SWEET DOUGH
3/4 c milk
1/4 c butter, room temperature
1/2 c sugar
1 tsp salt
2 pkg active dry yeast
1/2 c warm water
2 eggs
5 c bread flour
CINNAMON TOPPNG
1/4 c brown sugar
1/4 c butter
1/2 c all purpose flour
1 tsp cinnamon, ground
CHERRY TOPPING
1 can(s) dark cherry pie filling
CHEESE TOPPING
2 c cottage cheese
1 egg
1/2 c sugar
BUTTER TOPPING
1 c sugar
3 eggs
1/2 tsp vanilla extract
1 c canola oil
APPLE TOPPING
3 apples, thinly sliced and sprinkle with cinnamon, nutmeg and sugar to taste

Steps:

  • 1. Dough- Scald milk and add butter, sugar, and salt. Dissolve yeast in warm water in seperate bowl and then add to milk mixture. Beat in eggs and then flour. Cover and let rise until doubled. About an hour. Punch down and divide into 5 pieces. Roll out into desired shape and let rise 30 minutes. Then choose your topping. I used a 9" round cake pan for mine.
  • 2. Cinnamon Topping: Use a pastry blender to mix butter and brown sugar and flour. Add cinnamon and sprinkle over dough after it rises the second time. Dot with Butter if desired. Bake at 375 for 20 minutes.
  • 3. Cherry Topping: Heat can of dark cherry pie filling and spread on crust after it rises second time. Bake for 20 minutes at 375.
  • 4. Cheese Topping; Mix cottage cheese, egg and sugar in blender intil creamy. Heat slowly until warm on stove. Pour on dough after rises second time. Bake at 375 for 25 minutes.
  • 5. Butter Topping: Beat together sugar, eggs, and vanilla. Slowly beat in oil. Add oil too fast and it will curdle. Heat on top of stove until hot and pour on crust after second rising. Bake 25 minutes at 375.
  • 6. Apple Topping: Peel and slice thinly 3 apples. Sprinkle with cinnamon and sugar and nutmeg to taste. Roll this dough out in a rectangle. Fill the center with apples and dot with butter. Bake 20 minutes at 375.

KOUIGN-AMANN FRENCH PASTRY RECIPE



Kouign-Amann French Pastry Recipe image

You don't have to be a French pâtissier to master the art of kouign-amann.

1 cup milk, heated to 115 F
1 tablespoon active dry yeast
3 tablespoons sugar
2 teaspoons kosher salt
3 cups all-purpose flour, plus more for dusting
¼ cup sugar
2 tablespoons all-purpose flour
1 teaspoon kosher salt
2 sticks (8 ounces) unsalted butter, chilled, plus more for greasing
1 cup sugar, divided

Steps:

  • Make the dough: In a stand mixer fitted with the dough hook attachment, combine the milk and yeast, and let sit until foamy, 8 to 10 minutes. With the motor running, add the sugar and salt, followed by the flour. Run the mixer until a dough comes together, 3 to 4 minutes.
  • Transfer to a lightly floured bowl, and cover. Let sit in a warm place until it has doubled in size, 1 hour.
  • Meanwhile, make the butter insert: Line a baking sheet with parchment paper.
  • Sprinkle the sugar, flour and salt onto a clean work surface and toss the butter in it.
  • Using a rolling pin, beat the butter until pliable, flipping as needed.
  • Roll the butter into a 9-by-12-inch rectangle and transfer it to the prepared baking sheet. Chill for 45 minutes.
  • Transfer the dough to a lightly floured surface. Roll into an 18-by-14-inch rectangle that's ¼ inch thick.
  • Place the chilled butter insert on one half of the dough, then fold the dough over to enclose it, pressing the edges to seal.
  • Assemble the pastries: Grease a muffin tin with butter and sprinkle with 2 tablespoons of sugar, then place the tin on a baking sheet.
  • Working quickly, sprinkle a clean work surface with a heavy pinch of sugar.
  • Place the dough on top and sprinkle with another heavy pinch of sugar.
  • With one of the short ends of the dough facing you, fold the dough like a letter, bringing the bottom third of the dough up over the middle, then the top third of the dough on top of that. Roll the dough into a 12-by-16-inch rectangle, using sugar as you would typically use flour to prevent sticking. Repeat this process 3 more times for a total of 4 folds.
  • After the dough is rolled out for a final time, cut the rectangle into twelve 4-inch squares. With each square, bring all the corners into the center and fit into one of the molds of the muffin tin. Repeat with the remaining squares of dough. Sprinkle the tops with the remaining sugar.
  • Cover in plastic wrap and let sit in a warm place until the dough has expanded to fill each mold, 30 minutes.
  • Preheat the oven to 375 F.
  • Bake until golden brown, 25 to 30 minutes.
  • Immediately remove each kouign-amann from the tin and transfer to a wire rack to cool slightly, then serve.

EASY APPLE KUCHEN

1 ½ cups all-purpose flour
½ cup white sugar

½ teaspoon salt
5 apples - peeled, cored, and sliced, or more to taste
1 cup white sugar
¼ cup butter, melted
¼ cup all-purpose flour
4 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
  • Spread apples over the dough on the baking sheet.
  • Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.
  • Bake in the preheated oven until apples are tender and topping is golden, about 40 minutes.

4 -5 cups baking apples, Granny Smith (or other)
1 1/4 cups white flour
1 teaspoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup unsalted butter
1 egg
2 tablespoons milk
2 tablespoons unsalted butter
3/4 cup sugar
1 1/2 tablespoons white flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

¼ cup (50g or 1¾ oz) chia seeds
¼ cup (20g or ¾ oz) psyllium husks
2 cups (320g or 11¼ oz) cooked quinoa
1½ cups (375ml or 12½ fl oz) water
1 cup (160g or 5½ oz) sunflower seeds
½ cup (80g or 2¾ oz) flaxseeds
¾ cup (120g or 4¼ oz) roughly chopped almonds
¼ cup (60ml or 2 fl oz) extra virgin olive oil
2 tablespoons maple syrup
½ teaspoon sea salt flakes

Steps:

  • Preheat oven to 160°C (325°F). Line a 10cm x 21cm (4-inch x 8-inch) loaf tin with non-stick baking paper.
  • Place the chia seeds, psyllium husks, quinoa and water in a large bowl and mix to combine. Allow to stand for 15 minutes.
  • Add the sunflower seeds, flax seeds, almonds, oil, maple syrup and salt and mix well to combine. Pour the mixture into the tin.
  • Bake for 1 hour 30 minutes or until firm to the touch. Allow to cool in the tin before turning out and slicing to serve.

OLD WORLD POPPY SEED ROLL

Tender, soft, sweet yeast bread swirled with a creamy homemade poppy seed filling. Growing up, my mother and aunts always made this Eastern European bread for Easter and Christmas. Looks complicated, but is easy enough to make for an Old-World treat. I like it best after the second day.

½ pound poppy seeds
¾ cup white sugar
1 tablespoon butter, melted
1 teaspoon lemon juice
½ cup hot milk
1 (.25 ounce) package active dry yeast
½ cup warm water (100 degrees F/38 degrees C)
2 tablespoons white sugar
2 cups all-purpose flour, or more if needed
½ teaspoon salt
¼ cup butter
1 egg, separated - white reserved

Steps:

  • Place poppy seeds into a food processor and process until seeds are ground, about 1 minute.
  • Mix poppy seeds with 3/4 cup sugar, 1 tablespoon melted butter, lemon juice, and hot milk in a bowl; stir to combine. Cover poppy seed filling and refrigerate while making bread (filling will set up and thicken as it chills).
  • Mix yeast with water and 2 tablespoons sugar in a small bowl. Allow to stand until the yeast forms a creamy layer.
  • Whisk flour with salt in a bowl; use a pastry cutter to cut 1/4 cup butter into the flour mixture until the mixture resembles coarse crumbs.
  • Pour yeast mixture and egg yolk into flour mixture and stir to make a soft dough.
  • Turn dough out onto a floured work surface and knead until smooth and slightly springy, about 5 minutes. If dough is too sticky, knead in more flour, about 2 tablespoons at a time.
  • Cut dough into 2 equal pieces. Roll each piece out into a 12x16-inch rectangle.
  • Spread half the poppy seed filling over each rectangle, leaving a 1-inch border. Fold the 1-inch border back over the filling on all sides and press down.
  • Pick up the shorter side of a dough rectangle and roll it like a jelly roll; repeat with second rectangle. Pinch ends together or tuck ends under to prevent filling from leaking out.
  • Line a baking sheet with parchment paper; place rolls seam sides down on the baking sheet and allow to rise in a warm place until doubled, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg white in a bowl until frothy; brush the rolls with beaten egg white.
  • Bake in preheated oven until dark golden brown on top, 30 to 40 minutes. Remove from oven and cover rolls with a clean kitchen towel until cool to keep crust soft. Cool completely before slicing.
