Traditional Hungarian Christmas cookies or just nice for breakfast in the morning with coffee. The filling can also be used for kolach. These are very good, but fairly labor intensive. We usually make these over two days, making the dough up the first day and refrigerating overnight, then assembling and baking the next day. We also usually have one person roll them out while 2 or 3 people finish assembling them, so it goes much faster.

3 cups flour, sifted
1 cup unsalted butter
4 egg yolks
1/3 cup sour cream
2 teaspoons lemon extract or 2 teaspoons vanilla
3 cups poppy seeds, freshly ground (2/3 lb)
1 1/2-2 cups sugar
3/4 cup milk
1/2 cup butter
3/4 teaspoon vanilla
flour, to dust work surface
powdered sugar, to dust work surface (optional)
2 tablespoons powdered sugar or 2 tablespoons vanilla powdered sugar, to dust cookies

Steps:

  • In a large bowl, cream butter and egg yolks; add sour cream and extract.
  • Mix in flour; mix until smooth.
  • Gather dough into a ball.
  • Turn out onto lightly floured surface.
  • With palms of hands, shape dough into a smooth roll.
  • Slice dough into 48 pieces (if dough is too soft and sticky to handle, chill for a short time).
  • Roll each piece into a ball (about the size of a walnut).
  • Can be refrigerated overnight at this point.
  • In a heavy 1 1/2 qt saucepan, combine all filling ingredients and mix together.
  • Cook over low heat, stirring constantly until mixture is slightly thickened (5 minutes).
  • Remove from heat and cool.
  • Filling should be smooth and easy to spread, if on standing it thickens too much, stir in a little milk.
  • Preheat oven to 350°F.
  • Lightly sprinkle work surface with flour or powdered sugar.
  • Roll one dough ball out at a time into a circle 1/16-inch thick.
  • Place 1-2 teaspoons of filling in the middle of each circle.
  • Gently lifting nearest edge, roll over to cover filling (continuing to roll so that the dough overlaps on the bottom); pinch the ends slightly around the filling and shape into a crescent by curving the ends in slightly.
  • Place crescent onto lightly greased cookie sheet so that the overlapped side remains on the bottom.
  • In this way, make crescents from each of the remaining dough balls, sprinkling the work surface lightly between each cookie.
  • Bake until lightly browned 10-15 minutes; remove to cooling racks.
  • When cool, sprinkle with powdered sugar.

Special cookies to celebrate the wisemen visiting the infant Christ. We save these cookies until AFTER Christmas. Hidden inside each mound of dough is a sweet surprise. Make or decorate them with three different shapes or sprinkle colors to signify Gold, Frankincense & Myrrh.

1 cup butter
1 cup creamy peanut butter
1 cup brown sugar, packed
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
3 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (16 ounce) bag candy bars, bite size (Dove, Reeses, Andes Mints, Milky Way, OR Snickers)
buttercream frosting
2 1/4 ounces yellow sugar (gold)
2 1/4 ounces blue sugar (frankincense)
2 1/4 ounces red sugar (myrrh)

Steps:

  • Combine butters and sugars until light and fluffy.
  • Add eggs one-at-a-time and blend well, then add vanilla.
  • In a large bowl, mix dry ingredients, add to butter-egg mixture, mixing well to blend.
  • Cover dough; chill for 2-3 hours.
  • Unwrap chocolates (hide them from the kids and practice restraint in snitching!).
  • Preheat oven to 325. Grease two cookie sheets.
  • Divide dough into 1 tablespoon pieces, roll into a ball and flatten in hand.
  • Place one piece of chocolate candy in center, pull cookie dough up and around, forming a ball shape.
  • Place on cookie sheet and bake for 12 minutes. Cool on wire rack.
  • Divide cooled cookies into three equal sets. Using a cake decorator "writing" tip OR a zipper bag with the corner cut off, filled with butter cream frosting, decorate the tops of the sets as follows:.
  • Set 1 over each cookie: spiral around the top; immediately sprinkle with one of the colored sugars.
  • Set 2 over each cookie: make a stylized flower shape (like a daisy or a posy); sprinkle with one of the other colors.
  • Set 3: make a criss-cross woven shape; sprinkle with remaining colored sugar.
  • Set cookies aside in a single layer to dry.
  • Store in covered container with waxed paper between layers.
  • SERVING: Include some of each color and remember the wonderful gifts of love presented to Jesus by the magi from the East. And what gift have YOU given to the Lord?.
  • BRILLIANT IDEA: Place the Reeses right side up for one shape and upside down for another. DOVE bars are simply the B-E-S-T and shouldn't be squandered on wishy-washy chocolate lovers.

The holiday season at DH's Grandparents' house in Chicago was always filled with interesting sweets shared by friends and neighbors from various European heritages. I found this treasure in DH's Grandmother's recipe box. She clipped it from the "Reader's Exchange" of the Chicago Daily News (which published its last edition in 1978). It was submitted by a Mrs. Mikosz and I've shared it here with her careful instructions. There was no yield included so I guessed. Please let me know how many you end up with. (Baking and chilling time are estimated too.)

1/2 lb butter
1/2 lb cream cheese
2 1/2 cups cake flour
1/2 lb walnuts, ground
1/2 cup sugar
milk, or (for moistening)
egg white, beaten (for moistening )
confectioners' sugar (for rolling and for dusting)

Steps:

  • Cream together thoroughly the butter and cream cheese.
  • Blend in the flour.
  • If mixture is sticky add a little more flour until the dough is easy to handle.
  • Divide dough into four equal balls; flatten, then wrap each in waxed paper and chill thoroughly.
  • To make filling, mix together walnuts and sugar, adding enough milk or beaten egg white to make a paste-like mixture.
  • One at a time, roll out each chilled piece of dough (use confectioner's sugar for rolling as you would use flour in making pastry), until a little thinner than pie dough.
  • Cut into 2-inch squares.
  • Put 1/2 teaspoon filling in the middle of each square.
  • Roll up. Seal ends. (Mrs. Mikosz does not say if you are to roll them end-to-end like a log or corner-to-corner. I remember seeing many corner-to-corner cookies so will try both and see how they turn out - please let me know what you do too).
  • With a fork, dipped in confectioner's sugar, shape into cresents.
  • Bake in a preheated 375F oven, on ungreased cookie sheets, for 20 minutes, or until golden. (dharmabean shared that 15 minutes was enough in her oven - see her review).
  • Cool on rack.
  • Sift confectioner's sugar over the tops.

This is an old family recipe. We make them every Christmas and there are never enough. The dough is easy to work with and they are easy to make!

½ pound butter
2 cups all-purpose flour
¾ cup sour cream
1 egg yolk
¾ cup finely ground walnuts
¾ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Cut butter into flour in a bowl using 2 knives or a pastry blender until the mixture resembles coarse crumbs. Add sour cream and egg yolk; mix well. Shape the dough into a ball. Wrap in plastic wrap and refrigerate, 8 hours to overnight.
  • Combine walnuts, sugar, and cinnamon in a small bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 baking sheets.
  • Cut dough into 4 equal pieces. Roll each piece into a 1/8-inch thick circle on a lightly floured surface. Spread 1/4 of the walnut mixture on each circle; cut each circle into 12 wedge-shaped pieces with a pizza wheel.
  • Shape each piece of dough into a crescent by rolling dough from the wide end of the wedge into the center. Transfer cookies carefully to the baking sheets.
  • Bake in the preheated oven until golden, 20 to 25 minutes. Watch cookies carefully as they bake; their bottoms tend to brown faster than their tops.

  • Work them.
  • Roll in balls Let rise 1/2 hour-and roll and cut in squares.
  • Spread filling over square and then roll like crescents.
  • Let raise 1/2 hour after filled Bake for 20-25 minutes at 350 Roll in powdered sugar when cool.
