These Salmon Foil Packets are quick and easy to make! The perfect way to make juicy and flavorful salmon baked in foil packets, in the oven, in just 20 minutes.

2 salmon fillets
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices of lemon
1 teaspoon minced garlic (divided)
1 tablespoon unsalted butter (thinly sliced into four pieces)
parsley and dill (for garnish)

Steps:

  • Preheat the oven to 400 degrees F.
  • Prepare sheets of aluminum foil, one per piece of salmon.
  • Arrange salmon on foil. Season with salt and peppers.
  • Place lemon slices and butter on top of each piece of fish.
  • Bring the sides of foil together to make packets.
  • Cook for 18 to 20 minutes in the oven.
  • Once done, remove from the oven and baking sheet. Wait a few minutes until the packets are cooler and safer to handle.
  • Serve with veggies, rice or pasta.

2 teaspoons olive oil plus 2 tablespoons
Salt and freshly ground black pepper
3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
2 chopped shallots
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend.
  • Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely; seal the packets closed. Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.

4 6 ounce salmon filets
1 bunch asparagus (chopped into thirds)
1 red pepper (chopped into 1 inch pieces)
1 zucchini (sliced)
1 yellow squash (sliced)
salt and pepper
½ cup butter (room temperature)
¼ cup freshly chopped parsley
4 garlic cloves (minced)
1 teaspoon fresh rosemary (chopped)
1 teaspoon fresh thyme (chopped)
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Place four 18x12-inch pieces of heavy aluminum foil on counter. Place the salmon fillets in the center and evenly place vegetable mixture on each piece of foil.
  • To make the garlic herb butter: In a small bowl add the butter, parsley, garlic, rosemary, thyme, salt and pepper. Divide evenly and place on top of the salmon. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  • Place packets on the grill and cover. Grill or bake at 400 degrees for 15-20 minutes or until salmon is cooked through and veggies are tender. Carefully open packets and serve.

1.5 lbs Salmon ((cut into 4 6-oz fillets))
1/2 lb Asparagus ((trimmed, then cut in half))
10 oz Grape tomatoes
10 oz Zucchini ((sliced into half moons))
1/4 cup Olive oil
1/2 tsp Sea salt ((+ more for sprinkling))
1/4 tsp Black pepper ((+ more for sprinkling))
1/2 medium Lemon ((juiced and zested; about 1 tbsp juice and 1/2 tbsp zest))
2 cloves Garlic ((minced))
1 tbsp Fresh parsley ((chopped))
1 tbsp Fresh dill ((chopped))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C), or preheat the grill to medium.
  • Lay out 4 large squares of foil (at least 12x12 inches (30x30 cm)). Place a salmon fillet in the center of each piece of foil. Divide the veggies evenly among the foil around the salmon.
  • In a small bowl, whisk together the olive oil, sea salt, black pepper, lemon juice, lemon zest, minced garlic, parsley and dill.
  • Use about half of the oil mixture to brush the salmon, getting most of the garlic onto the salmon. Pour the remaining oil mixture evenly over the veggies. Lightly sprinkle more salt and pepper over the salmon and veggies.
  • Fold the foil over and seal shut to form packets. Place onto a baking sheet.
  • Bake for about 15-20 minutes, or grill (covered) for 13-18 minutes, until the salmon flakes easily with a fork or is done to your liking.

2 medium onions, halved and sliced
1 teaspoon dried marjoram
salt and freshly ground black pepper to taste
2 lemons, sliced
5 pods whole star anise pods
⅓ cup water
aluminum foil
1 (1 1/2-pound) salmon fillet

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a skillet over medium heat and cook onions until soft and browned, about 10 minutes. Season with marjoram and a little salt. Remove from heat.
  • Place lemon slices in a single layer in a clean skillet over high heat and cook until lightly browned on both sides, about 3 minutes. Add star anise and water and bring to a boil. Remove from heat.
  • Cover a baking pan large enough to hold the salmon with sheets of aluminum foil, leaving an overhang on all sides. Lay onions in a single layer on the bottom; place salmon fillet on top, skin-side down. Rub fillet with salt and pepper. Cover with lemon slices and star anise. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges well.
  • Bake in the preheated oven until salmon flakes easily with a fork, 35 to 40 minutes. Remove from oven, open foil carefully, and serve.

1 tablespoon grated lemon zest

  • Preheat oven to 400°. Cut four 18x15-in. pieces of parchment paper or heavy-duty foil: fold each crosswise in half, forming a crease. In a large bowl, mix wine, oil, salt and pepper. 8 phyllo sheets, thawed
2 to 3 tablespoons butter, melted
1/4 cup chopped fresh parsley
4 boneless, skinless salmon fillets, (6 ounces each)
Coarse salt and ground pepper
1 1/3 tablespoons creamed horseradish
1 egg, beaten

Steps:

  • Preheat oven to 425 degrees. Lay 1 phyllo sheet on a clean work surface. Brush with melted butter; sprinkle with 1 tablespoon parsley. Top with another phyllo sheet.
  • Season salmon fillets with salt and pepper. Place one fillet 3 inches from short end of dough; spread 1 teaspoon creamed horseradish on top.
  • Make salmon packet: Carefully fold the end of the dough over one fillet; gently fold in both of the long sides of the dough. Roll salmon over folded sides to form packet. Repeat process, making four packets. Brush tops and sides of packets with egg.
  • Place packets on a baking sheet; bake until golden brown, about 10 minutes. Serve hot.
