Pizza rustica (also known as pizzagaina) is traditionally served on Easter and for good reason--it is a showstopper and perfect to dish up on a special occasion. Although it takes a little bit of work to prepare, you can make it a day ahead and bring to room temperature before putting it on your holiday table.

1 tablespoon extra-virgin olive oil, plus more for the pan
6 large eggs and 4 large egg yolks
4 cups all-purpose flour, plus more for dusting (see Cook's Note)
Kosher salt and freshly ground black pepper
1 cup (2 sticks) unsalted butter, frozen, grated on the large holes of a box grater
1/4 cup freshly grated Parmesan (about 1 3/8 ounces)
16 ounces whole milk ricotta (about 2 cups)
One 4-ounce piece prosciutto, finely diced (about 3/4 cup)
One 6-ounce piece cooked ham (non-smoked), finely diced (about 1 1/4 cups)
One 6-ounce piece pepperoni, finely diced (about 1 1/4 cups)
One 6-ounce piece salami, finely diced (about 1 1/4 cups)
4 ounces provolone, finely diced (about 1 cup)
6 ounces shredded mozzarella (about 1 1/2 cups)

Steps:

  • Add the olive oil with 3 of the whole eggs to a small bowl and whisk to combine. Add the flour, 2 teaspoons salt and the frozen grated butter to a large bowl and stir and pinch with your hands until the mixture resembles coarse meal. Add the egg mixture and blend with a wooden spoon until large crumbles form (they should be slightly larger than a pea). Add 1/4 cup cold water, 1 tablespoon at a time, mixing well after each addition until a dough forms.
  • Transfer the dough to a work surface lightly dusted with flour and knead until the dough is smooth. Form the dough into a large round disk and divide the dough into 2 pieces, two thirds for the bottom crust and one third for the top crust. Shape the dough pieces back into round disks. Wrap each in plastic wrap and refrigerate until the dough is firm, about 45 minutes. (The dough can be refrigerated up to 24 hours at this point but will need to sit at room temperature for about 10 minutes before rolling.)
  • Add 1 of the egg yolks to a small bowl along with 1 teaspoon water. Whisk to combine, then set the egg wash aside. Add the remaining 3 whole eggs and 3 egg yolks to a large bowl along with the Parmesan, ricotta and several heavy grinds black pepper. Whisk until well combined and smooth. Add the prosciutto, ham, pepperoni, salami, provolone and mozzarella and stir until combined. Set aside.
  • Position a rack on the lowest shelf in the oven and preheat to 350 degrees F. Lightly grease a 9-inch springform pan with olive oil.
  • Roll out the larger piece of dough on a flat work surface lightly dusted with flour to a 16-inch round a little less than 1/8-inch thick. Transfer the dough to the prepared springform pan, pressing the dough into the inside edges and up the sides of the pan, leaving any overhang. Spoon the ricotta mixture into the dough-lined pan and spread it out into an even layer.
  • Roll out the remaining piece of dough on a lightly dusted surface into a 13-inch round a little less than 1/8-inch thick. Place this dough over the filling, gently pressing into the filling and the dough at the edges of the pan. Trim the overhang of both doughs flush with the top of the pan. Pinch the edges of the doughs together to seal, then tuck under so they are directly on top of the filling and on the inside of the pan. Brush the reserved egg wash over the top and edges of the dough. Cut four 1-inch slits on the top piece of dough using a paring knife, then place the pan on a baking sheet.
  • Bake until the crust is deep golden brown, and a long wooden skewer inserted into one of the slits comes out clean, about 2 hours, rotating the pan once halfway through the cooking time.
  • Let stand for 2 hours at room temperature, then chill in the refrigerator until completely cooled, at least 4 hours and up to 24 hours.
  • Remove from the refrigerator and allow to sit at room temperature for 1 hour before removing the outside ring of the springform pan and transferring the pizza to a serving platter. Cut into wedges to serve.

1 10-ounce tube refrigerated pizza dough, rolled to 12-inch square
1 garlic clove, minced
18-ounce package shredded pizza blend cheese
1 small green bell pepper, thinly sliced
1 small red onion, thinly sliced
1/3 cup sliced black olives
1 tablespoon chopped fresh marjoram

Steps:

  • Preheat oven to 400°F. Heat oil in medium ovenproof skillet over medium-high heat. Ease dough into skillet (dough will extend partially up sides). Cook until golden on bottom, about 4 minutes. Turn dough over. Top with remaining ingredients. Transfer skillet to oven; bake until cheese melts and toppings are hot, about 10 minutes. Cut into quarters and serve.

Baked Rigatoni With Red Peppers and Green Olives image

This baked pasta is based on the best pizza topping combo: peppers and olives. Build a tomato sauce with jarred roasted red peppers and green olives, then toss with pasta and lots of mozzarella.

2 Tbsp. extra-virgin olive oil
1 medium onion, finely chopped
4 garlic cloves, thinly sliced
1 (16-oz.) jar roasted red peppers, drained, finely chopped (about 1¾ cups)
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
Freshly ground black pepper
1 cup green olives, smashed, pits removed
2 Tbsp. double-concentrated tomato paste
¼ tsp. crushed red pepper flakes
1 (14-oz.) can whole peeled tomatoes
1 lb. rigatoni, penne, or ziti
Kosher salt
4 Tbsp. unsalted butter
2 tsp. finely chopped oregano
2 oz. Parmesan, finely grated, divided
1 lb. fresh mozzarella, torn into bite-size pieces, divided
Handful torn basil leaves (for serving)

Steps:

  • Heat oil in a medium Dutch oven or other heavy pot over medium-high. Cook onion and garlic, stirring occasionally, until onion is slightly softened, about 4 minutes. Add roasted red peppers and salt; season with black pepper. Cook, stirring occasionally, until mixture is jammy, 8-10 minutes. Add olives, tomato paste, and red pepper flakes and cook, stirring often, until tomato paste is slightly darkened in color, about 3 minutes. Add tomatoes, crushing with your hands as you go, and their liquid and cook, stirring often, until slightly thickened, about 4 minutes.
  • While sauce is cooking, place a rack in middle of oven; preheat to 350°. Cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente (about 2 minute less than package directions; pasta will continue to cook in the oven). Drain pasta, reserving ⅓ cup pasta cooking liquid.
  • Add pasta and reserved pasta cooking liquid to sauce. Reduce heat to medium and stir in butter, oregano, and half of Parmesan. Cook, stirring constantly, until sauce is thickened and glossy and coats pasta, about 2 minutes. Remove from heat and stir in half of mozzarella.
  • Transfer pasta to a 13x9" baking dish and spread into an even layer. Scatter remaining Parmesan and mozzarella over. Bake until bubbling around the edges, 15-20 minutes.
  • Heat broiler. Broil pasta until top is brown and crisp in spots, about 3 minutes. Let cool 5 minutes, then top with basil for serving.

1 cup warm water (100 degrees F)
1 1/2 teaspoons yeast or 1 1/2 teaspoons fast rising yeast
1 teaspoon sugar
1/2 teaspoon salt
2 1/2-3 cups flour (can do half white and half wheat)
1 tablespoon olive oil
1 tablespoon minced garlic
1 -2 teaspoon dried Italian herb seasoning
1/2 green bell pepper, cut in strips
3 -4 white button mushrooms, thinly sliced
1/3 medium onion, cut into thin strips
10 -15 black olives, smashed in half
4 ounces hunt tomato sauce with basil garlic and oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon oregano
1/4 teaspoon pizza seasoning
1/4 teaspoon basil
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
5 ounces equivalent shredded reduced-fat mozzarella cheese or 1 (12 ounce) bag shredded soy cheese (Veggie Mozzarella shreds)

Steps:

  • Mix water with yeast and sugar in a large mixing bowl, set aside for 5 minutes to let it bloom.
  • Add the garlic, oil, salt and herbs.
  • Add about 1 1/2-2 cups flour, mix well.
  • Pour onto a floured board, add remaining flour as needed,.
  • knead for about 5 minutes (this dough is really soft).
  • Cover with the mixing bowl.
  • let rise about 20-30 minutes or until doubled in bulk.
  • Punch dough down, knead on lightly floured board, oil your pizza pan.
  • Roll out dough in the pizza pan.
  • Spread dough with the sauce.
  • Sprinkle with the herbs, these are approximate measurements, do to your taste please.
  • Decorate with the green peppers, mushrooms, onions and olives.
  • Sprinkle with cheese or sliced vegan cheese.
  • Place in a preheated 425 degree oven.
  • Bake until golden on bottom, take out and spray the crust with cooking spray.
  • Return to oven, broil to melt cheese and to make it golden, less than a minute.
  • Let it rest for 2 minutes and cut.

  • Using a wooden spoon or your hands, thoroughly mix all-purpose flour, whole wheat flour, instant yeast, salt, 1 Tbsp. oil, and ¾ cup plus 2 Tbsp. lukewarm water in a large bowl just until no dry spots of flour remain, about 30 seconds. (If using active dry yeast, mix together yeast and water. Let sit 5 minutes, then stir in both flours, salt, and oil.) Cover bowl with a dish towel and let sit 5 minutes.
  • Using a wet hand or a bowl scraper, reach slightly under dough and lift one side up from the bottom and pull it up as far as you can without breaking it (this won’t be very far at first), then fold it over and toward the center. Rotate bowl 90° and repeat process. Repeat two more times. Cover bowl again and let sit another 5 minutes, then repeat folding process. Let sit and fold twice more (you will have folded dough a total of 4 times, with a 5 minute rest in between each). Your dough will get smoother and stretchier as you go and sit a bit rounder in the bowl. (You’re building the gluten structure here so that the dough will have lots of little air pockets when it bakes.) Cover bowl with plastic wrap or a silicone lid and chill at least 12 and up to 72 hours. (Dough should look bubbly and full of life, but don’t worry if it hasn’t doubled in size—it will continue to grow during the second rise.)
  • About 3 hours before you want to eat, take the dough out of the refrigerator. Pour 2 Tbsp. oil into a 13x9” pan; transfer dough to pan and turn to coat. Cover with a kitchen towel and let rise at room temperature until doubled in size—it should look airy, puffy, and nearly fill out the pan, 2–5 hours, depending on the temperature of your room. (If it’s cold in your kitchen, place dough in the oven with the light on. It’s better to be patient than to rush this process. If your dough has risen before you’re ready to bake, you can chill it until you are ready. Let it sit at room temperature 5–10 minutes to take the chill off before baking.)
  • Meanwhile, make the sauce. Purée tomatoes, tomato paste (if using), salt, anchovies (if using), garlic, and 2 tsp. oil in a food processor, blender, or a medium bowl with an immersion blender. It should look smooth and lighter in color. Season sauce with pepper. If sauce tastes super acidic, stir in sugar. (If using tomato purée, finely grate in garlic, finely chop anchovy, then mix until well combined.) You should have ¾ cup sauce.
