ROCKY ROAD COOKIES WITH MARSHMALLOWS
Easy Rocky Road cookies topped with mini marshmallows. These make an easy and colorful treat for a class party. My daughter's preschool class loved them!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine brown sugar and butter in a bowl; beat until creamy. Beat in egg. Mix in flour, 1/2 of the chopped chocolate, cocoa powder, and baking powder until dough comes together.
- Drop spoonfuls of the dough onto a cookie sheet, allowing enough room for the cookies to spread. Flatten slightly.
- Bake in the preheated oven until edges are done but tops are a bit gooey, about 5 minutes.
- Remove from the oven. Push remaining chocolate and mini marshmallows into the tops. Continue baking until tops are set, about 5 minutes more. Be careful to remove cookies before marshmallows burn.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. , Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Make a deep indentation in the center of each cookie. Bake at 350° until the edges just start to brown, 10-12 minutes. Remove to wire racks to cool completely. , For the filling, in a large bowl, beat the cream cheese, sugar, flour and vanilla until smooth. Add pecans and coconut. Spoon 1/2 teaspoon into each cookie. , For topping, in a microwave-safe bowl, melt chocolate chips and butter with water; stir until smooth. Stir in sugar. Drizzle over cookies.

These "snow"-capped cookies require no baking. Use any dry cereal or any cookies. They can also be made with milk chocolate.

- Melt dark chocolate over gentle heat.
- Combine marshmallows, cereal, cookies, peanuts and cherries.
- Pour the melted chocolate over nut/cereal mixture and combine well.
- Spoon mixture onto waxed paper lined baking sheets in mounds that resemble (very roughly) little mountains.
- Melt white chocolate. Spoon some white chocolate on each cookie and let it run down the "peak" like snow caps on a mountain. Makes 38 cookies.

- Cream butter and sugar until creamy. Add flour and vanilla. Add ground almonds and mix. Chill for about 1-2 hours.
- Mold small amount of dough around each kiss, completely covering the chocolate. Place in ungreased baking sheet and bake at 300°F for 14-18 minutes. Halfway through baking reverse the baking sheet. Cool cookies slightly and roll warm cookies in a plate of confectioners sugar.
- Watch these cookies carefully as they bake. The bottom of the cookie should only be lightly brown.

This cookie gets its name from the West Coast Trail on Vancouver Island. It's my adaptation of the perfect nut-free trail cookie that's been our family's favorite chewy oatmeal cookie for 10 years. - Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Whisk together all-purpose flour, whole wheat flour, flax seed meal, cinnamon, baking soda, and salt in a bowl.
