2 cups plain flour (can use wholemeal but they will be denser)
4 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon sugar
1 tablespoon butter
1 tablespoon freshly chopped rosemary (1tsp dried)
1 cup milk (have use soya milk too, also good)

Steps:

  • Sift dry ingredients in a bowl and rub in butter,add rosemary and milk and combine to form a soft dough.
  • Roll out on to a floured board to 1 1/2 inch thickness and cut into 2 inch rounds.
  • Place on a greased baking tray,brush with a little milk and bake in a pre-heated oven 220c (425f) for12 minutes.

LEMON-ROSEMARY SCONES

3 cups all-purpose flour, plus more for flouring
2/3 cup granulated sugar
1 tablespoon plus 1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) cold unsalted butter, cut into pieces
1 cup heavy cream
1 egg
2 lemons
Leaves from 2 rosemary sprigs (or 4 if they're small sprigs), finely minced
5 cups powdered sugar
1/2 cup whole milk, plus more if needed for thinning

Steps:

  • Preheat the oven to 350 degree F. Line 2 baking sheets with parchment paper or silicone liners.
  • Place the flour, granulated sugar, baking powder and salt into a sifter or fine-mesh strainer, then sift the mixture into a large bowl until it's all combined. Throw the butter pieces into the bowl and use a pastry cutter to cut the butter into the dry ingredients.
  • Measure the cream in a spouted measuring cup and crack in an egg. Zest one of the lemons and add the zest to the cream. Add half of the rosemary to the mixture. Whisk together, then drizzle it into the flour-butter mixture, stirring gently with a fork until combined and a dough forms.
  • Turn the dough onto a floured surface and lightly press it together until it forms a rough rectangle. Use a rolling pin to roll into a rectangle about 1/2 inch to 3/4 inch thick. Use your hands to help with the forming if necessary. The final rectangle should be about 18 inches by about 10 inches.
  • Use a knife to trim the dough into a symmetrical rectangle, then cut the rectangle into 12 symmetrical square/rectangular pieces. Next, cut each piece in half diagonally to form smaller triangles. Transfer the triangles to the prepared baking sheets. Bake until just barely golden brown, about 18 minutes, then allow to cool completely.
  • While the scones are cooling, make the glaze: Combine the powdered sugar and milk in a large bowl. Add the juice of the lemon you zested and whisk the mixture together. Zest the second lemon and add the zest to the bowl. Add the rest of the rosemary and whisk it until it's all combined. Add a little extra milk if it needs thinning.
  • Position a cooling rack over a baking sheet. When the scones are completely cooled, drop them one by one into the glaze. Flip them over to coat. Transfer them to the cooling rack to allow the excess glaze to drip off. Allow the glaze to set completely before serving.
  • The scones will last for several days in an airtight container.

1 1/2 c very cold unsalted butter ( 3 sticks )
3 c all purpose flour, plus enough to roll out the dough on
3/4 c cake flour
1 3/4 c cornmeal
1 Tbsp plus 1/2 tsp. baking powder
2 Tbsp stemmed and finely chopped rosemary
3/4 c light brown sugar
1 large egg plus 1 egg yolk
2 1/2 Tbsp honey
1/2 c plus 2 tbs. heavy cream
1 Tbsp butter, melted
1 Tbsp sugar

Steps:

  • 1. Slice and finely chop cold butter and put in freezer for up to 15 minutes whil you gather and measure out the rest of the ingredients - turn on oven to pre-heat at 400. Combine the flours, cornmeal, baking powderbrown sugarand chopped rosemary in the bowl of a food processor. Then takethe chopped frozen butter and as you pulse in short pluses add it in and pluse just till the butter is mixed into the dry ingredients, it will look and have a texture of sand and pebbles ,then it will be time to add in the whole egg and the egg yolk, honey and cream, and mix them in with short , quick pulses, working the dough as little as possiable.
  • 2. turn the dough out on a lightly floured work surface, knead the dough gently for a few seconds to bring it togeather, and rollit out to 3/4 inche thick, with a lightly floured rolling pin.
  • 3. cut scones out of dough with a square cookie cutter or with a knife into 3 inch squares and arrange them 1 inch apart on a parchment lined baking sheet, lightly roll the leftover dough back togeather and cut out more scones , Brush the tops with the melted butter and dust them with the sugar, if you like you can press a sprig of rosemary into each one of them. Bake for 25 to 30 minutes, untill golden brown and firm. serve warm or at room temp.

CHEDDAR & SWEETCORN SCONES



Cheddar & sweetcorn scones image

Number Of Ingredients 10

2 large sweetcorn cobs (or 250g sweetcorn kernels from a can, drained weight)
350g self-raising flour
1 tsp baking powder
2 tsp English mustard powder
¼ tsp ground cayenne or paprika , plus extra for sprinkling
few thyme sprigs, leaves picked
50g cold unsalted butter , cut into cubes
175g cheddar , grated
175ml semi-skimmed milk , plus extra for brushing
juice ½ lemon

Steps:

  • Bring a pan of salted water to the boil. Hold a corn cob at a right angle to the chopping board, then run a sharp knife down the length of the cob, as close to the core as you can get, slicing away the rows of corn. Boil the kernels for 4 mins or until just tender, then drain well.
  • Heat oven to 220C/200C fan/gas 7. Mix the flour, baking powder, mustard, cayenne, 1 tsp salt and 1 tsp thyme leaves in a large bowl, then rub in the butter until the mix looks like fine crumbs. Tip in most of the cheese and all of the corn. Mix the milk with the lemon juice, then stir into the bowl to make a slightly sticky dough. Don't over-work the dough.
  • Tip the dough onto the floured work surface, knead 2-3 times to smooth a little, then divide into 10 balls. Shape each roughly with your hands and put onto a floured baking sheet. Brush each with a little milk, then scatter with a little cheese, cayenne and a few thyme leaves. Bake for 10-12 mins or until the scones are risen, golden and sound hollow when tapped on the bottom. Cool on a rack.

Everyone who tries these scones thinks they're delicious! To save a little time in the morning, combine the dry ingredients and cut in the butter the night before. I usually stir in the crumbled bacon at that time, too. Cover and refrigerate overnight and proceed with the recipe the next morning. 2-1/2 cups all-purpose flour
1/2 cup sugar
2-1/2 teaspoons baking powder
1-1/2 teaspoons pumpkin pie spice or ground cinnamon
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup cold butter
4 bacon strips, cooked and crumbled
1/2 cup mashed sweet potatoes
1/4 cup plain Greek yogurt
1 large egg, room temperature
2 tablespoons maple syrup
1 tablespoon 2% milk
1 tablespoon sugar

Steps:

  • Preheat oven to 425°. In a large bowl, whisk the first 7 ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in bacon. In another bowl, whisk sweet potatoes, yogurt, egg and maple syrup until blended; stir into crumb mixture just until combined., Turn onto a floured surface; knead gently 10 times. Divide dough in half. Pat each half into a 6-in. circle. Cut each into 8 wedges. Place wedges on a greased baking sheet. Brush with milk; sprinkle with sugar. Bake until golden brown, 12-14 minutes. Serve warm., Freeze option: Freeze cooled scones in freezer containers. To use, thaw before serving or, if desired, reheat on a baking sheet in a preheated 350° oven until warmed, 3-4 minutes.

3/4 cup buttermilk

Steps:

  • Heat oven to 400°F.
  • Mix flour, cornmeal, baking powder, baking soda and salt in medium bowl.
  • Cut in butter using pastry blender or 2 knives, until mixture looks like fine crumbs.
  • Stir in buttermilk so dough leaves sides of bowl and forms a ball.
  • Turn dough onto lightly floured surface.
  • Knead lightly 10 times.
