2 teaspoons olive oil
2 tablespoons minced shallots
1 clove garlic, minced
1 ½ cups chanterelle mushrooms, finely chopped
1 tablespoon brandy
½ teaspoon minced fresh thyme
1 tablespoon minced fresh parsley
¼ teaspoon salt and pepper to taste
1 egg
¼ cup milk
¼ cup shredded Swiss cheese
2 tablespoons cream cheese, softened
2 slices bacon, cooked and crumbled
24 mini phyllo tart shells

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat olive oil in a large skillet over medium heat. Saute shallots until they begin to brown. Add garlic and mushrooms, and cook until tender. Deglaze pan with brandy, and season with thyme, parsley, salt, and pepper. Remove from heat, and allow to cool.
  • In a large bowl, combine egg, milk, Swiss cheese, cream cheese, and bacon. Fold in mushroom mixture. Spoon evenly into phyllo cups, and place cups on baking sheet.
  • Bake in preheated oven for 15 to 20 minutes, or until filling is set.

1 tablespoon butter
2 slices lean bacon, chopped
1 small onion, finely chopped
1 pound chanterelle mushrooms, cut lengthwise
salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Melt butter in a skillet over medium heat. Cook bacon and onion until onion is soft and translucent and bacon is crisp, about 5 minutes.
  • Add chanterelle mushrooms and simmer in the skillet until liquid has completely boiled off, about 10 minutes. Sprinkle with parsley and serve immediately.

4 slices lean bacon, finely diced
3 small onions, finely diced
1 ½ pounds chanterelle mushrooms, cleaned and chopped
½ (16 ounce) container sour cream
2 teaspoons all-purpose flour
salt and freshly ground black pepper to taste
2 tablespoons chopped fresh flat leaf parsley, or to taste

Steps:

  • Heat a skillet over medium-high heat and cook bacon until crisp, about 3 minutes. Add onions and cook until soft and translucent, about 5 minutes. Add chanterelle mushrooms, cover pan, and cook until mushrooms are soft, about 15 minutes.
  • Stir together sour cream and flour. Add sour cream mixture to mushrooms and season with salt and pepper. Mix to combine and cook until cream is hot, about 1 minute. Stir in chopped parsley right at the end.

320g sheet puff pastry
1 beaten egg
125g shop-bought creamed spinach
8 cherry tomatoes , halved
50g roquefort , crumbled
3 rashers streaky smoked bacon

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Roll out the pastry onto a lined baking sheet. Using the tip of a sharp knife, mark a 2cm border around the edge. Brush the pastry all over with the egg and bake for 10 mins. Leave for 5 mins, then press down the centre with your hands, leaving the border. Top with the spinach, tomatoes and roquefort, and return to the oven for 10-15 mins. Meanwhile, fry the bacon until very crispy. Drain and chop or break into shards and scatter over the tart.

1 1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon baking powder
1/4 cup cream cheese, cold
1 egg yolk
1 tablespoon very cold water
1 ½teaspoons cider vinegar
-Filling-
3 thick slices bacon, chopped
3/4 cup thinly sliced scallions
1 garlic clove, minced
½teaspoon chopped fresh sage
½teaspoon chopped fresh thyme leaves
1 1/4 pound chanterelles, thinly sliced
3 tablespoons sun-dried tomatoes in oil, drained and chopped
2 tablespoons merlot
4 ounces Roquefort cheese, crumbled

Steps:

  • -Directions- Pastry - Place flour, salt, baking powder, cream cheese, egg yolk, water and vinegar in a food processor. Process until a smooth dough forms. Remove from food processor and slip into a food storage bag. Refrigerate for 30 minutes. Filling - In a large skillet over medium heat, cook the bacon. Add the green onions, mushrooms and garlic. Sauté for 3 minutes, or until mushrooms start to soften. Stir in sage, thyme, sun dried tomatoes, and merlot. Continue to cook, stirring, for 2 minutes more. Remove from heat and let cool to room temperature. Preheat an oven to 400°F. On a floured surface, roll out the dough into a 12-inch round. Place on an ungreased baking sheet. Spread the mushroom mixture over the dough, leaving a 1 ½-inch border. Sprinkle with the Roquefort. Fold the border over the mushrooms and cheese, pleating the edge to make it fit. The center will be open. Bake until golden brown, 30 to 40 minutes. Remove from the oven, let stand for 5 minutes, then slide the tart onto a serving plate. Cut into wedges and serve warm.

This is a recipe reproduced from an episode of Top Chef Canada 2. The original recipe said it made 12 tarts, but I only got 8 out of the filling.

1/4 cup walnuts (loosely chopped)
1/4 cup all-purpose flour
1/2 cup white sugar
1/2 teaspoon salt
2/3 cup butter (chilled, cubed)
cold water
1/2 cup smoked bacon (loosely chopped)
2 gala apples (cored, halved, thinly sliced)
1/2 cup white sugar
1/4 cup apple juice
1 tablespoon honey
1 teaspoon cinnamon
1 teaspoon chili powder
1 teaspoon nutmeg
2 teaspoons all-purpose flour

Steps:

  • Tart Crust.
  • Place the walnuts into a food processor and pulse until finely ground. Add in the next 3 ingredients and pulse a few times to combine. Next, toss in the cubed butter and pulse until the flour/walnut mixture resembles a small crumble. Slowly pour in the cold water while pulsing until a soft dough forms. Remove from food processor and place onto a floured surface. Form into a ball, wrap in plastic wrap and let chill in the fridge for about an hour.
  • Apple Bacon Filling.
  • Cook the bacon in a large pan on the stove until very crispy. Remove from pan, leaving some of the rendered bacon fat. Place the apple slices in the pan and sauté for 5 minutes on medium-high heat. Next, add in the next six ingredients, stir to combine and let simmer on low heat for another 10 minutes. Carefully sprinkle in the flour to help the filling thicken. Return the crispy bacon to the pan and remove from heat to let cool before filling the tarts.
  • Assembly.
  • Preheat your oven to 375 degrees. Roll out the chilled dough to approximately 1/4" thickness and press into prepared tart shells or tray. Fill each tart with a couple spoonfuls of the apple bacon filling and bake in the oven until golden brown, about 15 minutes.

1 large onion, thinly sliced, separated into rings
8 slices OSCAR MAYER Bacon, chopped
1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup KRAFT Shredded Swiss Cheese

Steps:

  • Cook onions and bacon in skillet on medium heat 10 to 12 min. or until onions are tender, stirring frequently. Remove from heat.
  • Heat oven to 400°F. Unroll pie crust on baking sheet. Mix cream cheese and sour cream until blended; spread onto crust. Spoon onion mixture over cream cheese mixture; spread to within 2 inches of edge of crust. Sprinkle with Swiss cheese. Fold edge of crust over filling, leaving opening in center and pleating edge of crust as necessary to fit.
  • Bake 12 to 15 min. or until crust is lightly browned. Cool slightly.
