2 pounds sushi-grade ahi tuna, cut into 1/2-inch cubes
1/4 large sweet onion, halved and julienned
1/4 English cucumber, halved and thinly sliced (about 1 cup)
1 jalapeño pepper, thinly sliced
1/4 cup soy sauce
2 tablespoons rice wine vinegar
1 tablespoon grated peeled fresh ginger
1 teaspoon sambal oelek
1 teaspoon toasted sesame oil
1 tablespoon packed light brown sugar
4 scallions, sliced
Vegetable oil, for frying
8 wonton wrappers, halved into triangles Kosher salt

Steps:

  • Make the poke: Mix the tuna, onion, cucumber and jalapeño in a large bowl.
  • Puree the soy sauce, vinegar, ginger, sambal, sesame oil and brown sugar in a blender, scraping down the sides, 1 minute. Add to the tuna; toss. Refrigerate 15 minutes.
  • Meanwhile, make the wonton chips: Heat 2 inches of vegetable oil in a Dutch oven until a deep-fry thermometer registers 350 degrees F. Working in batches, fry the wonton wrappers until golden, about 2 minutes. Drain on paper towels; sprinkle with salt.
  • Divide the poke among glasses or bowls. Top with the scallions and wonton chips.

This is a dish that comes from Long Island, New York, not the Big Island of Hawaii, a Northeastern take on a Pacific classic. I've made it with Atlantic bonito caught offshore and yellowfin tuna bought at the market, the meat trimmed, cubed and mixed with sesame oil and soy sauce, a little chile-garlic sauce and lot of chopped scallions. I top the salad with roasted macadamia nuts and a few vigorous shakes of furikake, a Japanese seasoning that is made of sesame seeds, dried fish and seaweed, salt and sugar. It makes for about the most delicious eating in the world.

1 1/2 pounds sushi-quality tuna loin, thick-cut
1 small red onion, peeled and sliced very thin
4 scallions, trimmed and both green and white sections thinly sliced
3 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon mirin (sweet Japanese rice wine)
1 teaspoon chile-garlic sauce, or to taste
1 1/2 tablespoons furikake (a dry Japanese seasoning made of a mixture of dried fish and seaweed, sesame seeds, salt, sugar and other ingredients) or sesame seeds, or to taste
1 cup roasted macadamia nuts, optional

Steps:

  • Carefully cut the tuna, against the grain, into thick planks of 3/4 inch, and then into 3/4-inch cubes. Place cubes into a large bowl, and add to them the onion and scallions.
  • Combine the soy sauce, sesame oil, mirin and chile-garlic sauce in a small bowl. Whisk together, and adjust seasonings to taste.
  • Pour the sauce mixture over the fish, and toss gently to combine. Sprinkle the furikake or sesame seeds over the fish, toss again gently, then cover and place in the refrigerator for an hour or two to chill. Serve with the macadamia nuts, if using, scattered over the top.

1 cup aioli or mayonnaise
2/3 cup sour cream
1/2 cup pickle relish
1/3 cup finely diced pickled ginger
1 lime, zested
1/3 bunch cilantro, leaves chopped
3 scallions, thinly sliced
Pinch salt and freshly ground black pepper
1 avocado, halved, pitted and diced
1 small tomato, halved, seeded and finely diced
1 teaspoon minced garlic
1/2 lime, zested and juiced
2 teaspoons wasabi powder
1 teaspoon finely minced cilantro leaves
Pinch salt and freshly ground black pepper
1 cup all-purpose flour
1 cup rice flour
2 eggs, beaten
2 cups cold soda water
Pinch salt
1/2 teaspoon fish sauce
1/2 teaspoon sesame oil
1 tablespoon sesame seeds
Oil, for frying
1 (12-ounce) piece sushi grade ahi tuna

Steps:

  • For the Pickled Ginger Tartar Sauce: Combine all the ingredients in a small serving bowl and set aside.
  • For the Wasabi Guacamole: Add all the ingredients to a small serving bowl and mash together until smooth. Set aside.
  • For the Tempura Batter/Tuna: Whisk all ingredients together in a large bowl, but do not over mix. Keep well chilled in the refrigerator or over an ice bath until ready to use.
  • In a deep-fryer or stockpot, heat the oil to 350 to 375 degrees F. Cut the tuna into 2 portions. Dip each piece into the tempura batter, coating all of the sides. Lower into the deep-fryer and cook until the batter is crisp, but not overly browned, approximately 1 minute. Remove from the fryer to a cutting board and cut into 1/4 to 1/2-inch slices. Transfer the tuna to a serving platter and serve with the Pickled Ginger Tartar Sauce and the Wasabi Guacamole.

  • Place tuna cubes in a bowl with shoyu, onion, green onion, seaweed, and sesame oil. Mix well and then quickly sear in hot oil in a high heat wok. Don't cook for more than 1 or 2 minutes, as you want the center raw. Serve on a bed of greens.
