Summer Vegetable Enchiladas image

This recipe is Ree's take on classic Tex-Mex enchiladas. She uses seasonal summer vegetables such as yellow squash, cherry tomatoes and poblano peppers to create a veggie-forward dish perfect for family mealtime.

1 cup cherry tomatoes
3 tablespoons olive oil
3/4 teaspoon chili powder, plus more for sprinkling
3/4 teaspoon ground cumin
3 cloves garlic, minced
1 poblano pepper, seeded and thinly sliced
1 red onion, thinly sliced
1 yellow squash, halved and cut into half-moons
Kosher salt and freshly ground black pepper
16 corn tortillas
Two 15-ounce cans green enchilada sauce
3 cups grated Monterey Jack or pepper jack cheese (about 12 ounces)
Chopped fresh cilantro, for topping
Sour cream, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss the cherry tomatoes, oil, chili powder, cumin, garlic, poblano, red onion, squash, 1 teaspoon salt and several grinds of pepper on a rimmed baking sheet. Roast, tossing once, until browned and tender, 7 to 10 minutes.
  • Meanwhile, one at a time, hold the tortillas with metal tongs over a stovetop burner set on medium heat to brown slightly, about 30 seconds per side. Set aside.
  • Pour one of the cans of enchilada sauce into a 9-by-13-inch baking dish. Pour the other can of enchilada sauce into a bowl.
  • To assemble the enchiladas, dip a tortilla into the bowl of enchilada sauce, then lay on a plate. Sprinkle some of the Monterey Jack down the middle, followed by some of the roasted vegetables. Roll it up tightly, then place seam-side down in the baking dish. Repeat with the rest of the tortillas and most of the Monterey Jack (save a little cheese for topping).
  • Pour the remaining enchilada sauce from the bowl over the enchiladas, then top with the remaining cheese. Add a final sprinkling of chili powder, then bake until hot and bubbly, 15 to 17 minutes. Let sit for 10 minutes before serving, to ensure the enchiladas stay together when serving. Top with cilantro and serve with sour cream.

CHIPOTLE CHICKEN ENCHILADAS



Chipotle Chicken Enchiladas image

9 corn tortillas
1 15-ounce can crushed fire-roasted tomatoes
1 cup low-sodium chicken broth
2 tablespoons packed fresh cilantro
1/2 small chipotle chile in adobo, plus 1 teaspoon sauce from the can
1/2 teaspoon ground cumin
2 tablespoons vegetable oil, plus more for the dish
Kosher salt and freshly ground pepper
2 cups shredded rotisserie chicken (skin removed; about 8 ounces)
1/2 cup sour cream
1 cup shredded monterey jack cheese (about 4 ounces)
1 cup shredded cheddar cheese (about 4 ounces)
Diced avocado and sliced scallions, for topping

Steps:

  • Preheat the broiler. Tear 1 tortilla into pieces and transfer to a blender. Add the tomatoes, chicken broth, cilantro, chipotle and adobo, and cumin; puree until smooth.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the pureed sauce and simmer, stirring occasionally, until slightly thickened, 6 to 8 minutes. Remove from the heat and season with 1/2 teaspoon salt and a few grinds of pepper.
  • Meanwhile, coat a 9-by-13-inch baking dish with vegetable oil. Mix the chicken, sour cream, 1/2 cup of each cheese and a pinch each of salt and pepper in a medium bowl. Warm the remaining 8 tortillas in the microwave as the label directs. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla and roll up to enclose. Arrange side by side in the prepared baking dish and brush with the remaining 1 tablespoon vegetable oil.
  • Broil the enchiladas until lightly toasted, 3 to 5 minutes. Top with the tomato sauce and sprinkle with the remaining cheese. Broil until the sauce is bubbling and the cheese melts, 1 to 2 minutes. Top with avocado and scallions.

We haven't tried this yet, but I wanted to post it for ZWT8. Filled with bell peppers, pinto beans, mushrooms, and onions, these colorful enchiladas can be mostly made ahead - perfect for entertaining. Pass some crumbled queso fresco, chopped fresh cilantro, and diced avocado at the table.

1 poblano peppers or 1 green bell pepper
2 teaspoons extra virgin olive oil
1 1/4 cups yellow onions, chopped
3 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/8 teaspoon ground chipotle chile pepper
8 ounces tomatoes, roughly chopped, plus diced tomato for garnish
1 cup vegetable broth
1/2 cup fresh cilantro (packed)
3 bell peppers (1 each red, yellow and orange)
8 ounces cremini mushrooms, diced
3/4 cup red onion, diced
4 1/2 teaspoons extra virgin olive oil
1/4 teaspoon salt
fresh ground pepper, to taste
1 (15 ounce) can pinto beans, rinsed
12 corn tortillas, 6-inch

Steps:

  • Preheat oven to 425 degrees F.
  • To prepare sauce: Roast poblano (or bell) pepper directly over the flame of a gas burner, turning frequently with tongs, until evenly charred. (Alternatively, char under the broiler, turning once or twice, for 5 to 7 minutes total.) Transfer to a deep bowl, cover with plastic wrap, and set aside to steam for 10 minutes.
  • Meanwhile, heat 2 teaspoons oil in a medium saucepan over medium heat. Add yellow onion, garlic, 1 teaspoon salt, cumin, chili powder, paprika and ground chipotle (if using) and cook, stirring, until the vegetables have softened, about 5 minutes. Remove from the heat.
  • Peel the pepper, discard the stem and seeds, and chop. Add to the saucepan along with chopped tomatoes, broth and chopped cilantro.
  • Return to medium heat and cook, uncovered, at a steady simmer, until the liquid has reduced slightly and the tomatoes have broken down, 10 to 15 minutes.
  • Transfer to a blender and puree. (Use caution when pureeing hot liquids.).
  • To prepare filling: While the sauce simmers, place bell peppers, mushrooms and red onion in a single layer on a rimmed baking sheet. Drizzle with 4 1/2 teaspoons oil and sprinkle with 1/4 teaspoon salt and pepper. Roast, stirring halfway through, until the vegetables are tender and browned in spots, about 15 minutes total. Transfer to a large bowl and stir in beans. Reduce oven temperature to 375 degrees.
  • To prepare enchiladas: Spread 1/2 cup of the sauce in a 9-by-13-inch baking dish. Place a skillet over medium heat. Coat both sides of a tortilla with cooking spray. Heat in skillet for 5 to 10 seconds per side, adjusting the heat if the pan gets too hot. Spread 1/3 cup of the filling and 1 tablespoon of the sauce down the middle of the tortilla and roll it up to enclose the filling. Place seam-side down in the baking dish. Repeat with the remaining tortillas, filling and sauce. Spread the remaining sauce and filling over the enchiladas.
  • Bake, uncovered, until hot, about 15 minutes. Serve garnished with diced fresh tomato and cilantro leaves, if desired.

This recipe comes from Browneye on the Cooking Light board. I love these enchiladas and really don't miss the meat. You can use any old vegetables you want to, but this combination provides texture, bulk and taste.

1 crookneck yellow squash (diced)
1 sweet potato (diced)
1/2 cup corn kernel
3 garlic cloves
1/2 red bell pepper (diced)
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup red onion (chopped)
1 tomatoes (seeded and diced)
1 1/2 teaspoons ground cumin (divided)
1 1/2 teaspoons chili powder
1 teaspoon coriander (optional)
1 1/2 ounces spinach leaves (whole, chopped, about 1/4 bag baby spinach leaves)
1 (4 ounce) can chopped green chili peppers (such as Ortega)
1/2 cup chopped fresh cilantro (optional)
6 corn tortillas
4 ounces queso fresco or 4 ounces farmer cheese, crumbled and divided
1 cup monterey jack cheese (shredded)
1 1/2 tablespoons flour
1 1/2 tablespoons chili powder
1/4 teaspoon dried chipotle powder (or to taste)
8 ounces tomato sauce
1 cup vegetable broth

Steps:

  • Preheat oven to 425º.
  • Place squash, sweet potato, corn, garlic, red pepper, 1 teaspoons cumin, chili powder coriander, salt, and pepper in a large zip-top bag and toss.
  • Spread vegetables in a single layer in a casserole dish coated with cooking spray. Roast, tossing every 10 minutes, until tender, about 25 -35 minutes.
  • Add tomato, 1/4 cup cilantro, tomato, spinach and green chiles. Return to oven for 5 minutes to wilt the spinach.
  • Meanwhile, make enchilada sauce: In a small saucepan, whisk the flour with the chile powder, and the remaining cumin.
  • Whisk in the vegetable broth until smooth. Heat over low-medium heat until thickened.
  • Add the tomato sauce, chipotle chile. Cook until slightly thickened.
  • Remove from heat. Spread about 1/2 cup sauce on the bottom of a 13 X 9 X 2 baking dish
  • Heat the corn tortilla, one at a time, in a nonstick skillet over medium-low heat brushed with a little oil until soft and pliable. Stuff with about 2-3 tablespoons of the vegetable mixture and about 2 tablespoons cheese, roll up and place seam side down in the baking dish coated with sauce.
  • Spoon extra enchilada sauce over the top, and top with cheese.
  • Bake at 350º for about 20 minutes, until cheese is melted and heated through. Serve topped with sliced avocado, chopped cilantro, green onions, and sour cream.
