EASY SAUSAGE BISCUIT BITES



Easy Sausage Biscuit Bites image

This is an easy appetizer to serve at any gathering. I like to put a dot of sweet hot mustard on each bite after they are cooked, but it might be better to just offer the extra mustard for those who want it. Place a toothpick in each bite to serve.

1 (12 ounce) can refrigerated biscuit dough (such as Pillsbury Grands Jr.®)
2 tablespoons sweet hot mustard
9 ounces fully cooked sausage links
4 teaspoons finely grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread each biscuit into a 2x4-inch oval using your hands. Brush hot mustard onto each biscuit. Place a sausage link across the short edge of each biscuit oval and roll up lengthwise. Cut each rolled biscuit into 4 round slices. Lay 'bites' onto a baking sheet. Sprinkle each 'bite' with Parmesan cheese.
  • Bake in the preheated oven until biscuits are browned, 18 to 20 minutes.

1/4 cup shortening
2 cups unsifted self-rising flour
1 cup buttermilk
1 pound raw bulk pork sausage, room temperature

Steps:

  • With a pastry blender, cut shortening into flour. Add buttermilk; mix. On a lightly floured surface, knead for a few seconds, adding additional flour if necessary. Roll out on a lightly floured surface into a 12x9-in. rectangle. Spread sausage over dough. Roll up, jelly roll-style, starting from the short side Chill. Cut into 1/2-in. slices. Place, cut side down, on a lightly greased baking sheet. Bake at 425° for 25 minutes or until lightly browned.

2 tubes (6 ounces each ) refrigerated buttermilk biscuits
1 tablespoon butter, melted
4-1/2 teaspoons grated Parmesan cheese
1 teaspoon dried oregano
10 frozen fully cooked breakfast sausage links, thawed

Steps:

  • On a lightly floured surface, roll out each biscuit into a 4-in. circle; brush with butter. Combine Parmesan cheese and oregano; sprinkle over biscuits. Place a sausage link in the center of each roll; roll up. , Cut each widthwise into four pieces; insert a toothpick into each. Place on an ungreased baking sheet. Bake at 375° for 8-10 minutes or until golden brown.

Buttermilk Biscuits with Sausage Gravy image

This version is a bit lighter than the traditional buttermilk biscuits, but no less tasty.

1 3/4 cups Southern all-purpose flour, such as White Lily, or cake flour (not self-rising), plus more for rolling out
1/2 cup whole wheat pastry flour
1 tablespoon baking powder
1/2 teaspoon fine sea salt
1/4 teaspoon baking soda
2 tablespoons cold unsalted butter, cut into bits and chilled
3/4 to 1 cup lowfat buttermilk
2 tablespoons canola oil
1 1/4 pounds lean pork, chicken or turkey sausage, casings removed
Coarse kosher salt and freshly ground black pepper
1 sweet onion, finely chopped
2 cups 2-percent or whole milk

Steps:

  • Preheat the oven to 500 degrees F.
  • In a bowl, combine 1 1/2 cups of the all-purpose flour, the whole wheat pastry flour, baking powder, salt and baking soda. Using a pastry cutter or two knives, cut the butter into the flour mixture until it resembles coarse meal. Combine the buttermilk and 1 tablespoon of the oil. Pour the buttermilk mixture into the flour mixture and gently mix until just combined.
  • Turn the dough out onto a lightly floured surface. Knead lightly using the heel of your hand to compress and push the dough away from you, and then fold it back over itself. Give the dough a small turn and repeat eight or so times. (It's not yeast bread; you want to just barely activate the gluten, not overwork it.) Using a lightly floured rolling pin, roll the dough out 1/2 inch thick. Cut out rounds of dough with a 1 1/2-inch round cutter dipped in flour; press the cutter straight down without twisting so the biscuits will rise evenly when baked.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and sprinkle with salt and pepper. Using a wooden spoon, break up the meat into small pieces. Cook until lightly browned, 3 to 5 minutes. Pour off any excess rendered fat. Add the onions and cook until clear and translucent, 3 to 5 minutes. Add the remaining 1/4 cup all-purpose flour and stir to combine and coat. Add the milk and season with salt and pepper. Bring to a boil and then reduce the heat to simmer. Let cook, stirring occasionally, until thick, about 5 minutes. Taste and adjust for seasoning with salt and pepper.
  • Meanwhile, place the biscuits on an ungreased baking sheet about 1 inch apart. Bake until golden brown, 8 to 10 minutes. Transfer to a rack to cool just slightly. Split and serve hot with the sausage gravy.

I came up with this recipe to clean out the frige. The biscuits were coming up on expiration and i was hungry for something cheesey. This is so simple and rather tasty.

1 (16 1/3 ounce) can Pillsbury Grands refrigerated buttermilk biscuits (8)
16 sausage links, thawed
8 slices cheese

Steps:

  • So incredibly simple.
  • Heat oven to 350*.
  • Open biscuits, on a lightly floured surface roll them flat.
  • Place a slice of cheese and 2 sausage links on the biscuits. Roll up.
  • (I used frozen links and thawed them partially in the microwave first.).
  • Place on the baking sheet, seam side down.
  • Bake until golden brown about 15-18 minutes.
  • To complete the breakfast, make your favorite eggs, grab a piece of fruit and enjoy!

1 cup sour cream
2 cups self-rising flour
5 ounces shredded extra-sharp cheddar

Steps:

  • Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper.
  • In a medium skillet over medium heat, cook the sausage until well-browned, breaking it up into small pieces. Let cool completely, either on the counter or in the freezer.
  • Mix together the butter and sour cream in a stand mixer. Mix in the flour, 1 cup at a time, mixing until fully combined. Add the sausage and cheddar, and mix until well incorporated.
  • Drop heaping spoonfuls of the dough onto the prepared baking sheets. Bake until lightly browned, 20 to 25 minutes.
