BLACK BEANS WITH GARLIC, ONION AND JALAPENO

1 pound dry black beans, soaked in water overnight
2 teaspoons kosher salt, plus additional as needed
1 teaspoon garlic salt
2 ounces unsalted butter
1 jalapeno chile, seeded and diced
1 garlic clove, minced
1 large white onion, diced small
Freshly ground black pepper

Steps:

  • Add the beans to a large stockpot and cover with cold water. Bring to a boil, then reduce to a simmer and cook until the beans are slightly soft, 30 minutes to 1 hour. Turn off the heat and add the kosher salt and garlic salt.
  • Add the butter to a large, heavy-bottomed saute pan over medium heat, then add the jalapeno, garlic and onion. Saute until softened, 3 to 4 minutes.
  • Drain the beans, reserving the liquid, then add the beans to the saute pan and simmer for 10 minutes, adding the reserved cooking liquid if too dry. Season to taste and serve.

2 garlic cloves (I add more because I love garlic)
1 green pepper, minced
1 bay leaf
2 cups cooked black beans
1 teaspoon sage
1 dash hot pepper sauce, to taste

Steps:

  • Heat oil and add garlic, peppers, and bay leaf and saute until peppers are just barely soft (about 4 minutes) (DO NOT LET GARLIC BURN).
  • Add beans, sage and sauce and saute again until heated through (3 minutes).
  • Remove bay leaf and serve as a side dish or a dip.

1 tablespoon olive oil or 1 tablespoon lard
1/2 green bell pepper, finely chopped
1 small onion, finely chopped
3 scallions, finely chopped
1 ounce Canadian bacon, minced
2 garlic cloves, minced
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 bay leaf
2 (15 ounce) cans black beans, rinsed and drained
1/4 cup white wine (optional)
1/2 teaspoon sugar
1 1/2-3 cups chicken stock
salt and pepper

Steps:

  • Heat the oil or lard in a large nonstick skillet over medium heat. Add the bellpeppers, onions, scallions, bacon, garlic, cilantro, cumin, oregano, and bay leaf. Cook for 5 minures or until the vegetables are soft but not brown.
  • Stir in the beans and wine. Bring to a boil over high heat. Stir in the sugar and 1 1/2 cups of the stock or broth. Reduce the heat to medium and simmer for 5 minutes. Remove bay leaf.
  • Puree one-quarter of the bean mixture in a blender. Stir the puree into the simmering beans.
  • Simmer for 2 minutes more, or until thick but still soupy. If the bean mixture is too thick add, more stock or broth. Season w/ salt and pepper.

6 cups cold water
1/4 cup extra-virgin olive oil
1 1/2 tablespoons chopped fresh sage

  • Place beans in large saucepan. Add enough cold water to cover by 3 inches and let soak overnight.
  • Drain beans and return to pan. Add 6 cups cold water, 1/4 cup oil, chopped sage and garlic. Bring to boil. Reduce heat to medium-low. Cover partially; simmer until beans are just tender, stirring occasionally, about 45 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool. Cover and keep chilled. Rewarm before continuing.)
  • Using slotted spoon, transfer beans to bowl. Top with more oil.

I wanted some really tasty but lower calorie and low fat baked beans and came up with this recipe. It's delicious and my British husband had one taste and proclaimed "Oh! They are just like Heinz Baked Beans!" I'll take THAT as a compliment!

3 medium yellow onions
5 cups water
2 teaspoons apple cider vinegar
1 tablespoon Splenda sugar substitute, brown sugar
2 teaspoons yellow mustard
1/4 cup molasses
1/2 cup ketchup
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 cup turkey bacon, chopped
2 cups navy beans, dried

Steps:

  • Soak navy beans in 6 cups of water overnight.
  • In the morning drain the beans and place in a cast iron pot with 2 cups of chopped onions (2 whole medium onions) and 5 cups of water.
  • Boil the beans and onions on medium heat for 1.5 or 2 hours with the pot half covered.
  • (The beans are cooked when the skins begin to split and you can squish one with your tongue on the roof of your mouth.).
  • Preheat oven to 325 degrees.
  • Drain the bean/onion mixture and return to the cast iron pot with a fresh 5 cups of water.
  • Place a whole peeled medium onion in the center of the pot.
  • Mix the additional 7 ingredients (vinegar, Splenda, mustard, molasses, ketchup, salt and pepper) and stir into the pot.
  • Stir in the chopped turkey bacon.
  • Place the covered pot in the oven and bake for 4-6 hours, checking 2 or 3 times to make sure the beans are not drying out. If they appear too dry add another cup of water and continue cooking until they are your desired texture.

This may look like just plain chicken and green beans, but by dropping the oven temperature to 325 degrees and slow roasting for 1½ hours, these simple ingredients become so much more: The green beans, which are tossed with olive oil, sage and garlic, will no longer be snappy and bright green, but will slouch and sweeten. The chicken will be tender enough to pull apart with your fingers. (Its skin will be crisp but pale, so for browner skin, broil for a few minutes after roasting.) And the flavorful chicken drippings will mingle with the aromatics on the sheet pan, creating a spectacular, no-effort pan sauce.

1 1/2 pounds green beans, trimmed
Cloves from 1 head garlic (about 10 cloves), smashed and peeled
15 fresh sage leaves
6 tablespoons extra-virgin olive oil
Kosher salt (Diamond Crystal) and black pepper
2 1/2 to 3 pounds chicken leg quarters or bone-in, skin-on chicken thighs, patted dry
1 teaspoon sherry vinegar, apple cider vinegar or white wine vinegar

Steps:

  • Heat the oven to 325 degrees. Toss the green beans, garlic cloves and sage leaves with ¼ cup of the olive oil. Season with salt and pepper, and arrange in an even layer on a sheet pan. Rub the chicken with the remaining 2 tablespoons oil and 1 tablespoon salt. Arrange among the green beans and season with black pepper; scoot any green beans out from under the chicken. (It's okay if the green beans are clumped together.) Roast, tossing the green beans occasionally, until the chicken is cooked through, and the green beans are dark green and wrinkled, about 1 hour 30 minutes.
  • Transfer the chicken to a platter. Stir the vinegar into the green beans and season with salt and pepper to taste. Transfer the green beans and garlic to the platter, scraping all the pan drippings and browned bits from the pan.
  • Eat the chicken with the green beans, cloves of roasted garlic and a spoonful of the pan drippings. Optionally, if you'd like the chicken's skin to be more browned, return the chicken to the sheet pan and broil until golden.
