BOURBON SWEET POTATO FLUFF
You know us Southerners...we love our bourbon and sweet potatoes and pecans. This is a combination of the three. This recipe freezes well. From my mother's big plastic bag of recipes.

Steps:
- Put sweet potatoes, butter, eggs, pineapple, condensed milk, brown sugar and bourbon into bowl. Beat with mixer. The more you beat the fluffier. Pour into buttered casserole.
- Topping: Mix and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes.

Here's what you need: sweet potatoes, cooking spray, kosher salt, maple syrup or cinnamon butter, pumpkin brittle, marshmallow fluff, mini chocolate chip

Steps:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Thoroughly clean and dry potatoes. Slice in half lengthwise. Spray potatoes liberally with cooking spray season with salt. Place potatoes cut side down on prepared baking sheet.
- Roast potatoes for 30 minutes or until the skin is crispy and the center is tender. Set aside to cool for 5 minutes.
- Spoon the flesh out of the potato leaving a ¼ inch (½ cm) border of potato in the skin. Place flesh in a bowl and set the skin aside.
- To the bowl with the scooped out potato, add maple syrup or cinnamon butter and stir until smooth. Spoon seasoned potato back into the skins.
- Top with peanut brittle, drizzle with warm marshmallow fluff, and garnish with chocolate chips, to taste.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix the mashed sweet potatoes, white sugar, eggs, 1/2 cup of the butter or margarine, vanilla and flaked coconut. Place in heat proof 2 quart sized casserole dish.
- With a fork mix the brown sugar, flour, pecans and the remaining 1/3 cup of butter or margarine. Sprinkle over the top of the potato mixture. Bake at 350 degrees F (175 degrees C) for 30 minutes.

If you like sweetness, this is for you. I thought it too sweet but my family adored it. So here it is...the sweetest sweet potato casserole I've ever eaten.

- Bake 3 large sweet potatoes until tender. When cool enough to handle, peel and maish. Cream butter and sugar and add beaten eggs. Stir in potaotes and remaining ingredients except marshmallows. Blend well. Pour into greased baking dish. Bake at 375 degrees for 20 minutes. Remove and top with marshmallows. Reduce oven to 300 degrees and return to oven until tops of marshmallows are browned.

- 1. Mix potato, sugar, salt, eggs, 1/3 stick margarine, milk,vanilla, and spices together. Pour into greased baking dish.
- 2. Topping: Mix brown sugar, flour, chopped pecans, and rest of margarine together. Mix thourghly and sprinkle of fluff.
- 3. Bake for 35 minutes at 350 degrees.
