BEST-EVER GRILLED RIBS



Best-Ever Grilled Ribs image

Grilled BBQ ribs might sound intimidating, but they're actually so easy to make. There's no pre-cooking required and they come out smoky and flavorful every time.

1/4 c. light brown sugar
2 tbsp. smoked paprika
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
1 1/2 tsp. kosher salt
1 tsp. ground black pepper
1/2 tsp. ground cayenne pepper (optional)
2 racks baby back ribs (about 5 to 6 pounds total)
3 tbsp. vegetable oil, plus more for oiling the grates
1/2 c. chicken stock
1/4 c. apple cider vinegar
1 1/2 c. BBQ sauce

Steps:

  • Preheat a grill (charcoal or gas) to 300˚, with the coals or flames only under one half of the grill.
  • For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine.
  • Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.
  • Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180˚ to 190˚, about 80 to 90 minutes.
  • Increase the grill temperature to 375˚ and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.
  • Transfer the ribs to a cutting board, cut into pieces and serve.

1 (4 pound) package pork spareribs
1 pinch garlic salt, or to taste
1 cup ketchup
½ cup white vinegar
¼ cup white sugar
4 teaspoons celery salt
1 ½ teaspoons chili powder
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle ribs with garlic salt and place into a roasting pan.
  • Stir ketchup, vinegar, sugar, celery salt, chili powder, salt, dry mustard, paprika, and black pepper together in a bowl; pour over the ribs.
  • Cook, basting with the pan drippings every half-hour, until the meat pulls away easily from the bone, about 90 minutes.

This recipe came from an old cookbook that was given to me more than 30 years ago. Whenever I prepare this for guests, they always want to take some of the sauce home. It's simple, very good and satisfying.

6 lbs country-style beef ribs or 6 lbs country-style pork ribs
4 onions, chopped
6 green onions, chopped
2 cups water
2 beef bouillon cubes
1/2 cup dark brown sugar, packed
1 cup ketchup
1/2 cup cider vinegar
1 (1 lb) can tomato puree
1 tablespoon garlic salt
1 tablespoon celery salt
1 tablespoon chili powder
1/2 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon ginger
1/2 teaspoon dry mustard
1/2 cup sweet pickle relish, drained

Steps:

  • Brown the meat in a heavy skillet (I use cast iron).
  • Combine remaining ingredients in large, deep kettle (I have a large electric roaster that works great for this).
  • Bring to a boil, stirring often, and simmer for 10 minutes.
  • Add meat, cover and simmer for 2 hours or until meat is tender.

1 tablespoon red pepper flakes
1 slab pork ribs, 3 pounds
1 1/2 cups white vinegar

Steps:

  • Rub the salt, pepper and pepper flakes into the ribs and place into a glass baking dish. Pour the vinegar over the ribs and cover with plastic wrap. Refrigerate overnight, rotating the ribs in the vinegar twice.
  • Preheat oven to 375 degrees. Drain the vinegar from the baking dish and roast the ribs for 1 1/2 hours. Increase oven temperature to 400 degrees. Remove ribs from oven and brush with some barbecue sauce. Return ribs to oven and roast for another 30 minutes or until tender. Serve ribs with extra barbecue sauce.

2 tablespoons canola oil
4 pounds bone-in beef short ribs, trimmed
1 bottle (12 ounces) chili sauce
3/4 cup plum preserves or preserves of choice

2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves

Steps:

  • Place onion and water in a 5-qt. slow cooker. In a large skillet, heat oil over medium heat. Brown ribs in batches. Add to slow cooker. Cook, covered, on low 5-6 hours or until meat is tender., In a small saucepan, combine remaining ingredients; cook and stir over medium heat until heated through. , Remove ribs from slow cooker; discard cooking juices. Return ribs to slow cooker. Pour sauce over top. Cook, covered, on high 25-30 minutes or until ribs are nicely coated.

This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

4 pounds pork spareribs
1 cup brown sugar
¼ cup ketchup
¼ cup soy sauce
¼ cup Worcestershire sauce
¼ cup rum
½ cup chile sauce
2 cloves garlic, crushed
1 teaspoon dry mustard
1 dash ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
  • In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
  • Preheat grill for medium heat. Position grate four inches above heat source.
  • Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.
