SPAGHETTI WITH SAUSAGE-MUSHROOM SAUCE

Steps:
- Bring a pot of salted water to a boil. Add the spaghetti and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
- Meanwhile, heat 1 teaspoon olive oil in a large nonstick skillet over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Transfer to a bowl.
- Add the remaining 2 teaspoons olive oil to the skillet and increase the heat to medium high. Add the mushrooms, season with salt and pepper and cook until lightly browned, 3 to 4 minutes. Stir in the tomato paste and rosemary and cook, stirring, 1 minute. Return the sausage to the skillet, then add the cream and 1 cup water; bring to a gentle simmer and cook until slightly thickened, 8 to 10 minutes. Season with salt and pepper.
- Add the spaghetti to the skillet and toss with the sauce, adding some of the reserved cooking water to loosen, if needed. Top with shredded Parmesan, if desired.
MUSHROOM, SPINACH & SAUSAGE SPAGHETTI RECIPE BY TASTY

Steps:
- Sauté the bacon in a large pot over medium-high heat for about 3 minutes, until crispy.
- Add the sausage meat and red pepper flakes and sauté for about 10 minutes, until the meat is cooked through. Remove from the pan and set aside.
- In the same pot, sauté the onion over medium heat for 2-3 minutes, until translucent.
- Add the garlic and sauté for 2 minutes, until fragrant.
- Add the mushrooms and cook for 2-3 minutes, until they start to release some of their liquid.
- Add the wine, salt, and pepper and stir to combine. Cook for 7-8 minutes, until the wine has reduced by half and the mushrooms are tender.
- Add the spaghetti and sausage mixture and toss to combine.
- Add the Parmesan, pasta water, and spinach and stir. Cook until the pasta is warmed through and the Parmesan has melted.
- Enjoy!

Steps:
- Heat the butter in a large skillet, and cook the garlic until it is soft.
- Stir in the mushrooms, and cook them until softened.
- Transfer mushrooms to a bowl, and set aside.
- Brown the pork sausage in the same skillet, breaking it up with a fork.
- Season with salt and pepper.
- Return the mushrooms to the pan, and mix ingredients well.
- Stir the cooked fettucine into the skillet with the sausage mixture.
- Stir in the cream and cheese, and mix everything quickly over med-high heat to blend.
- Serve immediately.

SAUSAGE AND MUSHROOM PENNE IN MUSTARD CREAM SAUCE
"The mustard cream sauce goes really well with the meaty sausages. Pasta shapes such as penne, conchigliette, fusilli or other shapes that hold sauces well will suit this dish. A scatter of fresh herbs such as basil or chives lifts the cream sauce a little." I found this on www.soyandpepper.com. Sounds delicious and filling for a nice winter meal, but I have yet to try it.

Steps:
- Squeeze the sausage meat out of their casings and shape into small meatballs. Heat some oil in a heavy based pan and brown the meatballs all over until just cooked. (Another method, which is what I have done, is to cook the whole sausages on the grill or fry them in a pan until cooked, and then slice them up.) Set aside.
- Cook the pasta in a pot of boiling water until al dente, according to packet instructions.
- While the pasta is cooking, heat the olive oil in a large heavy based pan and add the garlic and spring onions and cook over medium heat for a minute.
- Add the mushrooms and sautee till cooked.
- Add the sausages, mustard and cream and simmer until the sauce is reduced. Season to taste with salt and pepper.
- When the pasta is cooked, drain and add to the mustard cream sauce. Mix well.
- Stir in the parmesan cheese if using.
- Dish up onto plates, scatter over basil leaves and serve immediately.

- Cook rigatoni according to package directions., Meanwhile, in a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain and remove sausage from pan., In same skillet, heat butter over medium heat. Add mushrooms, garlic, salt and pepper; cook, covered, 4 minutes, stirring occasionally. Uncover; cook and stir 2-3 minutes or until mushrooms are tender and liquid is evaporated., Stir in cream; bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until slightly thickened. - Preheat the oven to 400 degrees F. Line a baking sheet with parchment or foil for easy clean-up. Place the sausage links on the prepared baking sheet. Transfer to the oven to bake off for 10 minutes. The sausage may not be fully cooked through at this point – that’s totally fine. Remove from the oven & allow to rest for 1-2 minutes. Once cool enough to handle, thinly slice the sausage on a bias and set aside.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, according to package directions until al dente. Use a liquid measuring cup to reserve about 1 cup of the starchy pasta water. Drain the pasta and set aside (do not rinse the pasta!!!).
- Meanwhile, begin cooking the marsala pan sauce. Add the olive oil to a large, heavy-bottomed skillet over medium heat. Once hot, add in the onion, stirring to combine. Season with ½ teaspoon kosher salt. Cook, stirring occasionally, until softened & translucent, 4-5 minutes. Add the garlic & chili flake. Cook, stirring constantly, until fragrant, 1-2 minutes.
- Add the sliced sausage from Step 1 to the skillet, arranging the slices in such a way that they cover the bottom of the skillet. Cook 1-2 minutes, until browned, before flipping to brown the opposite side. Add mushrooms & walnuts on top of sausage. Cook for an additional 2 minutes, until the sausage is browned, the mushrooms have softened slightly, & the walnuts are toasty.
