WEIGHT WATCHERS PEPPERY POPOVERS

Steps:
- Preheat oven to 450. Spray an 8 cup muffin tin with nonstick spray.
- Beat eggs with electric mixer at medium speed, until frothy. Beat in milk, flour, salt, and pepper.
- Spoon 1/4 cup batter into each cup. Bake 15 minutes, reduce oven temp to 400 and bake until browned, about 10-12 minutes longer. Serve immediately.

BLACK PEPPER AND GRUYERRE POPOVERS
These are so easy. They are comical to look at, as they pop up tall out of the pan like a bread version of a jack-in-the-box. They have a rustic, crunchy exterior, and a delicate and light interior. Steps:
- Preheat oven and popover pan to 400°F
- Combine all ingredients in a food processor. Process the mix for 30 seconds.
- Divide 1 tsp room temperature butter between the 6 popover tins.
- Pour the batter immediately into the pans. It should come at least halfway up the pans.
- Bake them for 35 minutes.
- Enjoy!

- Preheat oven to 450 degrees F (230 degrees C). Grease and flour six 6-ounce custard cups.
- In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat. Fill custard cups 1/2 full.
- Bake at 450 degrees F (230 degrees C) for 20 minutes. Decrease oven temperature to 350 degrees F (175 degrees C) and bake for 20 minutes more. Immediately remove from cups and serve piping hot.

- Place egg substitute in a shallow dish. Place cornflake crumbs in a separate shallow dish. Dip stuffed peppers into egg substitute and then roll in cornflake crumbs to coat.
- Transfer peppers to prepared baking sheet and coat with cooking spray. Bake until filling is bubbly and outside begins to brown, about 30 minutes. Serve hot.
