2/3 cup chopped onion
1/2 cup chopped green pepper
1 tablespoon canola oil
1 teaspoon minced garlic
1 pound smoked sausage, cut into 1/4-inch slices
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 cup instant brown rice
1 cup vegetable broth
1/4 cup packed brown sugar
1/4 cup ketchup
3 tablespoons corn syrup
1 tablespoon Dijon mustard

Steps:

  • In a large skillet, saute onion and green pepper in oil until onion is crisp-tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Pour into a greased 13-in. x 9-in. baking dish., Cover and bake at 350° for 15 minutes. Uncover; bake 10-15 minutes longer or until liquid is absorbed and rice is tender.,

This recipe was given to me by my sister. It's a hearty dish, and wonderful for the cold winter months. To make a little meatier, I cut up a small ham steak in cubes and add the cubed ham the last 20 minutes. Serve over cooked rice.

2 cups dried red beans
½ teaspoon dried minced garlic
1 tablespoon dried minced onion
2 teaspoons salt
1 bay leaf
1 teaspoon white sugar
¼ teaspoon ground cayenne pepper
1 teaspoon celery seed
1 teaspoon ground cumin
¼ teaspoon crushed red pepper flakes
1 ham hock
1 pound smoked sausage, sliced

Steps:

  • Pick over the dried beans, and soak them in water overnight.
  • The next day, drain off the soaking water, and place the beans in a large pot or slow cooker. Cover with water, and stir in the dried garlic and onion, salt, bay leaf, sugar, cayenne pepper, celery seed, cumin, and crushed red pepper flakes. Push the ham hock down into the beans. Bring to a boil, reduce the heat, and simmer over low heat for 3 to 4 hours.
  • Stir in the smoked sausage, simmer for 20 more minutes, and serve.

This is an easy-to-prepare fried rice dished passed down by my Japanese mother. You won't find anything like it in the restaurants. Every time we have a family get-together or a covered dish luncheon at work, I am always requested to bring this rice.

1 pound ground pork sausage
5 eggs, beaten
3 tablespoons vegetable oil
½ head cabbage, cored and shredded
3 carrots, chopped
6 cups cooked white rice, cold
¼ cup soy sauce, or to taste
1 (14.5 ounce) can bean sprouts, drained
1 (6 ounce) package frozen green peas, thawed
ground black pepper to taste
3 green onions, chopped

Steps:

  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and remove sausage from the pan. In the same pan, using the remaining coating of grease from the sausage, scramble the eggs, stirring frequently until cooked through. Set aside.
  • Heat the oil in a very large skillet or electric skillet over medium-high heat. Stir fry the cabbage and carrots just until the cabbage has wilted. Add the cold rice, and fry, stirring so that there are no clumps. Mix in the sausage and pour in some soy sauce. Stir in bean sprouts, peas, and eggs, mixing well so there are no big chunks of egg. Season with pepper, and stir in green onions just before removing from the heat. Adjust soy sauce to taste, and serve.

This is an easy to prepare fried rice dished passed down by my Japanese mother. You won't find anything like it in the restaurants. Every time we have a family get-together or a covered dish luncheon at work, I am always requested to bring this rice. Being half Japanese, my family would eat this rice as the main part of our meal. Most people would make this as more of a side dish. This recipe makes a lot, so feel free to cut down on the quantities. The beautiful lady in the picture is my mother who I lost to cancer in 2002.

1 lb pork sausage
8 eggs, scrambled
3 tablespoons vegetable oil
1/2 head cabbage, cored and shredded
3 carrots, chopped
6 cups cooked white rice, MUST be chilled
1/4 cup soy sauce (to taste)
1 (14 1/2 ounce) can bean sprouts, drained
1/2-1 cup frozen green pea
ground black pepper
3 green onions, chopped

Steps:

  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and remove sausage from the pan. In the same pan, scramble the eggs, stirring frequently until cooked through. Remove eggs from pan and set aside.
  • Heat the oil in a very large skillet or electric skillet over medium to medium-high heat. Stir fry the cabbage and carrots just until the cabbage has wilted. Add the cold rice, and fry, sprinkle some soy sauce over the mixture and break up clumps in the rice. (Rice must be cold or the dish will come out gummy.) Mix in the sausage and sprinkle some more soy sauce over all. Stir in bean sprouts and eggs, mixing well so there are no big chunks. Gently mix in the peas. Season with pepper, and stir in green onions just before removing from the heat. Add more soy sauce, if desired, to taste, and serve. This dish reheats well in the microwave.
  • Tip 1: To save time, instead of chopping up cabbage and carrots, you can buy a 16 oz. package of coleslaw mix which has the cabbage and carrots already shredded.
  • Tip 2: If you are using the quantitites listed above, it would be easier if you break it down into 2 or 3 batches. This makes enough fried rice to fit into a large crockpot. I place the rice in a crockpot to keep it warm for cookouts.
  • Tip 3: This recipe is very versatile. You can add, leave out or change ingredients according to your taste. Instead of sausage, this rice works well with chicken, beef, shrimp, etc. If you like you can add water chestnuts or bamboo shoots. A great way to use up leftovers.

1/4 cup chopped green pepper
2 tablespoons onion, chopped
1 garlic clove, minced
1-1/2 teaspoons butter
1/4 pound fully cooked smoked sausage, cut into 1/2-inch slices
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup canned Ranch Style beans (pinto beans in seasoned tomato sauce), undrained
1/8 teaspoon dried oregano
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • In a skillet, saute green pepper, onion and garlic in butter until crisp-tender. Add sausage; cook and stir until browned. Add the tomatoes, beans, oregano and pepper. , Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened. Serve with rice.

Sausage and Bean Fried Rice image

I just made this recipe tonight and it is grub, either as a delicious one pot meal, topped with a fried egg or over easy egg(which I do with all my fried rice), or combined with something like mac and cheese or vegetables. You can make it healthy using turkey sausage as I did. The pure Euphoria you'll feel from the heat buzz will leave you dazzled. I didn't include the time it takes to cook the rice or sausage in my prep and cook times.

Number Of Ingredients 8

1 lb sausage (I used turkey sausage)
1 can chili bean (With Sauce)
1 cup brown rice
minced garlic
1/4-1/2 yellow onions or 1/4-1/2 yellow onion
jalapeno pepper (depending on the degree of spiciness you prefer, i used 4)
Tabasco sauce or hot sauce (to taste)
pepper

Steps:

  • Cook brown rice according to package and let cool.
  • Cook sausage according to package let cool and cut into thin slices, quarter them if you prefer smaller bits.
  • Spray large pot with cooking spray and saute minced garlic with jalepenos and onion for 1-2 minutes.
  • Add sliced sausages to pot and stir to mix.
  • Add chili beans with sauce and cooled rice to pot and stir.
  • Season with pepper and tabasco sauce (which I use very liberally).
  • Serve warm with lots of liquids for ya wimps out there.
  • Cover and heat through until beans are warm.
