I was wanting a Sausage Pizza,but I didn't have the ingredients to make a crust.So, I was looking through my cabinets, and found a box of scalloped potatoes and came up with this recipe.Please feel free to add more of your favorite pizza toppings. If you try it, I hope you enjoy it.Submitted to "ZAAR" on December 28th,2008.

1/2 lb ground pork
1/3 cup finely chopped white onion
1/4 cup finely chopped green bell pepper
1/2 teaspoon garlic powder
1 (5 1/2 ounce) box scalloped potatoes mix
1 1/2 cups shredded pizza cheese, divided or 1 1/2 cups mozzarella cheese
2 cups boiling water
2/3 cup milk
1 tablespoon margarine

Steps:

  • Preheat oven to 450 degrees.
  • In a medium skillet, over medium heat add pork, onion, and bell pepper.
  • Cook until pork is no longer pink and the veggies are tender.
  • While pork/veggie mixture is cooking, boil water for potatoes.
  • In a large bowl add potatoes, seasoning packet,garlic powder,and 1 cup of cheese.
  • Pour boiling water over ingredients in bowl,add milk and margarine.
  • If needed, drain pork/veggie add to potatoes.
  • Pour into a 2 quart baking dish.
  • Bake for 20 minutes, then top with remaining cheese.
  • Return to oven for 10 more minutes or until cheese is lightly browned.
  • Let stand for 10 more minutes, so sauce can thicken.
  • Enjoy :).

I had bought several rings of Kielbasa last time there was a sale on it..,the kids suggested some sort of Scalloped potatoes for dinner so this is what I threw together, and might I add , it was creamy, rich, cheesy goodness! True comfort food! Enjoy!

1 Tbsp oil
1 - 14 oz kielbasa - sliced and cut in half
1 medium sweet onion, sliced and cut in half
6 medium potatoes - peeled, washed and sliced - i used my mandolin to keep thinness consistent - about 1/4 inch
2 c cheddar or favorite shredded cheese
WHITE SAUCE
3 1/2 Tbsp butter
4 1/2 Tbsp flour
1 1/2 c chicken broth
1 c heavy cream
1/2 c milk
1/4 tsp dried thyme
1/2 - 3/4 tsp kosher salt
1/2 tsp pepper

Steps:

  • 1. In a medium skillet over medium - high heat, add oil - once hot, add the kielbasa & onions, stirring occasionally - you want the sausage to start caramelizing and the onion to soften. Set aside.
  • 2. Peel, wash and slice potatoes. Can do ahead, keep in cold water. You could par cook these now too, to cut down baking time, if using a harder potato- such as Russets. I usually will boil 10 - 15 minutes to soften some.
  • 3. Start sauce: In a medium saucepan over medium heat- melt butter and once melted add the flour...whisk to make a paste and continue cooking for at least a 1 minute to remove the flour taste. I usually stir for 1 1/2 min.
  • 4. Add the broth slowly and whisk as adding, making sure there are no lumps. Now add the cream and milk - then seasonings. Stirring often until you have a thickened white sauce. Taste now, and see if needs more seasonings.
  • 5. In a 4 quart casserole. Ladle enough sauce to cover the bottom of the dish. Next, layer half the potatoes, then half the kielbasa and onion mixture. Next half the cheese.
  • 6. Repeat layer of sauce, potatoes, kielbasa and end with cheese. ( you will need to push potatoes some into the white sauce). When cooking the sauce will cover the potatoes. So don't worry.
  • 7. Cover and bake in a 350 degree oven for 45 minutes. Then, remove foil and continue baking for 40 minutes longer or until potatoes are fork tender.
  • 8. Serve along side of your favorite vegetable and maybe a nice slice of crusty bread. Enjoy!

No cheese? No problem! These easy potatoes have all the creaminess you've come to expect from scalloped potatoes without using a bit of cheese. (Oh, and the addition of smoked sausage is de-lish!)

5 lb russet potatoes, washed, peeled and sliced thinly
1 1/2 ropes of eckrich smoked sausage --other brands still taste good, but not as good!
1/2-3/4 c pure butter (margarine will work, but not as good) if you do not have a full 1 1/2 links of sausage, you could use the larger amount of butter.
3/4 c all purpose flour
1 can(s) evaporated milk
salt and pepper (desired quantity)

Steps:

  • 1. Preheat oven to 350F. Spray an 8 x 13 inch casserole with vegetable spray. (I use the butter flavored.)
  • 2. Place a layer of sliced potatoes to cover the bottom of the casserole. Then dot with about 1/2 of the smoked sausage and 1/3 of the butter.* Sprinkle lightly but generously with flour, and salt and pepper. Add another layer, just like the first, and continue until potatoes and sausage are used up (ususally 2 layers). Finish up with the sprinkling of flour and salt & pepper.*
  • 3. Pour evaporated milk over to cover, moistening all of the flour on top. Add enough water or additional milk to ensure all of the potatoes are damp and most of them covered (not necessarily all, but most).
  • 4. *If you don't care about too much fat, you can add dots of sour cream and sprinkle with grated cheese of your choice as well. Oooo La La!
  • 5. Bake uncovered for at least an hour. Top should be browned and all bubbly. Test potato to see if it is tender. If it is too hard or stiff still, bake a little longer until potato tests done. Try one especially underneath in the milk. Especially good with steamed brocolli florets. I steam them, stir in a tiny bit of butter, and lemon juice.

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
4 medium red potatoes, halved and thinly sliced (3-1/2 to 4 cups)
1/4 cup chopped onion
2 tablespoons minced fresh parsley, optional

Steps:

  • Place sausage in a microwave-safe bowl. Microwave, uncovered, on high for 3 minutes. Drain and set aside., Place butter in a 2-1/2-qt. microwave-safe dish. Heat on high for 45-60 seconds or until melted. Whisk in flour, salt and pepper until smooth. Gradually whisk in milk. Microwave, uncovered, on high for 8-10 minutes or until thickened and bubbly, stirring every 2 minutes., Stir in potatoes and onion. Cover and microwave on high for 4 minutes; stir. Heat 4 minutes longer. Stir in the sausage. Cover and cook for 8-10 minutes, stirring every 4 minutes or until potatoes are tender and sausage is heated through. Stir. Let stand, covered, for 5 minutes. Sprinkle with parsley if desired.

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Thinly slice the potatoes using a mandoline and a hand guard.
  • Fill the bowl of sliced potatoes with water to rinse off excess starch.
  • Drain the potatoes through colander and transfer back into the bowl.
  • Add the salt, garlic powder, and black pepper, and mix thoroughly until fully coated.
  • Assemble the potato slices in heart shape onto a parchment paper-lined baking sheet.
  • Place a sheet of parchment paper on top of the potatoes, and add a pan with heavy ovenproof weight, such as a cast-iron pan.
  • Bake for 50 minutes.
  • Remove the parchment paper, baking sheet, and weight on top of the potatoes.
  • For the Classic toppings, add tomato sauce, mozzarella, fresh mozzarella, and basil in the upper left corner of the potato heart.
  • For Barbeque Chicken toppings, add tomato sauce, mozzarella, cheddar, red onion, BBQ chicken, parsley, and bacon in the lower left corner of the potato heart.
  • For Supreme Combo toppings, add tomato sauce, mozzarella, pepperoni, Italian sausage, mushroom, white onion, and green pepper in the lower right corner of the potato heart.
  • For Spinach Artichoke toppings, add the spinach artichoke dip in the upper right corner of the potato heart.
  • Bake for 10 minutes.

  • Spray a 9 x 13 baking dish with cooking spray and pour in the potato sausage mixture. Sprinkle cubed cheese on top.
  • In a saucepan on top of the stove combine the milk, sour cream, butter, salt, pepper, garlic powder and flour. Over low heat melt the ingredients while stirring with a wire whisk until mixture thickens and is smooth. DO NOT BOIL.
  • Remove from stove and pour over potatoes and sausage. Sprinkle shredded cheddar cheese over top. Sprinkle paprika over cheese. Cover with foil and bake in preheated 375 degree oven 35 to 40 minutes or until potatoes are tender when stuck with a fork. Remove foil and bake for 15 more minutes until starts to brown on top. Remove from oven and garnish with fresh parsley.
