WASABI SALAD DRESSING
Was looking for some new salad dressing that has spunk but unusual enough that you won't find in any store. This definitely meets the need and also goes great with most any meat or fish: tuna, salmon, chicken, shrimp, beef, etc. This stores well in the fridge.

- Whisk rice wine vinegar, honey, soy sauce, wasabi paste, sesame oil, lime juice, and ginger together in a bowl to make dressing.

ASIAN-STYLE CRAB CAKES WITH WASABI CAPER SAUCE
Steps:
- Make wasabi caper sauce:
- Stir together all sauce ingredients and chill, covered, until ready to use.
- Make crab cakes:
- Wash leek well in a bowl of cold water, agitating leek, then lift out and drain.
- Whisk together whole egg, yolk, mayonnaise, and mustard in a large bowl, then stir in bell pepper, leek, ginger, and 3/4 cup panko. Stir in crabmeat and chill, covered, 1 hour. Divide mixture into 8 mounds and form into 8 (1-inch-thick) patties. Spread remaining 3/4 cup panko in a shallow dish, then carefully coat patties, 1 at a time, in panko.
- Heat 3/4 inch oil in a 10-inch heavy skillet over moderately high heat until it registers 350°F on thermometer. (Adjust heat as necessary; see cooks' note, below.) Fry crab cakes in 2 batches, turning over once, until golden brown, 4 to 6 minutes per batch. Transfer to several layers of paper towels to drain. Return oil to 350°F between batches. Serve crab cakes with sauce.

- Place cream cheese on a cutting board; split into two layers. Spread wasabi over bottom half; replace top layer., Press both sides into sesame seeds. Place on a shallow serving plate; pour soy sauce around cheese. Serve with crackers.

WASABI CAESAR
This is a great Caesar salad dressing recipe I came up with on my own. The base of it is similar to a recipe I used at an Italian restaurant I worked at, but I tweaked it a bit to add an Asian flair--excellent with Shrimp or especially grilled salmon!

Steps:
- It is suggested that you use a hand or regular blender or a food processor for this.
- You can whisk the ingredients together, but you MUST mix them VERY rapidly.
- Combine all ingredients in a bowl (except for the oils and cheese), thoroughly mix together.
- If using anchovies, you MUST use a blender or food processor to completely mince them and make them into a paste-like consistency.
- After combining the ingredients, SLOWLY begin to drizzle the oil (vegetable oil and, if used, sesame oil) into the mixture while the mixing device is turned on, or, if whisking, you are rapidly mixing all ingredients.
- Keep SLOWLY drizzling the oil into the mixture until all the oil is used.
- The resulting combination should be thick like mayonnaise.
- Now combine the cheese into the mixture for the finished result.
- I like the taste of it using the amounts of the spices as listed in the ingredients list, but any of those items, except for the oil and egg, can be adjusted to taste, or omitted.
