4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

They also have cooked their baked beans in a cast iron pot or ceramic pot, plus they made it over night in a wood burning stove. This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. Slow baked in a cast iron pot to make these baked beans taste so delicious. I will share with you more delicious meals that will make you feel so good. Traditional Newfoundland Peas Soup & Doughboys Peas soup and doughboys with pieces of picnic ham, salt beef and lots of fresh vegetables. Onion
Cold Water
Cider vinegar
Brown sugar
Yellow Mustard
Molasses
Ketchup
Black pepper
Sea salt
Fat pork or bacon
White Pea beans

Steps:

  • Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.

1 (15-ounce) can each of whatever different kinds of beans you can lay your hands on.
1 large onion, diced
1/2 cup molasses
salt, pepper, garlic powder, dry mustard

  • Often times recipes are born of necessity or thrown together out of what ever the cook can find left in the grub box. So was born this recipe in a camp on "No Name Creek" the fall of 1991. Right now you're thinking this "No Name Creek" doesn't exist and I'm just tryin' to protect a honey hole for elk hunting. Wrong! Look real close at a map of Chamberlain Basin in Central Idaho, and you'll find the real "No Name Creek" about a thirty minute horseback ride from Chamberlain Airstrip.I'd been assigned a two week hitch in Chamberlain as part of an emphasized enforcement effort in the back country. I, along with several others, rode and flew into Chamberlain to relieve guys who'd been in since before the back country elk hunt opened. Don Wright drew the duty of camp cook for the first crew and I drew KP for the second group. Our tours over-lapped a day so Don and I combined our talents for dinner. To this day neither of us remembers the main course that night. Since my grub order wouldn't arrive till the next day, we made do with what Don had on hand.Looking in the grub box it appeared our choices for a vegetable included kidney beans, black eyed peas, black beans, navy beans, pinto beans, or pork and beans. With not enough of any one kind to go around we had no choice but to throw them all together. Looking at the ingredient list, you'll see that lacking a real kitchen sink to throw in, we just cleaned out the grub box. Since then, I've served this recipe to several hundred people, but I don't think it ever tasted quite as good as that first night. I chalk it up to ambiance. Folks talk about how the proper ambiance will make a good meal great. Only pilgrims wouldn't classify the smell of wood smoke and dinner music provided by horse bells as ambiance! Navy beans, molasses, and maple syrup combine to make this classic dish at home.

1 cup dried navy beans
4 cups water
¼ cup ketchup
¼ cup maple syrup
2 tablespoons brown sugar
2 tablespoons molasses
1 teaspoon Worcestershire sauce
½ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon chili powder
1 small onion, chopped

Steps:

  • Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Or, bring the beans and water to a boil in a large pot over high heat. Once boiling, turn off the heat, cover, and let stand 1 hour. Drain and rinse before using.
  • Place the beans in a large saucepan with 4 cups of water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 1 hour.
  • Preheat an oven to 375 degrees F (190 degrees C). Stir the ketchup, maple syrup, brown sugar, molasses, Worcestershire sauce, salt, pepper, and chili powder together in a small bowl; set aside.
  • Once the beans have simmered for 1 hour, drain, and reserve the cooking liquid. Pour the beans into a 1 1/2 quart casserole dish and stir in the chopped onion and the molasses sauce. Stir in enough of the reserved cooking liquid so the sauce covers the beans by 1/4 inch.
  • Cover, and bake in the preheated oven for 10 minutes, then reduce the heat to 200 degrees F (95 degrees C), and cook 6 hours longer. Stir the beans after they have cooked for 3 hours. Once the beans are tender and the sauce has reduced and is sticky, remove from the oven, stir, recover, and allow to stand 15 minutes before serving.
