1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

1 1/2 teaspoons tomato paste

3 extra-large eggs, beaten

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

Our turkey meatloaf is full of flavor, moist in the middle, and has become a reader favorite! You would never guess this meatloaf is packed with mushrooms, but that's what makes it so darn delicious. Lots of finely chopped mushrooms add flavor and moisture, often missing from the typical turkey meatloaf. When choosing which mushrooms to add, white button mushrooms will work perfectly fine. For more flavor, try one or a combination of brown cremini, portobello, or shiitake mushrooms. The mushrooms need to be very finely chopped. You can do this by hand or use a food processor.

8 ounces mushrooms, trimmed and very finely chopped
1 medium onion, peeled and finely chopped
2 garlic cloves, peeled and minced
1 tablespoon oil
3/4 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
7 tablespoons ketchup, divided, try our homemade ketchup
1 cup (60 grams) panko bread crumbs or use homemade bread crumbs
1/3 cup (80 ml) milk
2 large eggs, lightly beaten
1 ¼ pound ground turkey (92% lean)

Steps:

  • Heat oven to 400° Fahrenheit. Lightly oil a rimmed baking sheet (or use a 9-inch by 13-inch baking pan) lined with aluminum foil.
  • Heat oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, until softened; about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the mushrooms, a 1/2-teaspoon of salt, and a 1/4-teaspoon of pepper. Cook until the mushrooms give off their liquid and it boils away; about 10 minutes.
  • Transfer the onions and mushrooms to a large bowl, and then stir in the Worcestershire sauce and three tablespoons of the ketchup. Set aside to cool for 5 minutes.
  • Meanwhile, combine the breadcrumbs and milk in a small bowl. Stir the breadcrumb mixture and the eggs into the mushrooms and onions. Using a fork or your hands, gently mix in the turkey, a 1/4-teaspoon of salt, and a 1/4 teaspoon of pepper. The mixture will be very wet.
  • Form the meatloaf into a 9-inch by 5-inch oval in the middle of the prepared baking sheet. Spread the remaining four tablespoons of ketchup on top.
  • Bake the meatloaf until an instant-read thermometer inserted into the thickest part of the meatloaf registers 170 degrees F, about 50 minutes. Let stand 5 minutes before slicing.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped

1 turkey breast on the bone (5 to 6 pounds)
Salt and freshly ground black pepper
Extra-virgin olive oil
1 bunch fresh sage leaves
8 shallots, cut in half
1 pound baby carrots
1/4 cup all-purpose flour
4 cups chicken stock
1/2 lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut along 1 side of the breastbone, and then down along the ribs; gently pull and cut the meat away from the bone to cut the breast off the carcass. Do the same to remove the other breast.
  • Season the turkey breasts on both sides with a generous amount of salt and pepper. Put a large roasting pan on the stove over medium heat and get it good and hot. Drizzle the pan with a 3-count of oil. Add a few sage leaves and stir to flavor the oil. Lay the breasts in the hot oil, skin-side down and cook for about 5 minutes until the skin begins to set and crisp. Flip the breasts over and push them off to 1 side.
  • Add the shallots, carrots, and handful of sage leaves to the pan and stir to coat with the oil. Sprinkle the vegetables with salt and pepper. Stick the pan in the hot oven and roast for about 30 minutes until the internal temperature of the turkey reaches 160 degrees F on an instant read thermometer, and the shallots and carrots are tender and browned.
  • Remove the turkey and the vegetables to a serving platter and set aside. Now work on the gravy: Put the roasting pan over 2 burners, over medium heat. Stir in the flour with a wooden spoon. Then gradually stir in the stock, scraping the bottom of the pan to pick up all of the browned bits. Give the gravy a squeeze of lemon and season, to taste, with salt and pepper. Slice the turkey and serve with the gravy.

It is just a favorite of mine. A have a few other meatloaf recipes made with turkey, but this is by far my favorite. Well worth it. Serve with the standards with a twist. For baked or mashed potatoes - try mashed cauliflower, or mashed parsnips which are really good. And peas or green beans for me, but try some balsamic beans or creamed peas with parmesan. In fact I have some ground turkey and need to use it up, so it may just be dinner later this week. By all means if you prefer the tomato based sauce, that is fine. I just like this for a change.

1 cup onion, fine chopped
1 cup celery, fine chopped
4 scallions, save the whites for the topping (greens only)
1/2 cup roasted red pepper, chopped
1 large large egg
3 slices fresh bread
1 cup milk
2 teaspoons Worcestershire sauce
2 tablespoons barbecue sauce
3 teaspoons minced garlic
1 tablespoon italian seasoning (a all purpose seasoning will work great)

1 1/2 cups barbecue sauce
1/2 cup orange marmalade
scallion, fine minced (the whites)

Steps:

  • Bread -- soak the slices of bread in the milk and then squeeze the milk out. Crumble and break it up and add to a large bowl.
  • Meatloaf -- Then to that same bowl add all the other ingredients, except for the turkey and the ingredients for the topping and mix well to combine. Then add in the turkey and mix being careful to over mix. Over mixing can make tough meatloaf.
  • Bake -- I like to use a baking sheet and free form my meatloaf but you could certainly use a loaf pan. I line a baking sheet and than form the meatloaf in a loaf type of shape. Bake in a 375 degree oven for about 45-50 minutes until done. It really depends on how thick or what type of pan you cook the loaf inches.
  • Sauce -- Mix the BBQ sauce, marmalade, and scallions and spoon or brush on the top of the loaf after the meatloaf is cooked half way. Then brush on again in another 10-15 minutes. And then right at end if you have any sauce left, brush or spoon on the remaining sauce and cook just another couple of minutes before finishing.
  • Serve -- Let set 5 minutes before slicing.
  • Don't forget you can always use a traditional tomato sauce or ketchup topping if you prefer, but I love this for a twist. Enjoy!

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and brown, about 6 minutes. Add the parsley and cook for another minute. Set aside.

A unique way to use up turkey, mashed potatoes and cranberry sauce. Add a couple of fresh ingredients and this goes together in no time. Now, if like many, who have steamed green beans for Thanksgiving, try reinventing them by a quick saute with shallots, mushrooms, and a little balsamic vinegar. Just 4-5 minutes and you have a great way to use up those beans and it makes a great side dish with this. And don't forget to use up that pumpkin pie in a parfait with honey whipped cream, walnuts and ginger snaps.

1 (10 ounce) can refrigerated pizza dough, like Pillsbury
1 1/2 cups turkey, fine chopped
3 cups leeks, chopped (about 4 large)
3 scallions, diced fine (green and white parts)
3/4 cup Fontina cheese, grated (1/4 cup potatoes, 1/2 cup topping)
2 cups mashed potatoes, you can easily used fresh mashed potatoes too if you don't have leftovers (do not use leftover potatoes if they have sour cream in them, they just don't work as well)
2 teaspoons fresh chives, chopped fine
1 egg, beaten well with a whisk
3 teaspoons garlic, minced (2 for the leeks, 1 for the potatoes)
2 tablespoons butter to saute the leeks
pepper
salt
cranberry sauce (you could also use cranberry)

Steps:

  • Leeks -- In a small sauce pan on medium high heat, add the butter and melt. Then add the garlic, leeks and cook on medium (you don't want to brown them) for about 5 minutes until tender. Then add in the scallions and diced turkey and cook another minute. Don't forget to salt and pepper well.
  • Crust -- As the leeks saute, make your crust. Now I prefer to use a tart pan, but not everyone has one. You can make a rough or rustic tart and just lightly crimp the sides up around the tart which is fine. But you want something around 10-12" round. A pizza pan also works for this and you can also make this on a pizza stone. If making it on a pizza stone or a pizza pan I line with parchment paper, so it doesn't stick (not necessary, just something I liked to do). If using a tart pan, spray with non stick spray.
  • Unroll the pizza dough and roll on a floured surface into a circle. About 14-16", thin but you don't want it falling apart. Then in the tart pan, pat on the bottom and then pat up the sides. If using a pizza stone, pan, etc., don't crimp up the edges until you fill the crust with the fillings.
  • Potatoes -- To your leftover potatoes, add in the chives, egg, garlic, and 1/4 cup cheese. Mix the potatoes well and then spread the potato mixture on to the pizza dough.
  • Note: If using fresh homemade mashed potatoes vs leftovers, just make a basic recipe with butter and cream and then add in the chives, egg, garlic and cheese liked stated above.
  • Tart -- For the tart pan, fill the bottom of the pan. If using a pizza stone or pizza pan, spread the potatoes on the pizza dough leaving 2" around the edge so you can fold them over form a crust. Just don't fill it all the way to the edge.
  • Leeks and Turkey -- Spread the leeks, scallion, garlic and turkey mixture over the potato and top with the remaining cheese.
  • Bake -- In a 375 degree oven, bake for 20 minutes until golden brown. If using a pizza stone, don't forget to heat up the stone first. After the cheese is melted and the crust is golden brown, remove and let set just 5 minutes before serving.
  • Serving -- Cut in slices like a pizza and serve with a scoop of cranberry sauce on the top. Serve with balsamic green beans and a pumpkin parfait. Leftovers are great!

1 tbsp olive oil
1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

1 cup onion, chopped
3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.
