2 teaspoons minced fresh ginger
1 tablespoon hoisin sauce
1/2 pound fresh Chinese egg noodles (or substitute Italian linguine)
8 asparagus spears, chopped in 1-inch pieces
1/2 pound spinach leaves, washed, with stalks trimmed
1/2 cup fresh orange juice

Steps:

  • Marinate strips of pork in a mixture of half a teaspoon garlic, one tablespoon soy sauce, sherry, cornstarch and one tablespoon sesame oil for one hour. Heat four quarts salted water for noodles.
  • Heat peanut oil in wok or heavy frying pan. Stir-fry scallions, ginger and remaining garlic two to three minutes. Meanwhile, put noodles into boiling water, cook three minutes or until al dente. Drain and place in heated serving bowl with tablespoon of sesame oil to prevent sticking.
  • Add pork to scallions and ginger and stir-fry until lightly browned (two to three minutes). Add asparagus and spinach and cook until spinach wilts.
  • Add orange juice, deglaze cooking juices. Stir in hoisin sauce and remaining soy sauce. Put pork mixture on top of noodles and serve.

Another meal that I think is quick and tasty, and better than take-aways. Prep time includes marinating time.

500 g pork shoulder, thinly sliced
3 tablespoons soy sauce
3 tablespoons sake
2 teaspoons grated fresh ginger
2 garlic cloves, crushed
2 tablespoons vegetable oil

Steps:

  • Cut the pork into 2 inch pieces.
  • Combine soy, sake, ginger and garlic.
  • Marinate the meat in this mixture (for no more than 15 minutes or it will toughen).
  • Heat the oil in a large frypan, and saute the drained pork over a high heat until slightly brown; then turn and saute at medium heat.
  • Add the reserved marinade, and cook for 1-2 minutes.
  • Serve with rice, and sauteed Asian vegetables.
  • *Wealso use this marinade for chicken for the BBQ.

2 carrots (peeled and sliced)
2 celery ribs (chopped)
1 leek (split,wash and chopped- white and light green part)
10 ounces mild Rotel Tomatoes
14 1/2 ounces plain diced tomatoes
4 ounces button mushrooms
2 lbs pork tenderloin (slice into 1 inch slices)
1 cup red wine
2 tablespoons Worcestershire sauce
1 tablespoon Chinese five spice powder
salt and pepper
16 ounces egg noodles

Steps:

  • Add carrots,celery,leek,rotel tomatoes,diced tomatoes,mushrooms,pork tenderloin,red wine,worcestershire sauce and chinese five spice powder to crock pot.
  • Stir.
  • Cook on high for 4 hours or until pork tenderloin is tender, on low setting appox 6-7 hours.
  • Cook egg noodles according to package directions.
  • Serve pork and vegetables over egg noodles.
