After seeing Sharon Coyler's "SALMON MACARONI SALAD" posted on JAP. It inspired me to do my own rendition of the recipe. With canned salmon, pasta shells, cucumbers,green onions,peas and cooked eggs. Now I get to use to use my very first home grown cucumber! Naturally I had to add, to the recipe horseradish sauce !! You should...

4- medium eggs, hard boiled
2 medium cucumbers
4-6 small green onions
2 large celery ribs
1 can(s) salmon, canned
1-1/2 c cooked pasta ( sm. shells)
2 Tbsp mayonnaise
1 Tbsp yogurt, plain
1-2 Tbsp horseradish sauce- (you know me!) ha!
1/2to3/4 c fresh cooked peas

Steps:

  • 1. Hard boil eggs...cool Pre-cook peas. Cool. Clean green onions, and celery. Slice thinly & set aside.
  • 2. Peel cucumber, cut and dice up. Set aside.
  • 3. Drain can of salmon, prepare salmon ready to add to salad. Set aside.
  • 4. Cook pasta shells, according to package directions, for a salad. Drain add a little oil, one to two tablespoons, mix.and cool.
  • 5. Mix mayo, yogurt, and horseradish sauce ...to your taste. Add veggies and cooked peas to cool pasta, then the dressing. Mix. Add salmon, toss gently.
  • 6. Pile all into a pretty bowl. Top with cooked eggs. Cover and keep cool till serving time.
  • 7. Picture of my cucumber plant. I picked the first cucumber today!!

1 lb canned salmon
8 medium potatoes, baked
1/2 cup milk
1 onion, chopped
salt and black pepper
1 cup breadcrumbs
2 tablespoons butter

Steps:

  • Flake the salmon and try removing all bones and skin as much as possible.
  • Slice tops of of the potatoes and scoop out. Put the shells **skin of the potatoes** off to the side. In a bowl, mash the potato meat, adding the milk and seasonings.
  • Add the salmon. Mix lightly.
  • Stuff the potato shells with the potato and salmon mixture.
  • Top it off with the bread crumbs. Dot with the butter.
  • Bake at 400* for 25 minutes.

3 tablespoons olive oil, divided, or as needed
16 jumbo pasta shells
1 pound fresh salmon
1 tablespoon minced onion
1 tablespoon minced garlic
3 tablespoons chopped fresh dill
1 pinch dried parsley
½ cup white wine
½ (8 ounce) package cream cheese, softened
salt and ground black pepper to taste
2 cups half-and-half
½ cup white wine
2 tablespoons cream cheese
2 tablespoons chopped fresh dill
1 tablespoon salted butter
1 tablespoon minced garlic
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a large baking dish lightly with 1 tablespoon olive oil.
  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes.
  • Meanwhile, heat 2 tablespoons oil in a well-seasoned frying pan over medium-high heat. Cook salmon with onion, garlic, dill, and parsley in the hot oil until it easily flakes with a fork, flipping once, about 10 minutes total. Add white wine and cream cheese. Fold into the fish mixture until everything is well coated. Season with salt and pepper.
  • Drain pasta shells. Stuff shells with mixture and place into the prepared baking dish. Cover with foil.
  • Bake in the preheated oven until bubbly and heated through, about 20 minutes.
  • While the shells are cooking, mix half-and-half, wine, cream cheese, dill, butter, garlic, salt, and pepper together in a saucepan and cook the sauce over medium heat until butter and cream cheese have melted, 5 to 7 minutes.
  • Remove shells from the oven and top with cream sauce. Serve.

2 frozen puff pastry shells or 2 slices toast
1/2 cup apricot preserves
1 tablespoon prepared horseradish
2 teaspoons cider vinegar
1 cup fully cooked salmon chunks or 1 can (7-1/2 ounces) salmon, drained, bones and skin removed
Minced chives, optional

Steps:

  • Bake pastry shells according to package directions. Meanwhile, combine the preserves, horseradish and vinegar in a saucepan. Cook over medium heat until heated through, about 5 minutes. Stir in salmon and heat through. Spoon into pastry shells or over toast. If desired, top with minced chives. Serve immediately.

1 (9 ounce) package frozen broccoli (or 9 oz fresh)
12 uncooked jumbo pasta shells
1 (6 ounce) can salmon, drained and flaked
1 cup cherry tomatoes, quartered
1/4 cup green onion, sliced
1/4 cup ranch dressing
1/4 cup reduced-fat mayonnaise
1 tablespoon chopped fresh parsley

Steps:

  • Cook broccoli, drain and cool.
  • Cook pasta shells to desired doneness, drain and cover with cold water to cool.
  • In bowl, combine cooked broccoli, salmon, tomatoes and onions. Add ranch, mayo and parsely. Stir gently to coat.
  • Drain water from cooked shells. Spoon about 1/4 cup salmon mixture into each shell.
  • Can refrigerate to cool more, or serve immediately.

A recipe from a Safcol brochure. This is supposed to be made with the really big pasta shells so it looks pretty - I can normally buy them from the local Italian grocery. But I think it would be just as good with small pasta.

210 g red salmon
500 g large shell pasta
250 g ricotta cheese
1 cup parmesan cheese, grated
300 ml cream
1 bunch fresh basil, chopped
2 tablespoons white wine
salt
pepper

Steps:

  • Cook pasta, drain and toss with a little oil and set aside.
  • Combine salmon, ricotta, half of the parmesan, half of the basil, salt and pepper.
  • Stuff the pasta shells with this mixture and place on a serving platter or baking dish.
  • Bring cream and wine to the boil, reduce heat and simmer.
  • Add remaining parmesan cheese and basil and pour over pasta.
  • Cover with foil and bake for 10-15 minutes in a moderate oven.
