Tuna Caesar Salad image

By replacing most of the oil in a classic Caesar salad dressing with a purée of canned tuna we decrease the fat and increase the protein by eight times. The resulting dressing can makeover a simple green salad into a entrée that delivers protein, and transforms a popular creamy vinaigrette into a versatile cooking sauce.

1 can about 6 ounces light chunk tuna in water, drained
1 large garlic clove, halved Juice of
1 lemon 1/4 cup red wine vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon freshly grated parmesan cheese kosher salt, to taste*
1/4 teaspoon fresh ground black pepper
1/4 cup nonfat milk
1 gallon romaine leaf, that have been torn into bite-size pieces
1/2 cup diced red onion
1 1/2 cups croutons

Steps:

  • To make the dressing, purée all of the dressing ingredients in a blender or food processor until smooth. Toss the romaine, red onion and dressing in a large salad bowl. Add the croutons and toss; serve immediately.

Here's a distinctive dinner made with Betty Crocker® Suddenly Salad® Caesar salad mix. Packed with tuna, peas and Parmesan cheese, this pasta salad makes a wonderful meal.

1 box (7.25 oz) Betty Crocker™ Suddenly Salad® Caesar salad mix
1 package (9 oz) frozen baby sweet peas
1/4 cup olive oil
1/4 cup mayonnaise or salad dressing
2 tablespoons milk
1 medium stalk celery, sliced (1/2 cup)
4 medium green onions, thinly sliced (1/4 cup)
1 can (12 oz) albacore tuna, drained
1/4 cup shredded Parmesan cheese (1 oz)
12 leaves romaine lettuce
1 lemon, cut into 8 wedges

Steps:

  • Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add Pasta. Gently boil, uncovered, 12 minutes , stirring occasionally and adding peas during last 2 minutes of cooking. Drain. Rinse with cold water to cool; drain well.
  • Meanwhile, in large bowl, combine Seasoning and Crouton Blend, oil, mayonnaise and milk. Stir in celery and green onions. Add tuna and cheese; mix well. Stir in cooked pasta.
  • Cover; refrigerate about 1 hour or until chilled. Place 3 leaves lettuce on each of 4 plates. Divide salad evenly over lettuce; top each with 2 lemon wedges.

TUNA CAESAR WITH ANCHOVIES & CAVOLO NERO

A fresh twist on the classic Caesar salad with thick tuna steaks, this dish is rich in vitamin C, omega-3 and calcium

thick slice Italian bread (about 85g/3oz), cubed
3 tsp extra virgin olive oil , plus a drizzle to serve (optional)
1 lemon , zested and halved
2 tuna steaks (about 200g/7oz each)
2 anchovy fillets packed in oil, roughly chopped
1 garlic clove , crushed
2 heaped tbsp mayonnaise
4 tbsp buttermilk
1 tsp Dijon mustard
few drops Worcestershire sauce
25g parmesan , finely grated, plus extra shavings to serve
175g cavolo nero , central ribs removed, torn into bite-sized pieces

Steps:

  • Heat oven to 180C/160C fan/gas 4. Toss the bread with 1 tsp oil, season, then scatter over a baking sheet. Bake for 10-12 mins or until crisped and golden.
  • Rub 1 tsp oil, half the lemon zest, some salt and plenty of black pepper over the tuna steaks. Set aside.
  • Gently heat the remaining oil in a non-stick frying pan. Add the anchovies and garlic, and cook for 1 min, mashing the anchovy to create a purée. Scrape into a into a large bowl, then stir in the mayo, buttermilk, mustard, Worcestershire sauce and Parmesan, plus the rest of the lemon zest and 1 tbsp lemon juice to make a loose dressing. Tumble the leaves into the dressing and massage well to make sure they are well coated. Leave for 5 mins so that the dressing begins to soften the cavolo nero.
  • Wipe out the frying pan and set over a high heat. Sear the tuna for 2-3 mins each side until just pink in the middle, or longer if you prefer. Let it rest on a plate for 1-2 mins. Pile the dressed cavolo nero onto plates, top with the fish, then scatter with the shaved Parmesan and croutons. Drizzle with a little more extra virgin olive oil, if you like, then serve with the rest of the lemon, cut into wedges.

1/4 cup soy sauce
1 tablespoon (packed) dark brown sugar
1/4 cup whole black peppercorns
6 5- to 6-ounce tuna steaks
2 5-ounce bags mixed baby greens
1 bunch radishes, trimmed, sliced
Caesar Vinaigrette

Steps:

  • Prepare barbecue (medium-high heat). Stir soy sauce and brown sugar in pie dish until sugar dissolves. Using mortar and pestle or spice mill, coarsely grind peppercorns. Dip both sides of tuna steaks in soy mixture. Sprinkle both sides of tuna generously with peppercorns, pressing to adhere. Grill tuna to desired doneness, about 2 minutes per side for medium-rare.
  • Combine greens and radishes in large bowl. Toss with enough Caesar Vinaigrette to coat salad. Season to taste with salt and pepper. Divide salad among 6 plates. Cut tuna crosswise into thin slices; place alongside salad. Drizzle tuna and greens with remaining vinaigrette.
