1 cup KRAFT Light Mayo Reduced Fat Mayonnaise
1 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/2 cup KRAFT Grated Parmesan Cheese
1 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
1 jar (7 oz.) roasted red peppers, well drained, chopped
3 Tbsp. sliced green onions, divided

Steps:

  • Mix mayo, sour cream, cheese and dressing mix until blended. Add peppers and 2 Tbsp. onions; mix well.
  • Refrigerate several hours or until chilled.
  • Sprinkle with remaining onions.

Yield Makes 2 1/2 cups

Number Of Ingredients 9

1 garlic head, halved crosswise
1 medium onion, peeled, halved crosswise
4 tablespoons olive oil
1 red bell pepper
1 8-ounce package cream cheese
1/2 cup crumbled feta cheese
6 Kalamata olives or other brine-cured black olives, pitted
1 tablespoon drained capers
1 French-bread baguette, cut into 1/4-inch slices

Steps:

  • Preheat oven to 375°F. Place garlic and onion, cut side down, on small baking sheet. Brush with 2 tablespoons olive oil. Bake until onion is tender and garlic is golden and tender, turning over halfway through baking, about 30 minutes. Cool.
  • Char red bell pepper over gas flame or in broiler until blackened on all sides. Wrap in paper bag and let stand 10 minutes to steam. Peel and seed pepper. Chop coarsely.
  • Squeeze garlic from skin. Cut each onion half into quarters. Place garlic, onion, red bell pepper and next 4 ingredients in processor and blend well. Transfer to small bowl. Cover and refrigerate until firm, about 2 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Preheat broiler. Place baguette slices on baking sheet. Brush with remaining 2 tablespoons oil. Broil until golden brown, about 2 minutes. Stir dip and serve with toasted baguette slices.

1 red onion, roughly chopped
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
One 8-ounce package cream cheese, room temperature
1/2 cup sour cream
1/4 cup finely grated Parmesan
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
2 tablespoon thinly sliced chives, plus a pinch for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the onions to a foil-lined baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss everything together. Transfer to the oven and roast for 35 minutes, or until the onions are tender and golden. Set aside to cool completely.
  • In a stand mixer fitted with a paddle attachment, combine the cream cheese, sour cream, Parmesan, mayonnaise, Worcestershire, chives and the roasted onions. Beat until light and fluffy and well-combined. Scrape the mixture into a serving bowl using a rubber spatula. Sprinkle the remaining chives over the top and serve.

Here's how to make onion dip without standing near the stove for an eternity, waiting for onions to caramelize: Roast rings of onion in the oven with the teeniest bit of sugar for 40 minutes for effortlessly faux-caramelized onions. Red onions are naturally a bit sweeter and mellower than white ones, especially when they get brown and slouchy, but lemon juice, chives and raw garlic will perk them right up. The creaminess - what we're here for - comes from three sources: sour cream, mayonnaise and Greek yogurt, a nice counter to the crisp potato chips you'll, of course, serve it with.

1 pound red onions, cut into 1/4-inch rings (about 2 large onions)
2 tablespoons olive oil
1 3/4 teaspoons kosher salt
1 teaspoon sugar
1/2 cup sour cream
1/2 cup full-fat Greek yogurt
1/4 cup mayonnaise
1 garlic clove, grated
1 tablespoon lemon juice
Black pepper, to taste
2 tablespoons minced chives
Potato chips, for serving

Steps:

  • Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. (Use 2 baking sheets if the onions won't all fit comfortably on 1.) Drizzle with olive oil, sprinkle with 1 teaspoon salt and the sugar and gently flip to coat, keeping the rings as intact as possible. Cook for 30 to 40 minutes, turning once, until soft and browning (It's O.K. if some parts get crisp and charred).
  • Let the onions cool slightly, then transfer to a cutting board and roughly chop. (You want to have small pieces of onion without making a paste.)
  • Transfer the onions to a medium bowl and add the sour cream, yogurt, mayonnaise, garlic, remaining 3/4 teaspoon salt, lemon juice and black pepper. Fold to combine.
  • Transfer to a serving dish and garnish with minced chives. Serve with potato chips.

1 cup roasted red peppers (diced (I used about half of a 16-oz jar, drained, and chopped them up))
2 cups shredded Monterey Jack cheese
8 ounces cream cheese
1 cup mayonnaise
1 Tablespoon dried minced onion ((you could also use fresh onions if you want))
1 clove garlic (minced)
1 Tablespoon dijon mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix together all ingredients until completely combined.
  • Pour mixture into an oven-safe baking dish (I used an 8x8" dish).
  • Bake for 15-20 minutes, until the dip is bubbling and starts to brown.

1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
1 (7 ounce) jar roasted red peppers
¾ cup diced onion
⅓ cup red wine
5 tablespoons brown sugar
2 fresh hot chile peppers, seeded and chopped
2 tablespoons tomato paste
2 tablespoons distilled white vinegar
2 teaspoons chopped garlic
½ teaspoon dried oregano
1 ½ teaspoons cumin seeds

Steps:

  • In a large saucepan, place diced tomatoes with green chile peppers, roasted red peppers, onion, red wine, brown sugar, hot chile peppers, tomato paste, distilled white vinegar, garlic, oregano and cumin seeds. Bring to a boil, then reduce heat and allow mixture to simmer approximately 30 minutes.
  • Place mixture in a blender, and blend to desired consistency. Chill in the refrigerator 4 hours, or until cold, before serving.

  • Preheat oven to broil. Halve peppers and remove stem and seeds, then place cut-side down on a foil-lined baking sheet. Broil until skin is blistered and blackened.
  • Meanwhile, melt butter in a saucepan over medium-low heat. Add the onions and cook, stirring occasionally, until caramelized. This will take 20-30 minutes.
  • When the peppers are done, remove them from the oven and place in a ziplock bag or a bowl with cover. Let the peppers cool until they are cool enough to handle, then peel off the skins and discard. If you have roasted the peppers long enough, the skin should peel easily. If it doesn't come off, don't worry, just proceed.
  • Chop the peppers coarsely, and when the onions are nicely browned, add the peppers to the saucepan and mix well. Remove pan from heat. Add the cheeses and stir to melt. (You can return the pan to the heat if the cheese isn't melting, but you don't want it soupy.) Once the cheese is melted, season to taste.
