For 15 years my husband, daughter and I owned and operated an apple orchard, where we raised 27 variations of apples on 2,200 trees. This easy apple tart recipe is my personal favorite. 1 cup sugar, divided
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
6 medium tart apples, peeled and thinly sliced
1 tablespoon butter
Pastry for a single-crust pie

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, heat 3/4 cup sugar, stirring constantly until it is liquefied and golden brown. Remove from the heat. , In a small bowl, combine the flour, cinnamon and remaining sugar. Arrange half the apples in a single layer in skillet. Sprinkle with half the sugar mixture. Arrange half the remaining apples in circular pattern over sugar; sprinkle with remaining sugar mixture. Place remaining apples over all, keeping the top as level as possible. Dot with butter. , Roll out dough to 11-in. circle; place over apples, pressing gently to completely cover. Do not flute. Bake at 400° until apples are tender and golden brown, about 50 minutes. Cool 5 minutes before inverting onto a serving plate.

This is my mother's apple pie. This is the recipe I use all the time and I love it. I also use a dash of nutmeg so if you wish you can put that in too.

6 cups thinly sliced apples
¾ cup white sugar
1 tablespoon butter
1 teaspoon ground cinnamon
1 recipe pastry for a 9-inch double-crust pie

Steps:

  • Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
  • Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
  • Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
  • Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Serve warm or cold.

Dough for single-crust pie
TOPPING:
1/2 cup sugar
1/2 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:
1/2 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
5 cups chopped peeled tart apples (about 5 medium)

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing topping and filling., For topping, in a small bowl, mix sugar and flour; cut in butter until crumbly. For filling, in a large bowl, mix sugar, flour, cinnamon and nutmeg. Add apples and toss to coat. Transfer to crust. Sprinkle with topping., Bake 10 minutes. Reduce oven setting to 375°. Bake until topping is browned and apples are tender, 40-45 minutes. Cover edge loosely with foil during the last 15 minutes if needed to prevent overbrowning. Cool on a wire rack.

1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon

1 tablespoon lemon juice
Dough for double-crust pie
1 tablespoon butter
1 large egg white
Additional sugar

Steps:

  • Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Beat egg white until foamy; brush over crust. Sprinkle with sugar. ¾ cup white sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon lemon zest
7 cups thinly sliced apples
2 teaspoons lemon juice
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie
4 tablespoons milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix together the sugar, flour, cinnamon, nutmeg and lemon peel.
  • Line one crust in a 9-inch deep-dish pie pan. Layer 1/3 of apples into pie crust. Sprinkle with sugar mixture and repeat until done. Sprinkle with lemon juice and dot with butter.
  • Place second pie crust on top of filling and flute the edges. Cut vents in top crust and brush with milk for a glazed appearance if desired.
  • Bake at 425 degrees F (220 degrees C) for 40 to 50 minutes.

1 teaspoon salt
3/4 cup shortening
4 to 5 tablespoons cold water
FILLING:
7 to 8 cups thinly sliced peeled tart apples
2 tablespoons lemon juice
1 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter
1 egg yolk
1 tablespoon water

Steps:

  • In a bowl, combine flour and salt; cut in shortening. Gradually add cold water, 1 tablespoon at a time, tossing lightly with a fork until dough forms a ball. Chill for 30 minutes. On a floured surface, roll half of dough into 10-in. circle. Place into a 9-in. pie pan. , In a bowl, toss apples with lemon juice. Combine sugar, flour, cinnamon, salt and nutmeg; add to apples and toss. Pour into crust; dot with butter. Roll out remaining pastry to fit top of pie; cut slits in top. Place over filling; seal and flute edges. Beat egg yolk and water; brush over pastry. Bake at 425° for 15 minutes. Reduce heat to 350°; bake 40-45 minutes more or until crust is golden and filling is bubbly.

Tosca refers to a delicious, briefly boiled almond caramel topping that can be used to crown cakes, fruit cobblers and the like. Here it is combined with a yummy apple pie.

Number Of Ingredients 12

70 g butter
50 ml brown sugar
1 egg
150 ml all-purpose flour
50 ml ground almonds
1/2 teaspoon baking powder
2 -3 apples
100 g slivered almonds
100 g butter
150 ml sugar
2 tablespoons all-purpose flour
2 tablespoons half-and-half

Steps:

  • Preheat oven to 175°C.
  • Line a 24 cm round cake pan (with a removable bottom) with foil, grease.
  • To make crust: cream butter and sugar; add egg, mix to combine; add flour, ground almonds and baking powder, quickly mix into batter. Spread batter on bottom of the prepared pan.
  • Peel, core and slice apples. Cover the surface of the batter with apple slices.
  • Bake in the preheated oven for 15-20 minutes.
  • While the pie is baking, prepare the topping: Combine all topping ingredients in a saucepan. Heat the mixture gently to boiling point, stirring occasionally. Remove from heat as soon as the first few bubbles appear. Do not boil!
  • Take the half-baked pie out of the oven and quickly spread the hot topping on top of it.
  • Place the pie back in the oven and continue baking for about 20 minutes, or until the topping is golden brown.
  • Let cool completely before removing from pan. You can also use a 24 cm pie dish and serve the pie in its dish.
