CORNBREAD SAUSAGE CASSEROLE
All your breakfast favorites are baked together between layers of cornbread!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
- In a medium bowl, mix corn bread mix, cream style corn and water.
- Cover the bottom of the prepared baking dish with about 1/2 inch of the corn bread mixture. Layer mixture with sausage, followed by onion and jalapeno. Cover with cheese. Top with remaining corn bread mixture, using only as much as will fit in the baking dish.
- Cook 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Allow to cool slightly before serving.

- Brown sausage and onion. Drain well.
- In medium size bowl combine eggs, sugar, milk, oil, corn and cheese. Stir in cornmeal mix.
- Pour one-half of mixture into a greased 9 x 9 inch baking dish. Sprinkle sausage and onions over mixture. Pour remaining mixture over top.
- Bake in a 350 degree oven for 35 to 40 minutes. May sprinkle small amount of cheese over top during last 3-5 minutes of baking.
UPSIDE-DOWN SAUSAGE-APPLE CORNBREAD
I got this recipe out of a local newspaper about 12 years ago. It makes a nice breakfast or brunch dish.

Steps:
- Grease bottom and sides of a 8" or 9" square baking pan.
- Brown the sausages in a medium skillet over moderately high heat, rotating them until browned and cooked through.
- Remove the sausage and discard all but 2 tablespoons of the drippings.
- Add butter and brown sugar to the pan.
- Heat, stirring until sugar is melted.
- Add apples and saute them over moderate heat, turning occasionally, until soft (about 10 min).
- Arrange sausages in rows across the prepared pan.
- Insert the apple slices, round side down, between the sausages, wedging them in tightly.
- Pour over juices from the skillet (the pan can be covered and refrigerated overnight at this point, if desired).
- Bring to room temperature before proceeding.
- Preheat oven to 400°F
- To make cornbread, stir together the flour, cornmeal, brown sugar, baking powder, and salt in a medium bowl.
- Add the egg, melted butter and milk.
- Stir with a wooden spoon until well combined.
- Pour the batter over the sausage and apples, smoothing the top to cover well.
- Bake for 25 minutes or until cake tester inserted in middle comes out clean.
- Remove from oven.
- Immediately invert onto a serving dish.
- Cut into squares and serve.

- Stir in the flour, then add the next four ingredients.
- Remove from heat.
- Stir in cheese cubes and olives.

UPSIDE-DOWN PEACH CORNBREAD CAKE

- Preheat the oven to 350 degrees F.
- Melt 3 tablespoons butter in a 10-inch cast-iron skillet over medium heat. Stir in the brown sugar along with the cinnamon and 1/2 teaspoon salt, then cook, stirring, until the sugar is melted and begins to bubble, about 10 minutes. Remove the skillet from the heat and let it cool slightly.
- Arrange the peaches in the bottom of the skillet, fanning out in a circular pattern. Set aside.
- Whisk together the cornmeal, flour, baking powder and remaining 1/2 teaspoon salt in a small bowl. In a stand mixer fitted with the paddle attachment or using a hand mixer, beat the remaining 9 tablespoons butter together with the granulated sugar on high speed until light and fluffy. Add the eggs, one at a time, beating after each addition. On low speed, add half the dry ingredients, half the milk, the remaining dry ingredients, then the remaining milk. Increase the speed to medium and beat just until everything is well mixed, scraping down the bowl once. (Use a spatula to be sure there are no dry ingredients stuck to the bottom of the bowl.) Drop the batter in large dollops over the peaches in the skillet, then use an offset spatula to gently smooth it out, being careful not to disturb the peaches.
- Bake until the top is golden brown and puffed and a tester inserted in the center comes out clean, 40 to 45 minutes. Let cool for 20 minutes. While the cake is still warm, run a butter knife around the outside, then invert onto a serving platter. Serve warm.

- Preheat oven to 400 degrees F.
- In a large bowl, mix together flour, cornmeal, heavy cream, eggs, butter, brown sugar, baking powder and salt.
- In the cast iron skillet over medium-high heat, add sugar and butter and let melt. When melted, remove from heat and add remaining ingredients. Be sure to place maraschino cherries evenly throughout. Pour in batter and smooth top with a spatula. Bake 25 minutes, until cornbread is golden and a toothpick comes out clean.
- To serve: place a platter over skillet and invert cake. It should slide out easily. Slice into wedges and serve warm with whipped cream.

- Preheat oven to 375°F.
- In 10-inch ovenproof, nonstick skillet, combine cranberries, raspberry spread, 1 tablespoon of brown sugar, orange zest, and orange juice. Bring to a boil over medium-low heat, reduce to a simmer, and cook, stirring frequently, 7 minutes or until berries have popped and sauce is thick.
- Meanwhile, in a large bowl, stir together cornmeal, flour, baking powder, baking soda, salt, and remaining 3 tablespoons brown sugar. In measuring cup, combine buttermilk, oil, and egg. Make well in center of dry ingredients, pour in buttermilk mixture and stir to combine.
- Pour cornmeal mixture over cranberries. Bake 20 minutes or until knife inserted in center comes out clean. Cool 5 minutes in pan, then invert onto plate, scraping any berry mixture that sticks to the pan on top of cornbread. Serve warm or at room temperature.
