RUTH'S SECRET SWEET ICED TEA

Ruth's Secret Sweet Iced Tea image

Sweet and refreshing tea; back in the 1950's-60's my best friend's mom (Ruth) used to make this every day and served it poolside when we were kids. The "secret" is adding the sugar to taste to the strong brew, then adding ice cubes.

Provided by Treewoman

Categories     Beverages

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 5

9 -10 tea bags
ice cube
water (1/2 kettle full)
sugar (to taste)
1 lemon

Steps:

  • Place the tea bags in half of a large kettle of water and bring to a boil. Remove from heat and let steep for 15 minutes.
  • Remove tea bags and add sugar until the bitterness is gone. Add 3 trays of ice cubes (36 cubes) and stir.
  • Add juice of one lemon, or to taste. Slice the squeezed lemon and put in pitcher or glasses. Serve over ice.

SOUTHERN SWEET ICED TEA

Southern Sweet Iced Tea image

This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

SWEET TEA

Sweet Tea image

This sweet tea toes the line between just right and puckery sweet. The formula reflects the way my grandmother Leona Johnson made sweet tea: strong tea, lots of lemon juice and even more sugar. Start by adding half a cup of sugar to the batch, then add up to 4 more tablespoons to your preference. By making it extra potent, tart and sweet, this brew still tastes good even after the ice starts to melt.

Provided by Vallery Lomas

Categories     non-alcoholic drinks

Time 15m

Yield About 8 cups

Number Of Ingredients 5

8 black tea bags, preferably Lipton
1/2 cup granulated sugar, preferably pure cane, plus more to taste
6 tablespoons lemon juice (from about 2 lemons)
Ice cubes, for chilling and serving
Lemon slices, for garnish (optional)

Steps:

  • In a tea kettle or medium saucepan, heat 4 cups water until boiling. Remove from the heat and add the tea bags. Allow the tea to steep for 5 minutes. Gently squeeze the bags to release their concentrated tea, then discard the bags. Transfer the tea to a pitcher.
  • Stir 1/2 cup sugar into the hot tea until it has dissolved. Stir in the lemon juice. Add 4 cups water, then fill the pitcher with 2 cups ice.
  • Taste the tea to determine if you'd like to add up to 4 tablespoons more sugar. If adding sugar, stir until it dissolves.
  • Cover and refrigerate until the sweet tea is chilled throughout or up to 2 days. Serve in a large glass filled with ice, and garnish with a lemon slice if you'd like.

SIX RULES FOR THE BEST ICED TEA PLUS RECIPES | CANADIAN LIVING

From canadianliving.com
Published Jul 12, 2012
  • Use enough tea bags. When foods are served cold, the flavours become dull. A stronger tea - such as Darjeeling, Jasmine or green teas - is necessary to have a well-flavoured tea served cold.
  • Don't oversteep. If you prefer your tea stronger, use more tea bags rather than lengthening the steeping time. Allowing tea to overstep brings out the tannins in the tea and can make it bitter.
  • Add sugar to hot water. If you sweeten your tea, add the sugar to the hot tea in order to dissolve the grains. If you prefer to sweeten your tea afterwards as per each persons taste, use a simple syrup rather than granulated sugar which will leave sugar grains in your glass.
  • Cool before refrigerating. Putting hot tea into a cold fridge will make your tea cloudy. Allow your tea to cool before you refrigerate. If you do end up with cloudy tea, try adding a bit of boiling water to it – it will sometimes do the trick!
  • Keep it real. Don't use artificial lemon juice. Only use real fresh squeezed lemon juice from fresh lemons for the very best flavour.
