Never had a roasted radish? You must try this! Carrots complement the flavor well, and I don't really care for radishes raw.

1 cup radishes, trimmed and quartered
1 cup baby carrots
2 tablespoons olive oil
½ teaspoon garlic salt
½ teaspoon lemon-pepper seasoning, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine radishes and carrots on a rimmed baking sheet and drizzle with olive oil. Sprinkle with garlic salt and lemon-pepper seasoning; toss to coat.
  • Roast in the preheated oven until tender, 20 to 25 minutes.

12 baby carrots
1 tablespoon olive oil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
Lemon half

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the radishes and carrots on a baking sheet and toss with the olive oil, thyme, salt, and pepper. Roast until tender yet firm in the center, about 20 minutes. Squeeze with a little lemon juice and serve.
