The dijon provides a slight tang that really kicks these potatoes to the next level! These are a family favorite at our house.

6 -8 medium red potatoes, unpeeled
2 tablespoons Dijon mustard
4 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon thyme
1/2 teaspoon rosemary
salt, to taste
pepper, to taste

Steps:

  • Cut potatoes in 1 inch pieces.
  • Whisk remainder of ingredients together in large bowl. Add potatoes and toss.
  • Roast in greased pan at 375 F for 40-45 mins, turning occasionally.

1/2 cup dijon-style mustard (such as Grey Poupon)
3 tablespoons olive oil
1 clove garlic, minced (or more to taste)
1 teaspoon italian seasoning
8 medium potatoes, cut into chunks (about 3 pounds)

Steps:

  • Mix first 4 ingredients in a small bowl.
  • Lightly grease 13 x 9 pan or shallow baking sheet.
  • Toss potatoes with mixture.
  • Bake at 425 for about 40 minutes, or until tender, stirring occasionally.

ROASTED HONEY DIJON POTATOES

This recipe is only for two servings, you may double if desired, add in some garlic powder or fresh minced garlic if desired ;-)

1 lb potato, cut into 1 inch pieces
1 small onion, thinly sliced
1/4 cup Dijon mustard
1/4 cup olive oil
1 -2 teaspoon honey
1 tablespoon chopped fresh parsley
salt and pepper

Steps:

  • Set oven to 375 degrees.
  • Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices.
  • Pour the sauce over potato/onion then toss well coate.
  • Place in a greased baking pan.
  • Bake for 35-40 minutes or until potatoes are tender.
  • Sprinkle fresh parsley over potatoes.

1 1/2 lbs new potatoes or 1 1/2 lbs creamer potatoes, quartered
3 garlic cloves, minced
2 tablespoons olive oil
1/3 cup Dijon mustard
2 tablespoons balsamic vinegar
2 teaspoons kosher salt
1/2 teaspoon pepper
1 teaspoon sugar

Steps:

  • Place quartered potatoes in a bowl.
  • In a seperate small bowl, mix together garlic, olive oil, mustard, vinegar, salt, pepper and sugar. Pour this over potatoes and toss to coat.
  • Place potatoes in a baking dish and bake at 450 for about 45-50 minutes or until desired tenderness.
  • Or, roast on foil on the grill.
